GRILLED TEQUILA LIME CHICKEN

Grilled Tequila Lime Chicken image

Also known as "margarita chicken," this tequila lime chicken is loaded with bright Southwestern flavor.

Provided by Jennifer Segal

Categories     Dinner

Time 20m

Yield 4

Number Of Ingredients 12

3 tablespoons olive oil
3 tablespoons tequila
1 tablespoon lime zest, from about 2 limes
4 cloves garlic, minced
1¼ teaspoons ground ancho chili pepper
½ teaspoon ground coriander
¼ teaspoon dried oregano
1¼ teaspoons salt
½ teaspoon freshly ground black pepper
2 teaspoons honey
4 boneless skinless chicken breasts (or about 2 pounds), pounded to an even ½-inch thickness
1 lime, sliced into wedges, for serving (optional)

Steps:

  • Combine all of the ingredients except for the chicken breasts in a 1-gallon freezer bag. Close the bag and squish the marinade around to mix. Add the chicken breasts and massage the marinade into the meat until evenly coated. Seal the bag and place it in a bowl in the refrigerator (the bowl protects against leakage); marinate for at least 6 hours or overnight.
  • Clean the grill and preheat to high. Lightly dip a wad of paper towels in vegetable oil and, using tongs, carefully rub over the grates several times until glossy and coated. (Alternatively, you can spray the grates with a non-flammable cooking spray.) Place the chicken breasts on the grill and spoon any remaining marinade from the bag over top. Grill, covered, for 2 to 3 minutes per side (turning only once). Serve immediately with lime wedges.

TEQUILA CHICKEN FAJITAS

Tequila Chicken Fajitas image

Fajitas are such a great food - they just scream summertime. This is great because you don't need a grill, and you can make it indoors, even if it's not summertime. I got this recipe from the Juan-Carlos Cruz Calorie Countdown Cookbook, and I wanted to save it before I have to return the book to the library! The original recipe says it serves 4. I don't know about you, but I think that would be, like, a kid serving size. Note: Prep time does not include marinating time.

Provided by Greeny4444

Categories     Tex Mex

Time 20m

Yield 4 fajitas, 2 serving(s)

Number Of Ingredients 15

3/4 lb boneless skinless chicken breast, cut into thin strips
1/4 cup tequila
1/4 cup fresh lime juice
1 tablespoon Worcestershire sauce
1/2 teaspoon red pepper flakes (or to taste)
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
4 garlic cloves, minced
2 teaspoons canola oil
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1/2 medium red onion, sliced into strips
4 (6 inch) corn tortillas
1/4 cup fresh cilantro, chopped (optional)

Steps:

  • Place the chicken breasts in a heavy-duty resealable bag.Mix together the tequila, lime juice, Worcestershire sauce, red pepper flakes, chili powder, salt, pepper, and garlic in a bowl. Pour into the bag with the chicken, and place into the refrigerator for 45 minutes or longer (I would probably do it several hours).
  • Heat a large nonstick skillet over medium-high heat, and add the canola oil. Saute the bell peppers and onion until crisp tender, 3 to 5 minutes. Remove from the pan and keep warm.
  • Remove the chicken strips from the marinade and discard the marinade.
  • Cook the chicken in the same pan in which you cooked the vegetables for about 6 minutes, or until there is no pink left.
  • Return the onions and bell peppers to the pan and heat through for about one minute. Season with salt and pepper to taste.
  • Warm the tortillas and place on plates. Divide the chicken mixture evenly among the tortillas, sprinkle with cilantro, and serve.
  • Variations:
  • Tequila Steak Fajitas: Substitute 3/4 pound flank steak for the chicken breasts.
  • Tequila Shrimp Fajitas: Substitute 3/4 pound shrimp for the chicken. Cook the shrimp for 2 minutes, or just until pink.

TEQUILA-LIME GRILLED CHICKEN BREASTS

Tequila-Lime Grilled Chicken Breasts image

Make and share this Tequila-Lime Grilled Chicken Breasts recipe from Food.com.

Provided by Abel8284

Categories     Chicken Breast

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 10

3 large chicken breast halves (about 3lbs. total)
1 cup fresh cilantro, chopped
3/4 cup tequila
1/2 cup fresh lime juice
2 tablespoons firmly packed light brown sugar
1 fresh jalapeno chile, seeded, and minced
1 1/2 tablespoons minced garlic
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
3 teaspoons grated lime zest

Steps:

  • With a sharp, heavy knife, cut each chicken breast in half crosswise for a total of 6 pieces. In a large glass or plastic bowl, combine cilantro, tequila, lime juice, brown sugar, chile, garlic, salt, and pepper. Add chicken and mix to coat with marinade. Cover and let stand at room temperature for 30 minutes. (Do not marinate longer, because the acid in the marinade will begin to "cook" the chicken.).
  • Prepare a gas or charcoal grill for direct, medium-high heat (you can hold your hand 1 to 2 inches above the cooking grate only 2 to 3 seconds; visit our Grilling Essential section for complete instructions).
  • While grill heats, remove chicken from marinade, transfer to a platter, and pour marinade into a small bowl. Push your fingers under skin of each piece of chicken and rub meat with 1/2 teaspoons lime zest.
  • Place chicken skin side down on oiled cooking grate and brush with marinade; cover gas grill. Cook until skin is browned but not charred, 4 to 6 minutes. Turn chicken with a wide spatula, brush again with remaining marinade, and cook, turning as needed to prevent burning, until chicken is no longer pink at the bone (cut to test), about 10 minutes longer. Transfer to a clean platter.

CHILI-LIME CHICKEN FAJITAS

Chili-Lime Chicken Fajitas image

I like to use my cast-iron skillet for this lime chicken fajitas recipe because it gives the dark sear that flavors the fajitas. If you don't have cast iron, a different pan will work just fine. We go pretty simple with our fajita toppings: lime wedges, cheese and a little sour cream, but you can add anything that you wish. -Ashley Lecker, Green Bay, Wisconsin

  • Add chicken breasts to a gallon size zip top bag. In a medium bowl, combine marinade ingredients with a whisk. Pour into the bag with the chicken and seal, removing as much air from the bag as possible. Gently massage the chicken with your hands and flip bag back and forth to fully coat the chicken. Place the bag inside a bowl; refrigerate for at least 2 hours or overnight. Every so often, flip the bag over a few times to keep the chicken coated and moist, while marinating.
  • Slice onions and place them in the center of large sheet heavy-duty foil. Add butter, sprinkle with salt and pepper and then fold to make a packet.

TEQUILA LIME CHICKEN FAJITAS - PERSNICKETY PLATES
Cover the chicken with the tequila, lime juice, minced garlic, and cilantro. Add salt and pepper to taste (I also added a sprinkle of red pepper flakes and Montreal chicken seasoning). Stir it up. Cover the bowl and let marinate in the fridge for 6-7 hours. Due to poor planning on my part, mine only marinated for about 2 1/2 hours.
