4 large russet potatoes, well scrubbed
1/4 cup olive oil
1 teaspoon Neely's dry rub
Kosher salt and freshly ground black pepper
Creole Dipping Sauce, recipe follows
3 tablespoons Creole mustard
1/2 cup mayonnaise
Dash hot sauce

Steps:

  • Preheat the grill to medium heat.
  • Add the potatoes to a large pot of cold water. Bring potatoes to a boil over medium heat, then reduce the heat and simmer until the potatoes are just slightly tender but not cooked through about 10 to 12 minutes. Drain the potatoes and dry well. Slice the potatoes into thick wedges, about 6 per potato.
  • In a large bowl, whisk together the olive oil, dry rub, and salt and pepper, to taste. Add the potato wedges and toss. Grill the potatoes until golden brown and crisp all over, about 10 to 12 minutes. Transfer the potatoes to a serving bowl or platter and serve with Creole Mustard Dipping Sauce.
  • Combine all of the ingredients in a small bowl.

1 1/2 teaspoons unsalted butter
1/2 medium onion, finely diced
1 clove garlic, minced
1 cup ketchup
1/2 cup molasses
1/2 cup apple cider
2 tablespoons sugar
1/2 cup lager-style beer
1 1/2 teaspoons yellow mustard
2 teaspoons lemon juice
1 1/2 teaspoons Worcestershire sauce
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons paprika
2 1-pound strip steaks (1/2 inch thick)
Salt and freshly ground pepper
1 tablespoon vegetable oil
4 grilled eggs (recipe below)

Steps:

  • Make the sauce: In a medium saucepan over medium heat, melt the butter. Add the onion and garlic and saute until softened, about 3 minutes. Add the rest of the sauce ingredients; bring to a boil, then simmer until the sauce is reduced to 2 cups, about 30 minutes.
  • Meanwhile, preheat a grill to medium-high. Season the steaks with salt and pepper and rub with the oil. Grill for 3 to 5 minutes per side for medium-rare. Let rest for 10 minutes before slicing. Serve with the beer-molasses sauce and the grilled eggs.
  • Place a cast-iron skillet on the grill; add butter, oil or bacon drippings. Crack in eggs and season to taste (the Neelys use a blend of paprika, sugar and onion powder, plus salt and pepper). Cook until the edges are crisp but the yolks are still runny, 2-3 minutes.

2 cups packed fresh parsley leaves
1 tablespoon fresh oregano leaves
1 cup cilantro leaves
4 cloves garlic
1 teaspoon smoked Spanish paprika
1/4 cup red wine vinegar
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper
2 (8-ounce) filet mignon
1/2 pound chorizo sausage
1/2 pound hot Italian sausage links
Oil, for brushing
Salt and freshly ground black pepper
Butter
8 large eggs
Salt and freshly ground black pepper
Garlic Toast, for serving, recipe follows
8 (1/4-inch thick) slices country bread
2 garlic cloves, cut in 1/2
Extra-virgin olive oil

Steps:

  • For the chimichurri:
  • Combine the parsley, oregano, cilantro and garlic in a food processor and pulse until coarsely chopped. Add the paprika, vinegar, oil and salt and pepper, to taste, and process until smooth. Scrape into a bowl and let sit at room temperature for 30 minutes before serving.
  • The sauce can be made 8 hours in advance tightly covered and refrigerated. Bring to room temperature before serving.
  • For the steak and sausages:
  • Heat the grill to high. Brush the steak and sausages with oil and season with salt and pepper, to taste. Grill the steak until golden brown and slightly charred on both sides and cooked to medium-rare doneness, about 4 minutes per side. Grill the sausages until golden brown on both sides and just cooked though, about 15 minutes. Remove the steak and sausages from the grill to a cutting board and let rest for 10 minutes. Slice and reserve.
  • For the eggs:
  • Heat a large cast iron pan on top of the grill. Once the pan is hot add the butter and eggs and either fry or scramble. Remove the eggs to a serving platter and top with the chimichurri and sliced sausages. Arrange the steak around the eggs and serve with Garlic Toast.
  • For the garlic toast:
  • Heat the grill to high. Toast bread on both sides until lightly golden brown, about 20 seconds per side. Remove from grill, rub with the cut side of garlic and drizzle with olive oil.

1 inch boneless steak (3/4 - 1 pound)
1 garlic clove, cut in half
2 teaspoons Worcestershire sauce
salt & pepper
2 large red potatoes, cooked and peeled
3 1/2 tablespoons vegetable oil
1 small onion, coarsely chopped
1 1/2 tablespoons butter
4 eggs

Steps:

  • Rub the steak with the cut sides of the garlic. Brush the steak on both sides with the worcestershire sauce. season with salt and pepper. Set Aside at room temperature. quarter the potatoes, then cut into 1/4 inch thick slices.
  • In frying pan heat 2 tbs. of the oil over med-high heat. Add the onion and potatoes. Cook tossing for 1 to 2 minutes to lightly coat the potatoes with oil. Then continue to cook, turning only occasionally until the slices are nicely browned, about 5 minutes, Season with salt and pepper. Remove to a bowl cover with foil.
  • Wipe the pan clean, no need to rinse. Add the remaining oil to the pan and heat about 1 minute. Add the steak, cover, and cook undisturbed for 3 minutes, until browned on the bottom. Turn over, cover, reduce heat to medium, and cook until browned on the second side and rare in the center. set steak on cutting board. Pour off oil and wipe out the pan.
  • Add the butter to the pan and set over medium heat. Cook eggs as you like. Slice steak in wide slices on an angle. Plate steak, eggs, and potatoes.

Steak and eggs is the quintessential manly breakfast, and this recipe kicks it up a notch with a charred steak and grilled home fries.

Number Of Ingredients 17

1/4 cup dijon mustard
1/4 cup worcestershire sauce
1/2 cup canola oil
1 tablespoon minced garlic
1 tablespoon thyme, stems and leaves
4 pound skirt steak
salt and pepper, to taste
canola oil, as needed
5 pound idaho baking potatoes
1 tablespoon thyme leaves
1 tablespoon rosemary
20 eggs
salt and pepper, to taste
canola oil, as needed
butter, as needed
chopped chives, for garnish
bernaise sauce, for garnish (optional)

Steps:

  • Whisk all of the ingredients together in a large bowl and season with salt and pepper to taste. Remove the silver skin from the back of the steak and add the steak to the marinade. Combine the marinade and the steak in a resealable plastic bag. Let marinate for at least 1 hour, preferably over night.
  • Preheat the grill to medium high. Oil the steak a bit and grease the grates of the grill. Cook the steak over medium heat until medium-rare, about 5 minutes per side.
  • Par boil the potatoes until 2/3 of the way cooked, about 8 minutes. Cool the potatoes in an ice bath, and once cool cut into 6-8 wedges. Add the fries to a large mixing bowl and coat with 1-2 tablespoons of oil. Season the fries with the herbs and salt and pepper, to taste.
  • Preheat the grill to medium-high. Grill the fries until cooked all the way through and slighty charred, about 3 minutes per side. While the fries are cooking, put a cast iron on the grill and heat 3 tablespoons of butter over medium-high. Fry the eggs in batches and place on a parchment paper-lined baking sheet until ready to serve.
  • Slice the steak against the grain. Divide the fries and slices of steak amongst 10 plates, and add the eggs on top. Garnish with chopped chives and bernaise sauce, if using.

1/4 cup extra-virgin olive oil
2 tablespoons capers
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
Dash hot sauce, such as Tabasco
Kosher salt and freshly ground black pepper
Four 6-ounce 1-inch thick flatiron steaks
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
4 eggs
Pinch smoked paprika
4 slices French baguette, sliced on a bias

Steps:

  • For the green sauce: Add the parsley, oil, capers, vinegar, Worcestershire sauce, paprika and hot sauce to a food processor and pulse until smooth. Taste for seasoning and add salt, pepper and more hot sauce as needed.
  • For the steak and eggs: Preheat a grill to medium-high. Sprinkle the steaks with salt and pepper and rub with 1 tablespoon oil. Grill 5 minutes per side for medium-rare and 7 minutes for medium. Let rest 10 minutes before serving. Slice the steak, if desired.
  • While the steaks are resting, place a cast-iron skillet on the grill or side burner and add the remaining oil to the skillet. Crack in the eggs and sprinkle with the paprika, salt and pepper. Cook until the edges are crisp and golden but the yolks are still runny, 2 to 3 minutes. Grill the bread on both sides until crisp and golden, and serve with the steak, green sauce and fried eggs.

HOME FRIES & EGGS STOVE-TOP CASSEROLE

Eggs, Bacon (or sausage), Cheese and Homefries...YUMMY! This is a variation on another one of my recipes, but this one uses fresh potatoes instead of frozen hash browns. It's very versatile and adaptable.

3 -4 medium russet potatoes
4 large eggs
1/2 lb bacon (or sausage)
1/2-1 small onion, peeled and sliced thin
1/2 cup sharp cheddar cheese, shredded (or cheese or your choice)
salt and pepper

Steps:

  • Start out by microwaving your potatoes as you would for baked potatoes. If you have leftover baked potatoes, you can just use those.
  • Once potatoes are cool enough to touch, cut into large cubes (if you prefer them without the skin, peel first) and set aside.
  • Fry bacon (or sausage) over medium heat in a 12 inch non-stick pan. Remove and set aside on a paper towel to drain. When cool enough, crumble into pieces.
  • Remove grease from pan and discard, but leave a tbs or so of the bacon grease. (If using sausage, remove all grease and add a bit of butter or spray with butter flavor Pam).
  • Add cubed potatoes and salt/pepper to taste and cook over medium for a few minutes until undersides are brown. Flip over, stir in slices onions and smash mixture down a bit with a potato masher or the back of a spoon, so it fills the bottom of the pan.
  • With a spoon, make 4 "holes" in the potatoes, evenly spaced, about 2.5 inches in diameter. If the potatoes are sticking at all or if the pan looks too dry, add a bit of butter to each hole, or a spray of Pam.
  • Crack and drop an egg into each hole and cover pan. You may need to lower the heat a little depending on your stove. Cook covered until the egg whites are mostly set.
  • Remove lid and sprinkle egg whites with crumbled bacon and then with the cheese.
  • Replace cover and cook on low until cheese is melted and eggs are set. I sometimes throw a splash of water at the side of the pan to created steam right before I recover the pan and turn it to low.
  • If it seems as if the underside of the "casserole" is getting overdone, I remove the pan from the heat and leave the lid on for a few minutes, so the top will continue to cook.
