Steps:
- Cut the aubergine and courgette into thin lengths about 2-3mm thick - you should have 8 slices of each. Drain and rinse the peppers, remove any seeds, pat dry, then cut into quarters. Mix the garlic with the olive oil and some seasoning.
- Heat a griddle pan over a medium heat. Brush the vegetable slices with the garlic oil and cook for 2-3 mins each side until completely soft and lightly charred (you'll need to do this in batches). You could also do this on a barbecue. Set aside on a plate and leave to cool. The vegetables can be griddled the day before and kept covered in the fridge - bring to room temperature before serving.
- Mix together the cheeses, sundried tomatoes, lemon zest and seasoning. Lay out the slices of aubergine on a large board. Top each with a slice of courgette, a strip of pepper, and a basil leaf. Dot 1 tbsp of the cheese mix on top and roll the vegetables up. Skewer with a cocktail stick to secure.
- When ready to serve, arrange on a plate and scatter over the parsley leaves and paprika.

After tasting a delicious mix of vegetables that a friend threw together and grilled, I went home and came up with a similar medley that I really like. You can adjust the ingredients to your taste.

- In a large resealable plastic bag, combine the salad dressing, vinegar, parsley, lemon-pepper and Cajun seasoning. Add the vegetables; seal bag and turn to coat. Let stand for 15 minutes; drain. Arrange vegetables on a grill rack. Grill, covered, over medium heat for 20-25 minutes or until tender, turning frequently.

- Place all the sauce ingredients in a food processor and blend until smooth. Saute in a pan over medium high heat for about 6 minutes or until the sauce thickens. Let cool to room temperature.
- Cut vegetables into 6 inch chunky strips and skewer with bamboo skewers. Brush with sesame oil and grill over hot coals until veggies are cooked through and skin begins to blister. Sprinkle lightly with sea salt and serve with a side of dipping sauce.

- Mix up shrimp marinade and marinade shrimp for 1 hour in fridge.
- Mix cut veggies with olive oil and salt and pepper and let sit for one hour.
- Preheat grill.
- Grill veggies for 25 minutes, turning occasionally, or until done.
- Grill shrimp about 3 minutes per side or until pink and curled.
- If you want to use the oven to cook the veggies, roast at 450 for 30 minutes, turning every ten minutes or so, or until done.

- Marinate the red pepper, onion, zucchini, and the portabella mushroom in the olive oil, balsamic vinegar, Italian seasoning mixture for 1 hour then grill on med high heat till softened and browned about 5 to 8 minutes.

GRILLED FRESH VEGETABLES
This easy to make recipe is one of my family's favorite vegetable dishes. Prepping and cooking is a breeze so dont be deceived by the prep time. Marinating the vegetables is 1 hour of the prep time.

- 1. Chop fresh vegetables, creating large bite-sized assorted shapes, sizes and colors. Cut up enough to fill a large gallon zip lock bag, although some veggies are purchases pre sliced (mushrooms, for example). Mix a teaspoon of pepper with 16 ounce bottle of Italian Dressing and drizzle on top of the bag of cut vegetables. Allow to marinate for 1 hour and then drain in a collander. Line the bottom of a grilling basket (I use the type which is used for grilling fish) with aluminum foil. Arrange vegetables in the grill basket. Grill on medium heat for 10 to 15 minutes, stirring and turning the vegetables over every several minutes. It's better to under cook slightly than to over cook the vegetables. Why? You may wish to reheat this dish later because the left overs are so yummy.
- 2. *NOTE* You may choose to grill less vegetables so adjust your amount of dressing and pepper. Grilling half of the above recipe will result in a shorter grilling time of approximately 8 minutes total. Aluminum protects your vegetables from the fire yet your vegetables still have that superior grilled flavor. *Carrots do not cook as fast as the other vegetables so should you include them, you may want to cook them in a microwave until almost tender before adding them to the marinade.
GRILLED VEGGIES THAT BITE BACK
I was craving grilled vegetables one day, and as usual all the recipes I found didn't quite fit the bill or what I had in my fridge. So I came up with this. In proper portions it serves 6-8 but it was so yummy I couldn't stop eating and finished it all myself. Veggies are healthy, right? ;) I think it would be nice in a quinoa or couscous salad too. This is actually quite good served cool too. Prep time does not include marinating time.

Steps:
- In a small bowl, mix first three ingredients well and set aside.
- Cut all the veggies into about 1 - 1 1/2 inch pieces, green beans can just be cut in half.
- Add vegetables to a large bowl and pour sauce over and mix well.
- Marinate veggies at room temperature for 20 - 30 minutes, or more, or less, or not at all if you don't have time :).
- Meanwhile, preheat BBQ to about 350°F and coat grill basket with canola oil (or olive oil or Pam cooking spray).
- Place marinated veg in grill basket and grill until golden, about 6-8 min, then flip and do other side.
- (Do not turn lots, grill should be low enough to not burn. All grills are different, better to turn it down than flip too often).
- Serve with your favourite grilled meat or grilled tofu for the vegetarians ....
