GRILLED SWEET POTATO SALAD

3 sweet potatoes, skin on and sliced into 1/2-inch rounds
Kosher salt and freshly ground black pepper
1/2 cup extra-virgin olive oil, plus extra for the potatoes
1/4 cup white wine vinegar, preferably Chardonnay
2 tablespoons chopped capers
2 tablespoons honey
1 teaspoon whole-grain mustard
1 cup sliced scallions
1/2 cup walnuts, toasted
1 green apple, cored and julienned
1 tablespoon sliced chives
2 tablespoons white sesame seeds, toasted
Fresh parsley and cilantro leaves, for garnish

Steps:

  • Preheat a grill to medium heat.
  • Sprinkle the potatoes with salt and pepper and toss with enough olive oil to coat. Grill the potatoes until caramelized, about 4 minutes per side. Place them on the top rack and close the grill, allowing them to finish cooking through, about 20 minutes more. Remove the potatoes from the grill and allow them to come to room temperature.
  • To make the vinaigrette, whisk together the vinegar, capers, honey, mustard and olive oil in a small bowl. Season with salt and pepper. Dice the potatoes into large chunks and toss in a bowl with the scallions and walnuts. Season with salt and pepper.
  • Dress the potatoes with enough vinaigrette to coat the salad. Top with the apples, chives, sesame seeds, cilantro and parsley and serve.

4 lb sweet potatoes (8; preferably long)
1/4 cup fresh lime juice
1 1/2 teaspoons kosher salt
1/4 teaspoon black pepper
1/2 cup olive oil
1/4 cup chopped fresh cilantro

Steps:

  • Cover potatoes with cold salted water in a large pot, then bring to a boil. Simmer until slightly resistant in center when pierced with a sharp small knife, 25 to 30 minutes, then transfer to a large bowl of cold water to stop cooking. Drain well. When cool enough to handle, peel potatoes with a sharp small knife and quarter lengthwise.
  • Prepare grill for cooking.
  • Whisk together lime juice, salt, and pepper and add oil in a slow stream, whisking. Whisk in cilantro.
  • When fire is hot (you can hold your hand 5 inches above rack for 1 to 2 seconds), grill potatoes in 2 or 3 batches on lightly oiled grill rack (over coals if using a charcoal grill), uncovered, turning, until grill marks appear and potatoes are just tender, 3 to 6 minutes total.
  • Serve potatoes warm or at room temperature, drizzled with vinaigrette.

2 pounds sweet potatoes, peeled and cut into 1-inch chunks
1/3 cup extra-virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 cup finely chopped fresh cilantro leaves
salt and freshly ground black pepper to taste
1/2 medium-size red bell pepper, seeded and cut into 1/4 inch dice [See how on streaming video]
4 scallions, white and light green parts, finely chopped

Steps:

  • Place the sweet potatoes in a large saucepan and cover with water. Bring to a boil and cook until just tender, 7 to 10 minutes (don't overcook or your salad will be mushy and falling apart.) Drain and transfer to a large bowl.
  • While the potatoes are cooking, make the dressing. Whisk together the olive oil, lime juice, chili powder, cumin, cilantro, salt, and pepper in a small bowl. Add the red bell pepper and scallions to the potatoes and toss with the dressing. Season again with salt and pepper. Serve warm or refrigerate and bring to room temperature before serving.

1 tablespoon lime juice
1 tablespoon white wine vinegar
1/4 cup extra virgin olive oil
2 tablespoons cilantro, chopped
2 garlic cloves, minced
salt
2 lbs sweet potatoes, peeled and sliced 3/8 inch thick
1 red bell pepper, diced
2 scallions, white and green parts sliced
3 tablespoons mango juice or 3 tablespoons pineapple juice
salt & fresh ground pepper

Steps:

  • Prepare medium-low charcoal grill or preheat a gas grill.
  • For the vinaigrette: combine lime zest, juice, and vinegar in a large bowl.
  • Whisk in oil until completely blended.
  • Stir in cilantro, garlic and salt.
  • To make sweet potatoes: add potato slices to vinaigrette, and let marinate for 5 minutes.
  • Using a slotted spoon, transfer the potato slices to the grill.
  • Turn occasionally, basting with remaining vinaigrette and cook until tender when pierced with a fork - about 10-15 minutes.
  • Return grilled potatoes to vinaigrette.
  • Add red pepper, scallions, juice, salt and pepper; toss gently and serve.

225 g salad leaves
110 g cherry tomatoes, halved
2 tablespoons pumpkin seeds

1 teaspoon clear honey

Steps:

  • Preheat grill (broiler) to a medium heat and brush the potato slices with the olive oil.
  • Season and grill for 10 minutes on each side until tender.

cooking spray
1 teaspoon cumin
1/8 teaspoon salt
1/8 teaspoon ground black pepper
2 ears corn, husked
1 red bell pepper, seeded & chopped
2 scallions, chopped
1/2 cup fresh cilantro, chopped
2 tablespoons olive oil
3 tablespoons lime juice
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon dried oregano
1 teaspoon sugar

Steps:

  • Cover sweet potatoes with cold water in a large pot and simmer until just tender.
  • Allow to cool and slice into 1/2 inch thick slices.
