TERIYAKI GRILLED TOFU



Teriyaki Grilled Tofu image

I love tofu, but my family only likes a few of the tofu recipes I make. This is one they really enjoy, though. When the tofu is cooking, I try not to leave the grill as the tofu sometimes can go from lightly charred to being overcooked and dark in a few minutes. I have included the time for marinating the tofu in the preparation time.

16 ounces extra firm tofu
1/2 cup teriyaki sauce
2 tablespoons honey
1 teaspoon sesame oil
2 garlic cloves, minced
1 -2 teaspoon gingerroot, peeled and grated, to taste
salt and pepper, to taste
2 -3 green onions, thinly sliced
1/2 teaspoon crushed red pepper flakes (optional)

Steps:

  • Coat grill rack throughly with nonstick cooking spray. Preheat grill to medium (300° to 350 ° F). Cut tofu into slices 1/2-inch thick. Place slices in a single layer in a shallow glass dish.
  • In a small bowl combine teriyaki sauce, honey, oil, garlic, ginger, and salt and pepper to taste. Pour teriyaki mixture over tofu and cover with plastic wrap. Refrigerate at least 30 minutes.
  • After removing the tofu from the marinade, place the leftover marinade into a sauce pan. Cook over high heat until boiling. Boil marinade until reduced and slightly thick. Turn down heat to very low and start grilling the tofu.
  • Grill tofu 5-6 minutes per side, turning gently, until lightly charred and heated through, being careful not to let tofu overcook. Remove from grill. Drizzle reduced marinade over grilled tofu. Sprinkle with green onions and (if desired) red pepper flakes. Serve at once.

1/4 cup low-sodium tamari
2 teaspoons sesame oil
1 tablespoon honey
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1 teaspoon finely chopped garlic
olive oil flavored cooking spray
250 g extra firm tofu, drained and patted dry, cut crosswise into 8 slices

Steps:

  • In a wide, shallow dish, whisk together tamari, sesame oil, honey, rice vinegar, ginger and garlic.
  • Add tofu, turn to coat all over, cover and chill for at least 1 hour or overnight.
  • Pat tofu dry, then oil lightly with cooking spray.
  • Grill over medium-high heat or broil on a foil-lined baking sheet until golden brown, 3 to 5 minutes on each side.

  • Pre-heat oven to 400 degrees F. In a medium sized bowl, whisk together the sesame oil, tamari, garlic powder, maple syrup and vinegar.
  • Cut the pressed tofu into bite sized pieces and place in the oil mixture. Use a spoon or spatula to stir the tofu and make sure it’s completely coated. Next, sprinkle over 1 teaspoon of the arrowroot powder and mix well until all the tofu is coated. Then, sprinkle on the remaining teaspoon of arrowroot powder and give a gentle mix just until you can’t see the dry white powder anymore.
  • Line a large baking sheet with a non-stick mat or parchment paper. Pour the tofu and and arrange it so that none of the pieces are touching each other. Bake tofu for about 25-30 minutes, until golden and crispy, stirring 2-3 times during the baking.
  • Heat a large pan over medium heat and add 1-2 teaspoons olive oil, vegetables and then season with salt and pepper. Cook vegetables until fork tender, about 10 minutes. Sometimes it helps to put the lid on so they can steam.
