GRILLED SWEET POTATOES
These Grilled Sweet Potatoes are little slices of heaven. Grilled to a crispy, tender finish, and served with my chipolte lime dipping sauce, these make a delicious (and nutritious) appetizer or side dish to compliment your BBQ.

- Bring a large pot of water to boil. Place the sweet potatoes gently in the water. Boil for approximately 12-15 minutes, depending on the thickness of the potatoes.
- Preheat your grill while your potatoes are boil to High heat (450 degrees F).
- While the sweet potatoes are boiling, in a blender jar or food processor, combine the mayonnaise, chipotle pepper, adobo sauce, and lime juice. Puree until smooth. Transfer to a small bowl, and refrigerate until ready to serve.
- Carefully remove the sweet potatoes from the water and set them on a cutting board. Slice them into 1/2 inch thick slices.
- Place the potato slices on a large baking sheet. Drizzle with olive oil and brush with a basting brush to ensure the potatoes are evenly coated on all sides. Season on all sides with Hey Grill Hey Signature Chicken Seasoning or salt and pepper.
- Place sweet potato rounds directly on the grill grates. Close the lid and cook for 3-5 minutes. Flip, close the lid, and cook for an additional 3-5 minutes or until the potatoes have nice char marks and they are nice and tender.
- Serve immediately with the chipotle lime dipping sauce.

GRILLED POTATOES WITH CHIPOTLE YOGURT

- For the chipotle yogurt sauce: Combine the yogurt, cilantro, mint, lime juice and chipotle in a medium bowl and season with salt. Mix until well blended. Place in fridge until ready to use.
- For the potatoes: Combine the potatoes, thyme and garlic in a large pot with water covering the potatoes by 2 inches. Season the water with 1/2 cup kosher salt. Bring the potatoes to a simmer and cook until just tender, 5 to 8 minutes. Drain and allow to cool to room temperature.
- Preheat the grill to medium-high. Thread the potatoes on skewers with a bay leaf at each end, if using. Drizzle with the extra-virgin olive oil and sprinkle with salt. Grill the potatoes until charred on both sides, about 2 minutes per side. Serve with the chipotle sauce and garnish with additional cilantro.
GRILLED SWEET POTATOES WITH CHIPOTLE-HONEY SAUCE
Prepared on the grill and paired with a spicy sauce, these sweet potatoes make a wonderful side with most any meal. Plus, they take only 20 minutes to make!

- Heat gas or charcoal grill. In small bowl, mix sauce ingredients; set aside.
- Cut each sweet potato lengthwise into 4 or 5 slices; brush both sides with oil. Carefully brush additional oil on grill rack. Place potatoes on grill over medium heat; sprinkle with 1 teaspoon of the salt.
- Cover grill; cook 8 to 10 minutes, turning once and sprinkling with remaining 1 teaspoon salt, until potatoes are tender. Serve with sauce.

GRILLED SWEET POTATO DIP
This tasty dip boasts the antioxidant benefits of sweet potatoes and is a delicious and nutritious crowd pleaser. Reduce the grilling time by precooking the sweet potatoes, making this recipe an easy entertaining choice. A good tip is is to brush wheat flour or corn tortillas lightly with oil and grill until crisp and golden, Cut into wedges to serve with dip alongside veggies. So Good!!

- Preheat the grill to medium high; lightly grease the grate. Prick each sweet potato several times. Microwave on HIGH for 5-6 minutes or until fork tender. Cool slightly and cut in half, lengthwise.
- Thread soaked toothpicks through the side of each slice of onion for easy grilling.
- Stir the olive oil with the garlic, cumin, salt and pepper.
- Brush evenly over the cut sides of the sweet potatoes, the onion and peppers.
- Place the onions and peppers on the grate. Grill, turn often for 10 minutes or until marked and softened. Meanwhile, add the sweet potatoes cut-side down to the grate.
- Grill for 3-4 minutes or until well marked. Cool vegetables to room temperature.
- Transfer the onion and pepper to a food processor. Peel and discard the skin from the sweet potatoes, add the flesh to the food processor. Blend until smooth and creamy. Stir in sour cream and coriander,.
- Taste and adjust seasonings as needed. Transfer to a serving dish. Chill for 1 hour to meld flavors up to 24 hours.
- Add the lime juice just before serving. Serve with cut vegetables such as bell peppers, cucumbers and celery, as well as grilled tortilla wedges (if using).

- Preheat a grill to medium high. Microwave the sweet potatoes until just starting to soften, 8 to 10 minutes. Let cool, then slice into 1/2-inch-thick rounds.
- Whisk 2 tablespoons vegetable oil, the cumin, chili powder, 1 teaspoon salt and a few grinds of pepper in a large bowl. Add the potato slices and gently toss to coat. Transfer to the grill and cook until charred, 2 to 3 minutes per side. Transfer to a platter.
- Mix the cilantro, remaining 1/4 cup vegetable oil, lime zest and juice and chipotle in a bowl; season with salt. Thin with more lime juice if needed. Spoon the dressing over the sweet potatoes.
