Steps:
- Parcook the potatoes: Place in a pot of water and boil until fork-tender; let cool. Slice each potato lengthwise into eighths.
- Preheat a grill to medium or place a cast-iron grill pan over medium heat. Mix 1 tablespoon salt, the lime zest and cayenne in a small bowl.
- Brush the potato wedges with the oil and season with salt and pepper. Grill until golden brown on all sides (including the skin) and just cooked through, about 1 1/2 minutes per side. Transfer to a platter; immediately season with the salt mixture and sprinkle with cilantro.

- Prepare the grill, prep the sweet potatoes: Prepare your grill for hot, direct heat. While the grill is heating up, peel the sweet potatoes and slice lengthwise, or on a diagonal, into 1/4 inch-thick pieces. Coat the sweet potato slices with olive oil and lightly sprinkle with Kosher salt.
- Make cilantro lime dressing: Combine all of the dressing ingredients into a small bowl.
- Grill the sweet potatoes: Once the grill is hot, lay the sweet potato pieces down onto the grill grates. Cover the grill and cook until each side gets some grill marks, between 3-6 minutes for each side, depending on how hot your grill is.

- Preheat a grill to medium high. Microwave the sweet potatoes until just starting to soften, 8 to 10 minutes. Let cool, then slice into 1/2-inch-thick rounds.
- Whisk 2 tablespoons vegetable oil, the cumin, chili powder, 1 teaspoon salt and a few grinds of pepper in a large bowl. Add the potato slices and gently toss to coat. Transfer to the grill and cook until charred, 2 to 3 minutes per side. Transfer to a platter.
- Mix the cilantro, remaining 1/4 cup vegetable oil, lime zest and juice and chipotle in a bowl; season with salt. Thin with more lime juice if needed. Spoon the dressing over the sweet potatoes.

- Cover potatoes with cold salted water in a large pot, then bring to a boil. Simmer until slightly resistant in center when pierced with a sharp small knife, 25 to 30 minutes, then transfer to a large bowl of cold water to stop cooking. Drain well. When cool enough to handle, peel potatoes with a sharp small knife and quarter lengthwise.
- Prepare grill for cooking.
- Whisk together lime juice, salt, and pepper and add oil in a slow stream, whisking. Whisk in cilantro.
- When fire is hot (you can hold your hand 5 inches above rack for 1 to 2 seconds), grill potatoes in 2 or 3 batches on lightly oiled grill rack (over coals if using a charcoal grill), uncovered, turning, until grill marks appear and potatoes are just tender, 3 to 6 minutes total.
- Serve potatoes warm or at room temperature, drizzled with vinaigrette.
GRILLED SWEET POTATOES

- Bring a large pot of water to boil. Place the sweet potatoes gently in the water. Boil for approximately 12-15 minutes, depending on the thickness of the potatoes.
- Preheat your grill while your potatoes are boil to High heat (450 degrees F).
- While the sweet potatoes are boiling, in a blender jar or food processor, combine the mayonnaise, chipotle pepper, adobo sauce, and lime juice. Puree until smooth. Transfer to a small bowl, and refrigerate until ready to serve.
- Carefully remove the sweet potatoes from the water and set them on a cutting board. Slice them into 1/2 inch thick slices.
- Place the potato slices on a large baking sheet. Drizzle with olive oil and brush with a basting brush to ensure the potatoes are evenly coated on all sides. Season on all sides with Hey Grill Hey Signature Chicken Seasoning or salt and pepper.
- Place sweet potato rounds directly on the grill grates. Close the lid and cook for 3-5 minutes. Flip, close the lid, and cook for an additional 3-5 minutes or until the potatoes have nice char marks and they are nice and tender.
- Serve immediately with the chipotle lime dipping sauce.

- Heat grill to medium-high heat.
- Place the wedges in a large bowl and drizzle with oil. Season with salt and pepper and toss to combine. Place on the grill, cooking on all sides until cooked through, about 10 minutes total. Remove and drizzle or brush with a bit of maple butter, sprinkle with salt and parsley to finish.
- In a bowl, blend the butter, maple syrup and allspice together until light and smooth. Refrigerate and use as a spread or melt and drizzle over pancakes, grilled sweet potatoes or popcorn.
MAPLE CITRUS GLAZED GRILLED SWEET POTATOES
Sweet potatoes and fire get along perfectly. Don't be confused by the labels in the produce aisle. For the best flavor you want buy what the local grocer calls "yams". They aren't really yams at all - good luck finding a real yam. If you substitute lemon juice for lime juice you lose a lot of the flavor. Getting the right heat and the right distance from the flame takes some experience and experimentation. You might want to practice with one piece of potato at a time until you get it right. You should use a vegetable grill rack because the pieces of potato have a tendency to slip into the fire.

- In a small bowl, combine the brown sugar, ginger, and 1 Tbsp of the butter; mix well.
- Stir in molasses, pineapple juice, almond extract and cilantro; set aside.
