Grilled turkey legs are not exactly a complicated thing to serve friends and family. Just think of them as amped up chicken legs that offer more than enough mass to benefit from the wealth of flavor bestowed by either a brine or marinade.

Turkey legs, one per person.
Water, 4 quarts
Salt, kosher or sea, 1 cup
Sugar, brown, 1/4 cup
Honey
Worcestershire sauce
Your favorite BBQ sauce
Vinegar, red, wine
Salt, to taste
Pepper, black
Olive oil

Steps:

  • Prepare a brine by pouring the water, kosher salt and brown sugar into a vessel large enough for the number of legs you plan to cook.
  • Make sure that the salt and sugar have completely dissolved before adding the legs.
  • Adjust the ingredients based on how many legs you are fixing-shoot for just enough to fully cover the drumsticks.
  • Feel free to use something like a bowl or a plate in order to keep the legs below the water level of the brine.
  • Refrigerate the legs for anywhere between 4 and 24 hours.
  • Remove them from the fridge 1 hour before you want to cook them, in order to bring them up to room temperature.
  • Remove the legs from the brine and pat them dry.
  • Right before you cook them, drizzle olive oil over each leg and rub in a mixture of salt and black pepper.
  • Prepare your grill for indirect heating.
  • Feel free to add some smoking wood for extra aroma.
  • Prepare a basting mix of honey, vinegar, BBQ sauce and Worcestershire sauce and combine them all until it forms an even consistency.
  • You can do this up to a day ahead of when you plan to cook the legs, storing it in the fridge until it is time to use it.
  • Begin grilling the legs with the grill's lid as closed as you can have it.
  • Begin basting with the mix from the previous step on a frequent, regular basis so that the legs become covered in a rich, dark glaze of caramelization.
  • Turn the legs every so often, continuing to baste.
  • Make sure that you keep the lid closed between basting sessions in order to keep as much heat and smoke trapped within as possible.
  • While individual cooking times can vary, most legs only need 20-30 minutes of indirect heat, at a moderate temperature, to be done.
  • Cooking on high temperatures may finish the legs quicker, but also increases the risk of burning the legs.
  • Check for doneness by either using a meat thermometer or making a cut into one leg.
  • The good news is that brining mitigates most of the risk of overcooking while also keeping the legs nice and moist.
  • Once the legs are done, take them off the grill and onto a serving dish.
  • Cover with foil and allow them to rest for 10-15 minutes.

6 medium turkey legs
1/4 cup extra virgin olive oil
2 tbsp cider vinegar
1 tsp sugar
1 tbsp paprika
2 tsp basil
1 tsp salt
1 tsp mustard powder
1 tsp onion powder
1/2 tsp cinnamon
1/2 tsp garlic powder
1/4 tsp cayenne pepper
1/4 tsp turmeric

Steps:

  • In a small bowl whisk together olive oil, vinegar, sugar, and spices (paprika, basil, salt, garlic, mustard powder, cinnamon, cayenne, onion powder, and turmeric).
  • Place turkey legs in a plastic bag. Pour marinade into bag, and seal it tightly. Shake bag until turkey legs are coated in marinade. Refrigerate 1-2 hours.
  • Preheat grill to medium-high heat (about 350°F)
  • Remove turkey legs from bag and place on grill. Close grill and cook about 10-15 minutes (or until they have nice grill marks on them). Turn legs over, close grill and allow to cook an additional 10-15 minutes.
  • Move turkey legs to indirect heat (a place on the grill where they are not directly over the fire). Close grill and allow them to cook an additional 10-15 minutes, or until they reach an internal temperate of 165°F.

1 cup packed brown sugar
3/4 cup ketchup
3/4 cup reduced-sodium soy sauce
1/3 cup sherry or chicken broth
1 tablespoon minced fresh gingerroot
1 tablespoon minced garlic
6 turkey drumsticks (1-1/2 pounds each)
1 bunch green onions, chopped

Steps:

  • Mix the first 6 ingredients. Reserve 1-1/3 cups for basting; cover and refrigerate. Pour remaining marinade into a large baking dish. Add drumsticks and turn to coat. Cover and refrigerate 8 hours or overnight., Drain turkey, discarding marinade. Place turkey on greased grill rack. Grill, covered, over indirect medium heat, 40-45 minutes or until a thermometer reads 175°,. Turn drumsticks occasionally throughout cooking. Baste often with reserved marinade during the last 10 minutes. Let stand 15 minutes; garnish with green onions.

1/3 cup vegetable oil
1/3 cup dry sherry

2 pounds plums, cut into 1/2-inch chunks
1 large shallot, finely chopped
1/2 cup chopped dried apricots
1/2 cup packed light brown sugar
1/3 cup red wine vinegar
1 tablespoon grated peeled fresh ginger
1 12- to 14-pound turkey, spatchcocked by your butcher
1 tablespoon chopped fresh thyme
2 teaspoons yellow mustard seeds
1/2 teaspoon ground allspice
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
Kosher salt

Steps:

  • Make the turkey: Combine the brown sugar, thyme, coriander, ground ginger, paprika, allspice, cayenne, garlic and 2 teaspoons salt in a small bowl. Pat the turkey dry. Rub the vegetable oil all over the turkey, then rub with the spice mixture. Let sit at room temperature 30 minutes before grilling.
  • Preheat a grill to medium high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half the burners. Brush the grill grates with vegetable oil. Lay the turkey on the grates skin-side up with the legs closest to the direct-heat side (the dark meat needs more heat). Cover the grill and cook until the turkey is deep golden brown and a thermometer inserted into the thickest part of the thigh registers 165 degrees F, 2 1/2 to 3 hours. Transfer to a cutting board and let rest 15 minutes.
  • Meanwhile, make the chutney: Combine the plums, shallot, dried apricots, brown sugar, vinegar, fresh ginger, thyme, mustard seeds, allspice, coriander, cayenne and 1 teaspoon salt in a medium saucepan. Bring to a simmer over medium heat and cook until the plums are tender and the juices thicken, 10 to 15 minutes. Remove from the heat and let cool. Serve the turkey with the chutney.
  • If you're making the turkey on a charcoal grill, you'll need 4 to 5 pounds of charcoal. Add several new briquettes to the coals every 30 minutes to maintain the heat.

4 chicken legs
1 (6-ounce) can tomato paste
1/4 cup olive oil
1 1/2 cups chicken broth
1/4 cup Worcestershire sauce
2 tablespoons applewood rub (recommended: McCormick)
1 tablespoon apple cider vinegar
1 cup frozen chopped onions, thawed
1 tablespoon chopped garlic
1 bunch fresh parsley, leaves picked, for garnish

Steps:

  • Put the turkey and chicken legs into a large resealable plastic bag.
  • In a large bowl, combine the tomato paste, olive oil, chicken broth, Worcestershire sauce, applewood rub, apple cider vinegar, onions, and garlic, and whisk them together until blended. Pour the marinade into the resealable bag over the turkey and chicken legs. Seal the bag and put it into a large bowl. Marinate in the refrigerator for at least 1 hour or as long as overnight.
  • Preheat 1 side of a grill over medium heat. Remove the turkey and chicken legs from the marinade, shaking off the excess, and set aside.
  • Put the marinade into a small pot and cook over low heat, until reduced by half.
  • Grill the chicken legs over direct heat for 5 minutes per side with the lid closed. After 10 minutes grill them over indirect heat for another 10 to 15 minutes. Grill the turkey legs for 20 to 25 minutes with the lid closed. Brush on the reduced marinade every 5 minutes until the legs are cooked through and the internal temperature reaches 175 degrees F. on an instant-read thermometer. Hold the chicken legs on the coolest part of the grill or in an oven at 200 degrees F while the turkey finishes cooking.
  • Arrange the chicken and turkey on a serving platter and garnish with fresh parsley.
