Number Of Ingredients 9

All-purpose flour, for dusting
1 store-bought pie crust
3 cups pecan halves
1 stick (8 tablespoons) unsalted butter
1 cup packed light brown sugar
1 cup dark corn syrup
2 vanilla beans, seeds scraped, or 2 teaspoons pure vanilla extract
4 large eggs, lightly beaten
Ice cream (your favorite flavor), for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • On a lightly floured work surface, roll the pie crust into a 13-inch round, about 1/4-inch thick. Fit the crust into a 9-inch pie plate and trim the edges, leaving a 1-inch overhang. Fold the overhang underneath itself and crimp the edges. Refrigerate for at least 30 minutes before filling.
  • Roughly chop 2 cups of the pecans by hand or in a food processor; set aside. In a medium saucepan, melt the butter over medium heat. Whisk in the brown sugar until smooth. Remove from the heat and stir in the corn syrup, vanilla bean seeds and eggs. Fold in the chopped pecans and pour into the prepared pie shell. Arrange the remaining 1 cup pecan halves around the edge of the pie to make a decorative top.
  • Bake until the center is set, 60 to 70 minutes. Let cool completely.
  • Slice and serve with a scoop of ice cream.

1 cup corn syrup
1 teaspoon vanilla extract
1 1/4 cups pecan halves
2/3 cup sugar
1/3 cup butter (melted)
1 pie crust

Steps:

  • Filling------------.
  • Beat eggs lightly with an electric mixer or fork until combined.
  • Stir in corn syrup, sugar, butter and vanilla extract.
  • Stir well.
  • Stir in pecan halves and pour filling into crust.
  • Bake in a 350 degree preheated oven, for 45 minutes or until knife comes out clean.
  • Tip: Cover edge of pie crust with aluminun foil for first 25 minutes of bake time, then remove for remaining 20 minutes, to prevent the crust from burning.

Make this traditional all-American Thanksgiving dessert for a celebratory dinner party. Our classic pecan pie recipe is best served with whipped cream or a scoop of ice cream

flour, for dusting
500g pack sweet shortcrust pastry
75g butter, softened
100g golden caster sugar
175g golden syrup
175g maple syrup
3 eggs, beaten
½ tsp vanilla extract
300g pecan halves
double cream, whipped, to serve

Steps:

  • On a lightly floured surface, roll out the pastry. Use the pastry to line a 23cm tart tin, keeping any off-cuts in case you need to fill any cracks after blind-baking. Prick the base of the pastry case with a fork and chill for 30 mins, or until firm.
  • Heat oven to 190C/170C fan/gas 5. Line the pastry case with baking parchment, fill with baking beans and bake for 15-20 mins until the sides are set. Remove the beans and parchment and return the tin to the oven for 5-10 mins until the pastry is golden and the base is set. Leave to cool.
  • Increase oven to 200C/190C fan/gas 6. Use an electric whisk to beat the butter and sugar together until light and fluffy. Keep the beaters going and pour in both of the syrups. Gradually add the eggs, ¼ tsp salt and the vanilla, then whisk until combined. Stir through the pecans, then pour the mixture into the tart case. Bake for 10 mins. Turn heat down to 160C/140C fan/gas 3 and continue baking for 30-35 mins (the pie should be golden brown and the filling should wobble a little in the centre when shaken). Leave to cool in the tin. You'll probably need to run a knife around the tin to lift out the pie. Serve with whipped cream or ice cream.

You won't need to make a pastry dough for these easy mini pecan pies. Fresh, store-bought croissants are used to line muffin cups and hold the sweet pecan pie filling. The croissants bake up into a crisp, flaky, buttery crust with a baklava-like texture. Perfect for your Thanksgiving dessert table! Serve topped with a scoop of vanilla ice cream or just pick them up and eat them like muffins.

¼ cup unsalted butter
1 cup light brown sugar
1 cup light corn syrup
2 teaspoons kosher salt
1 teaspoon pure vanilla extract
2 tablespoons bourbon whiskey
4 large eggs
3 cups pecan halves, coarsely chopped
2 tablespoons unsalted butter, softened
6 large croissants

Steps:

  • Combine butter, brown sugar, corn syrup, salt, vanilla, and bourbon whiskey in a saucepan over medium-high heat. Bring to a simmer, then whisk mixture and boil for 1 minute. Remove from the heat and let cool for 5 minutes.
  • Add eggs and whisk quickly to combine. Stir in pecans. Set aside until mixture thickens a bit and cools down, about 5 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Use the butter to generously grease a 12-cup muffin tin.
  • Cut each croissant in half, then turn the halves and slice open like you're making a sandwich. Place each piece into a prepared muffin cup and press it down and into the sides to fit and line the cup. Remove any pieces that stick up over the edge of the muffin cup and patch those in where needed to cover the sides.
  • Spoon the pecan filling evenly into the muffin cups, stirring between each spoonful to ensure you get an even amount of nuts and sauce. Use your fingers to press pecans into the cups and even out the tops so they don't burn. Clean up any syrup that dripped onto the pan.
  • Bake in the center of the preheated oven until golden brown, about 25 minutes, with a pan on the rack underneath to catch any drips.
  • Remove from the pan and let sit in the pan for 5 minutes. Turn each pie a bit, then lift out and place on a plate to continue cooling. Let cool completely before serving.

Some folks can't have Thanksgiving without pumpkin pie, but I love pumpkin pie AND Pecan Pie. I found this recipe in "Capitol Hill Cooks" by Linda Bauer and decided to share. I use my own pie crust but the recipe has Eleanor's pie crust recipe.

CRUST
1 1/2 c flour
1/2 tsp salt
1 tsp baking powder
1/2 c shortening
1/4 c ice water
FILLING
1/3 c butter
1 c brown sugar
3 or 4 eggs
1 c light corn syrup
1 c pecans, chopped
1 tsp vanilla
1/4 tsp salt
whole pecans for garnish
1 pt heavy cream, whipped

Steps:

  • 1. To make Crust: Measure 1 1/2 cups flour, sift with salt and baking powder. Divide shortening into two equal parts. Cut half into the flour mixture until it looks like cornmeal. Cut the remaining half of the shortening coarsely until the size of large green peas. Over the mixture,sprinkle 3 tablespoons ice water. Blend lightly. If the dough holds together, add no more liquid; if not, add additional water. Line pie pan with crust. (No pie pan size given)
  • 2. To make Filling: Cream 1/3 cup butter with 1 cup brown sugar. Beat in eggs, one at a time; stir in 1 cup light corn syrup, 1 cup coarsely chopped pecans, 1 teaspoon vanilla and 1/4 teaspoon salt.
  • 3. Fill the pie shell with the mixture. Preheat oven to 375 degrees and bake the pie for about 35 to 40 minutes.
  • 4. When the pie is set and has cooled, decorate with pecan halves. Garnish with whipped cream around the entire edge.
