GRILLED SQUID WITH LEMON, GARLIC AND CUMIN

Squid is a great sustainable fish that is easy to cook in seconds. Get your griddle as hot as possible to get those char marks without overcooking the squid.

4 squid weighing about 250g/9oz each, cleaned
1 lemon, zest only
good pinch cumin
pinch sea salt
olive oil
1 garlic clove, pasted
½ handful of fresh coriander, chopped

Steps:

  • Take the prepared squid, make a cut down one side of the body tube and open it. If you have had to use chunks of a large squid, then just lightly score the inside of the flesh, which will help tenderise it.
  • Mix the lemon zest, cumin, sea salt, garlic and olive oil and rub into the squid and leave to marinate for a minimum of two hours in the fridge.
  • Heat your grill plate until white patches start to appear.
  • Remove the squid from the marinade and grill either side for no more than two minutes to ensure that you get those lovely black grill lines across the flesh.
  • Push the squid down with the back of a fish slice and do the same with the tentacles.
  • Take the squid off the hot grill and serve on a plate with a sprinkling of sea salt, juice of the lemon and sprinkling of fresh chopped coriander. Serve with a mixed green salad.

OREGANO LEMON GRILLED CALAMARI

2 pounds calamari tubes and tentacles
2 tablespoons lemon zest (2 lemons)
1 lemon, juiced, plus more for serving
1 teaspoon minced garlic (1 clove)
6 tablespoons extra-virgin olive oil
1 teaspoon dried oregano
2 teaspoons salt
1 teaspoon pepper
Lemon juice, to finish
Chopped parsley, for garnish

Steps:

  • Slit the calamari tubes up 1 side and lightly score 1 side. Place the tubes and tentacles in a bowl and add the lemon zest, lemon juice, garlic, olive oil, oregano, salt and pepper and toss to combine. Refrigerate for 30 minutes.
  • Preheat a grill pan on high heat.
  • Remove the calamari from the refrigerator and place on the grill in batches for 1 1/2 to 2 minutes per side. Cut the tubes into strips and leave the tentacles whole. Before serving, sprinkle with lemon juice and chopped parsley.

1 pound squid ( cleaned )
1 tablespoon extra-virgin olive oil
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon fresh parsley (chopped)
Garnish: lemon wedges

Steps:

  • Gather the ingredients. Put the skewers in a container, cover with water, and soak for at least 30 minutes while you prepare the squid.
  • Prepare a high (500 F to 600 F) gas or charcoal grill fire. Rinse the squid under cold running water and pat dry with paper towels.
  • Cut the squid bodies lengthwise down one side and open flat.
  • Cut the tentacles in half if too large.
  • In a bowl, combine the olive oil, lemon juice, salt, and pepper.
  • Add the squid bodies and tentacles to the bowl, tossing to evenly coat.
  • Thread the squid bodies lengthwise onto skewers so they lie flat.
  • Thread the tentacles onto separate skewers.
  • Grill, turning once, just until opaque, about 2 minutes.
  • Remove the squid from skewers and pile them on a platter.
  • Sprinkle with parsley and serve with lemon wedges.

1/3 cup pitted Sicilian or other green olives
3 tablespoons salted capers, rinsed
3 tablespoons fresh lemon juice
2 tablespoons white wine vinegar
12 basil leaves
1 garlic clove, peeled
2 teaspoons extravirgin olive oil, divided
1/4 cup water
1 cup red bell pepper strips
1/2 cup thinly sliced red onion
1 pound cleaned skinless squid
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
Cooking spray

Steps:

  • Prepare grill. Combine first 6 ingredients and 1 teaspoon oil in a food processor, and process until smooth. With processor on, slowly add water through the food chute; process until smooth. Transfer mixture to a large bowl. Add bell pepper and onion, and set aside. Combine remaining 1 teaspoon oil and squid; toss well. Sprinkle salt and black pepper over squid. Place squid on grill rack coated with cooking spray; grill 3 minutes or until done, turning once. Cut squid into thin strips; add to olive mixture, tossing to coat. 500 g cleaned squid
1 tablespoon salt
1/2 cup coriander leaves
7 tablespoons fish sauce, dip
1 pinch pepper
2 garlic cloves, crushed
2 tablespoons peanut oil
1 teaspoon five-spice powder
1 teaspoon curry powder
1 tablespoon finely chopped lemongrass
1 tablespoon soy sauce
1 teaspoon sesame oil
1 tablespoon lime juice
1 teaspoon sugar

Steps:

  • Rub the squid with salt and rinse.
  • Slit and flatten the squid sac and make diagonal cuts on the inside surface.
  • Cut into bite-sized pieces.
  • Set aside in a bowl.
  • In another bowl, mix all the ingreduents, EXCEPT THE FIRST FOUR INGREDIENTS, making the marinade. Mix for thirty seconds.
  • Put the squid inside the bowl with the marinade and leave for 1 hour.
  • When one hour is finished, grill the squid over a charcoal grill until just tender (about three minutes each side).
  • Arrange on a serving platter and garnish with half-a-cup of coriander leaves.
  • Serve with fish sauce dip.
