These Grilled Honey Lime Shrimp are a quick, easy, and healthy summer dinner!

2 lbs. peeled, deveined raw shrimp
¼ cup freshly-squeezed lime juice ((about 2 limes))
¼ cup rice vinegar
¼ cup Dijon mustard
½ cup honey
¼ cup minced fresh chives
2 teaspoons minced fresh garlic
2 teaspoons salt
1 teaspoon pepper
½ cup extra-virgin olive oil

Steps:

  • To make the marinade, whisk together all ingredients except shrimp.
  • Marinate shrimp in half of the dressing for 30 minutes.
  • Thread shrimp onto kabob skewers.
  • Grill the shrimp over high heat for about 10 minutes, flipping halfway through. Small shrimp will cook faster (about 5-7 minutes), so adjust the cooking time based on the size of your shrimp. Use the remaining dressing to baste the shrimp while they cook.

You can make this grilled sticky honey lime shrimp all summer long and then when the weather turns cold just continue making shrimp in a skillet!

2 lbs 20/25 shrimp (deveined and peeleed)
oil
1 lime (juiced)
1 tablespoon apple cider vinegar
1 cup of honey
2 teaspoons chili powder
1¼ teaspoon cumin
1 teaspoon garlic salt
¼ teaspoon pepper
½ teaspoon ground coriander
½ teaspoon onion powder

Steps:

  • Heat the grill to medium high heat.
  • In a small saucepan over medium heat, melt the lime juice, honey and vinegar together, bring to a simmer and then remove from the burner to cool.
  • Rub a little oil all over the shrimp then mix the seasonings together in a small bowl and rub all over the shrimp.
  • Skewer the shrimp onto wooden skewers.
  • Place on the grill for 2-3 minutes, flip over and begin to baste with the sauce mixture. Allow to cook for another 2 minutes, or until pale and pink.
  • Flip the shrimp and baste the other side right before removing from the grill, and allow to cook for another second.
  • Take the shrimp off of the grill and place in a bowl, and drizzle each skewer with the remaining sauce then serve.

2 tablespoons olive oil
2 tablespoons balsamic vinegar
3 tablespoons honey
1/4 cup fresh lime juice (1 lime)
1/4 teaspoon salt (adjust to taste)
1 teaspoon pepper (adjust to taste)
1 teaspoon garlic powder (adjust to taste)
1 1/2 teaspoons butter, softened
1 1/2 teaspoons flour
3/4 lb large raw shrimp, deveined & shelled

Steps:

  • Combine olive oil, vinegar, honey, lime juice, salt, pepper and garlic together to make marinade. Marinate shrimp for about 30 minutes or more if desired, then drain marinade into a cup and save to make glaze after cooking shrimp.
  • Heat grill pan to medium, grill shrimp for a total of 3 minutes, turning over once. Remove shrimp from pan and cover to keep warm.
  • Blend butter and flour together and add to juices in pan. Add saved marinade to pan also and heat till thickened stirring to prevent lumps, about a minute or two. Cover shrimp with glaze or serve separately over white rice.
  • Makes two servings.

COCONUT-LIME MARINATED AND GRILLED SHRIMP

The quick and easy marinade in this recipe is a great way to use up that leftover coconut milk you have in your refrigerator. It adds a touch of sweetness to grilled shrimp and only takes 30 minutes to infuse tremendous flavor into your next dinner. Serve with steamed white rice or cold rice noodles for a light but delicious meal.

3 large limes (about 10 ounces)
One 1/2-inch piece fresh ginger
2 large cloves garlic
1/4 to 1/2 teaspoon crushed red pepper flakes, to taste
2 tablespoons canola oil
1/3 cup canned coconut milk
Kosher salt
1 pound jumbo shrimp (16/20), peeled and deveined
1 small scallion, thinly sliced

Steps:

  • Zest and juice 2 of the limes (you should have about 1 tablespoon zest and 1/4 cup juice) and add to a medium glass bowl. Peel and grate the ginger and garlic and add to the bowl along with the red pepper flakes, canola oil, coconut milk and 1 1/2 teaspoons salt. Stir to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lime into wedges. Reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels; don't worry if the coconut milk has hardened while it was in the refrigerator. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
  • Top with the sliced scallion and serve with the reserved lime wedges.

1/2 lb large shrimp, peeled and deveined
1/4 cup olive oil
2 tablespoons honey
3 tablespoons lime juice
2 garlic cloves, minced
1/2 teaspoon kosher salt

Steps:

  • In a large ziploc bag, combine all the marinade ingredients. When everything is well-combined, add the shrimp, squeeze as much air as possible out of the bag, and close it up. Place it in the fridge.
  • Let the shrimp marinate for 30-60 minutes, flipping the bag around once or twice during that time, so that all the shrimp stay evenly covered in the marinade.
  • When you're ready to cook, take the shrimp out of the fridge and let them sit at room temperature for about 10 minutes.
  • Heat a large skillet over medium-high heat; there is no need to add any oil or butter to the pan, as the marinade has enough oil in it to keep the shrimp from sticking to the pan. (If you would prefer to use the grill for these, you can thread them onto skewers and toss them on the grill at this point.).
  • Add your shrimp to the pan in a single layer, making sure they are not too crowded; you can always cook them in more than one batch.
  • Let them cook on one side for about a minute, until they curl up and start to turn pink.
  • Flip them over, and cook for another 30 seconds or so, until the shrimp are opaque.
  • Remove from the pan, and serve immediately!
