Steps:
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Drain.
- Add the olive oil, garlic, and chile flakes to a large sauté pan. Turn the heat to medium-low and slowly heat up until the garlic is fragrant and lightly colored, about 3 minutes.
- Add the oregano, capers, olives, tomato paste, and diced tomatoes. Bring the sauce to a simmer and cook for 8-10 minutes, stirring occasionally.
- Add the tuna and cook for another minute.
- Toss in the cooked pasta.
- Enjoy!

TUNA WITH TOMATO-BASIL SAUCE
Steps:
- Heat 1 tablespoon oil in heavy large skillet over medium heat. Add onion, celery, parsley and garlic. Sauté until onion is tender but not brown, about 10 minutes. Add tomatoes and bay leaf. Cover and cook until sauce thickens, stirring occasionally, about 15 minutes. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm before continuing.) Discard bay leaf. Mix in torn basil. Season sauce to taste with salt and pepper.
- Sprinkle tuna with salt and pepper. Heat remaining 1 tablespoon oil in another heavy large skillet over medium-high heat. Add tuna and cook until golden and just opaque in center, about 3 minutes per side.
- Transfer tuna to platter. Spoon sauce over tuna. Garnish with basil sprigs.
TUNA WITH CAPERS, OLIVES AND LEMON
This is not your mother's mayonnaise-laden tuna salad, but it's just as easy to prepare. Here's what you do: stir together some canned tuna, garlic, lemon juice, red onion, black olives, capers and fresh parsley, then spread it on buttered toast. Top it off with a round of ripe tomato or slivers of avocado and another slice of toast. That's it. If you want to make it into a dip, toss the mixture into a food processor with a few tablespoons of softened butter and a bit more olive oil. Purée until smooth and creamy and serve with carrots, fennel, bell pepper and seeded crackers. If you have a tin of sardines taunting you from inside your cabinet, we bet this recipe would work equally well with those.

- In a large bowl, mash garlic with the back of a spoon. Whisk in the lemon juice and 5 tablespoons of olive oil. Combine with the tuna, onion, olives, capers, herbs and salt to taste.
- Serve on buttered toast for sandwiches, or make into a dip: Pulse the tuna salad and butter in a food processor until it is creamy. With the motor of the processor running, slowly add the additional 4 tablespoons oil. Taste and add more salt or lemon juice if needed. Steps:
- Heat 3 TBS oil in a large deep skillet over medium heat; add the onions and saute about 5 minutes until soft.
- Add the garlic and cook an additional 2 minutes, then add in the tomatoes, basil and capers, stirring well to combine.
- Simmer, uncovered for 15 minutes; mixture will thicken.
- Remove sauce to a bowl and set aside.
- Wipe out the sauce pan, then heat with remaining 3 TBS of oil over medium heat.
- Salt and pepper fish to taste, then place in the pan when oil is hot.
- Cook fish about 3 minutes per side (fish should be light brown at edges but still pink inside).
- Pour the tomato mixture over the fish and simmer for about 5 minutes, then serve immediately!

Steps:
- prepare a charcoal grill or preheat broiler.
- place the tuna on a flat dish and spoon 1 tablespoon oil over it.
- sprinkle with salt and pepper, red pepper flakes and thyme and spread well into the steaks.
- cover with plastic wrap and let stand at least 15 minutes before grilling heat the remaining tablespoon olive oil in a small skillet.
- add the capers and cook briefly over medium high heat.
- add the tomatoes, salt and pepper and lemon juice and cook for 5 minutes, keep warm.
- if using a grill, rub the rack lightly with olive oil.
- place the fish on the grill and cook for 3 minutes, then turn and cook for antoher 3 minutes for rare.
- if you wish the fish to vew more well done, cook longer on each side.
- if broiling place in pan and broil for 6 minutes for rare, turning once.
- remove fish and cut it into thin diagonal slices.
- to serve, divide the tomatoes among 4 warm plates.

- Season the tuna with salt and pepper and picked thyme leaves and set aside at room temperature. Preheat the grill or grill pan to high heat for about 10-20 minutes before you want to cook.
- To make the salsa, saute the garlic and celery in the olive oil with a pinch of salt to soften. Add the tomatoes and chilli and allow that to soften without turning into sauce. Add the olives, capers and pinenuts and allow that to cook for a couple minutes to allow the flavours to meld together. Taste it at this point. Depending on the tomatoes, it may need sugar and/or vinegar. Adjust to your liking. This is meant to be a highly seasoned and punchy garnish.
- When the grill is good and hot, drizzle the tuna with a small amount of olive oil just to coat the steaks, and sear for one to two minutes on each side for rare-medium/rare. Cook it longer if you prefer it more cooked but lean tuna is best just seared.
- Remove from grill and serve warm or at room temperature with warm tomato salsa and a sprinkle of chopped parsley.

- Rinse tuna steaks and pat dry. Sprinkle lightly all over with salt and pepper. Pour oil into a 10- to 12-inch nonstick frying pan over high heat. When hot, add onion and stir frequently until limp, about 5 minutes.
