There are many Paula Deen fans on Recipezaar. This is her recipe that was on foodnetwork.com. The recipe makes alot of BBQ sauce. Way more than you'll need unless you plan to drench the fish in the sauce. I cut the sauce recipe down to 1/4th of the printed amounts and still came up with close to 1 cup of sauce, which gave me alot of leftover sauce. Season the fillet in step 3 using recipe #57340 The recipe calls for 1 lime, juiced but the instructions never mention it. Since it is the last ingredient on the list, I am assuming that the lime juice is sprinkled on the finished fish fillet. I think the BBQ sauce benefits from being made at least earlier in the day or maybe even the day before. I didn't particularly care for the flavor of the sauce when I finished making it but after it had set all day and was put on the fish, it was good.

3/4 cup ketchup
3 tablespoons prepared mustard
1/2 cup oil
1/2 cup apple cider vinegar
1 pinch garlic salt
3 tablespoons Worcestershire sauce
2 teaspoons paprika
1/4 cup lemon juice
1 teaspoon pepper
3 tablespoons brown sugar
3/4 cup water
1/2 cup onion, finely chopped
2 cups peaches (fresh or canned)
28 ounces tilapia fillets
1 lime, juiced

Steps:

  • Mix ketchup, prepared mustard oil, apple cider vinegar, paprika, lemon juice, pepper, brown sugar, water and onions together in a saucepan. Simmer over medium heat for 15 to 20 minutes.
  • While the sauce is simmering,puree peaches. Once the sauce is cooked, add the pureed peaches to the sauce and stir together.
  • Preheat the grill to medium heat. Season the tilapia with recipe #57340. Cook the fish on each side for 3 to 4 minutes. During the last few minutes of cooking, brush the fish with some barbecue sauce.
  • Once cooked and plated, ladle a nice spoonful of the peach barbecue sauce on top of the fillets.

3/4 cup lentils, picked over
1 green bell pepper, chopped fine
1/2 cup finely chopped onion
2 tomatoes, chopped
1/4 cup chopped fresh coriander
3 tablespoons olive oil
3 tablespoons red-wine vinegar
four 6- to-8 ounce skinless flounder or orange roughy fillets
all-purpose flour for dredging the fish

Steps:

  • In a large saucepan of boiling water boil the lentils for 15 to 20 minutes, or until they are just tender, drain them in a sieve, and rinse them briefly under cold water. Drain the lentils well and in a bowl toss them with the bell pepper, the onion, the tomatoes, the coriander, the oil, the vinegar, and salt and black pepper to taste.
  • Pat the fillets dry, season them with salt and pepper, and dredge them in the flour, shaking off the excess. Grill the fillets on an oiled rack set about 6 inches over glowing coals or in an oiled ridged grill pan over moderately high heat for 4 to 5 minutes on each side, or until the just flake. Divide the salsa among 4 plates and top each serving with a fillet.

1/3 cup low-fat mayonnaise
2 tablespoons fresh lemon juice
1/3 cup diced onion
1 cup fresh parsley
2 tablespoons fresh oregano
2 garlic cloves
8 tilapia fillets (2 lbs) or 8 any other mild white fish (2 lbs)
2 tablespoons Kraft® Grated Parmesan Cheese

Steps:

  • Put heavy-duty aluminum foil on grill and spray with non-stick cooking spray. Heat grill to medium heat.
  • Blend first 6 ingredients in blender until well blended. Reserve half the mayo mixture; brush both sides of fish with remaining mayo mixture.
  • Grill 3 minutes on each side or until fish flakes easily with fork. (I found it took more like 6-10 minutes, but I moved the fish up one shelf, about 5 or 6 inches from the flame.).
  • Top with cheese. Serve with reserved mayo mixture.

4 tilapia fillets
1 orange, sliced
1/2 cup plain yogurt
1/2 cup fresh coriander, chopped (cilantro)
1/4 cup mayonnaise
4 tablespoons olive oil
2 tablespoons orange rind
2 tablespoons orange juice
2 tablespoons gingerroot, chopped
1 tablespoon lime juice
salt and pepper

Steps:

  • In a small bowl combine 2 tablespoons olive oil, with orange rind, orange juice, ginger root and 1/4 cup coriander. Season with salt and pepper. Spray 4 large pieces of aluminum foil with cooking spray and place on fish in the center of each.
  • Divide orange mixture in 4ths and spoon into the body of each fish. Add 2 slices of the orange inside the fish. Wrap tightly and place on preheated grill. Grill over medium heat for about 30 minutes or until fish is done. Meanwhile combine yogurt, mayonnaise, lime juice, remaining olive oil and remaining coriander in a bowl.
  • When fish are done remove from grill and unwrap. Be careful of the hot steam. Place on plate and pour 1/4th of the sauce over each fish.

1 (1 1/4 ounce) packet taco seasoning
3 tablespoons garlic oil (or olive oil)
4 boneless skinless tilapia fillets (about 4.25 oz. each)
1/2 medium pineapple
1/4 small red onion
1 serrano pepper (or jalapeno if you want less heat)
2 tablespoons fresh cilantro
1/8 teaspoon salt
1 lime

Steps:

  • Heat a grill pan over medium-high heat 5 minutes. As pan heats, peel pineapple half; cut lengthwise into two pieces and remove core. Slice each pineapple piece lengthwise into three strips. Arrange strips in a single layer over grill pan; cook 2-3 minutes on each side or until grill marks appear. Set aside. While pineapple cooks, chop onion and cut pepper in half lengthwise -- remove and discard seeds. Chop chile and cilantro. Combine onion, pepper, cilantro and salt in a small bowl. Zest the lime to measure 1 teaspoons zest and juice lime to measure 1 tablespoons juice. Add both to onion mixture; mix well.
  • Whisk taco seasoning mix and oil in a bowl. Add tilapia; turn to coat. Place two tilapia fillets on grill pan. Cook 2 minutes or until grill marks appear. Turn tilapia over; cook 2 minutes or until tilapia flakes easily with a fork. Remove tilapia from pan. Wipe out pan and repeat with remaining fillets.
  • As tilapia cooks, chop pineapple and add to onion mixture; mix well. Top tilapia with pineapple salsa.
