GRILLED SHRIMP IN LETTUCE LEAVES WITH SERRANO-MINT SAUCE



Grilled Shrimp in Lettuce Leaves with Serrano-Mint Sauce image

1 pound large shrimp (about 36), peeled and deveined
3 tablespoons canola oil
Salt and freshly ground pepper
12 leaves green curly leaf lettuce
Serrano-Mint Sauce, recipe follows
Chili oil, for drizzling, optional
Fresh cilantro leaves
1 cup tightly packed mint leaves, plus more for garnish
2 serrano chiles, chopped
4 cloves garlic, chopped
One 1-inch piece fresh ginger, peeled and chopped
2 teaspoons sugar
1/4 cup white wine vinegar
2 tablespoons fish sauce
Salt

Steps:

  • Preheat the grill to medium-high. In a large bowl, toss shrimp in oil and season with salt and pepper. Grill the shrimp for 1 to 2 minutes on each side or until just cooked through. Be careful not to overcook the shrimp, or they will be tough and rubbery. Remove from the grill.
  • Place about 3 shrimp in each lettuce leaf. Drizzle with the Serrano-Mint Sauce and with a little chili oil, if desired. Sprinkle with a few cilantro leaves. Roll up the lettuce leaves, and eat immediately.
  • Place all ingredients, except for salt, in a blender. Pulse until smooth. Season, to taste.

1/4 cup (packed) golden brown sugar
3 1/2 tablespoons fresh lemon juice
2 tablespoons plus 1/2 cup vegetable oil
2 teaspoons grated lemon peel
2 teaspoons cayenne pepper
1/2 teaspoon salt
2 pounds large uncooked shrimp, peeled, deveined
2 cups (packed) fresh mint leaves
Metal skewers

Steps:

  • Mix brown sugar, 2 tablespoons lemon juice, 2 tablespoons oil, lemon peel, cayenne pepper, and salt in medium bowl to blend. Add shrimp and stir to coat. Let marinate 30 minutes or up to 1 hour.
  • Meanwhile, place mint, remaining 1 1/2 tablespoons lemon juice, and remaining 1/2 cup oil in processor. Blend until mint is finely chopped and mixture is smooth, scraping down sides occasionally. Season mint dipping sauce with salt.
  • Prepare barbecue (medium-high heat). Thread shrimp onto skewers. Grill shrimp until just cooked through, about 2 minutes per side. Serve with mint dipping sauce.

24 uncooked large shrimp (1 lb.), peeled, deveined
1/2 cup KRAFT Classic CATALINA Dressing
1 cup fresh cilantro
1/2 cup KRAFT Real Mayo Mayonnaise
1 Tbsp. brown sugar
1 whole jalapeño pepper, stem and seeds removed
1 Tbsp. lemon juice

Steps:

  • Place shrimp and dressing in resealable plastic bag; seal tightly and shake to mix well. Refrigerate 20 min. to marinate.
  • Blend next 5 ingredients in blender until smooth. Pour into small bowl; refrigerate until ready to serve.
  • Heat greased grill to medium-high heat. Remove shrimp from marinade; discard marinade. Spear 1 shrimp onto each of 24 small wooden skewers (3-inch lengths.) Grill shrimp 5 to 7 min. or until pink, turning once. Serve with cilantro mixture as a dipping sauce.

2 tablespoons sweet chili sauce
1 green onion, thinly sliced
3/4 teaspoon Sriracha chili sauce or 1/2 teaspoon hot pepper sauce
45 uncooked large shrimp (about 1-1/2 pounds), peeled and deveined
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small bowl, mix mayonnaise, chili sauce, green onion and Sriracha. Sprinkle shrimp with salt and pepper. 1 cup guava jelly or 1 cup apple jelly
2 garlic cloves, finely chopped
2 limes, juice of
1 tablespoon Worcestershire sauce
1 jalapeno pepper, seeded and finely chopped
1/4 teaspoon red pepper flakes
2 lbs shrimp, raw, large, peeled and deveined
1/4 teaspoon salt
10 bamboo skewers

Steps:

  • Soak bamboo skewers in water for at least 30 minutes.
  • In a small saucepan combine jelly, garlic, lime juice, Worcestershire, jalapeno and chilies. Cook over medium heat until jelly melts.
  • Thread shrimp onto skewers, about 4 per skewer if using large shrimp.
  • Brush both sides of shrimp with jelly mixture and place on a tray to marinate for 30 minutes.
  • Preheat grill on high and sprinkle shrimp with salt on both sides.
  • Grill shrimp for 3 minutes per side, brushing with marinade again before turning. Reduce time for smaller shrimp.
  • Place remaining sauce in a serving dish for dipping.
  • Prep time includes time to marinate but not to soak the skewers.
