1 tablespoon honey
1 tablespoon champagne vinegar
2 tablespoons extra-virgin olive oil
Kosher salt
3 plums, pitted and halved
1 tablespoon olive oil
Kosher salt
1 head radicchio, roughly chopped
2 Belgian endives, quartered and cored
1/3 cup crumbled feta cheese
1/4 cup salted roasted pistachios, chopped

Steps:

  • Preheat a grill or grill pan to medium high.
  • For the dressing: In a large bowl whisk together the honey, vinegar, extra-virgin olive oil and 1/4 teaspoon salt until emulsified. Set the bowl aside.
  • For the salad: Drizzle the plums with the olive oil and season with 1/4 teaspoon salt. Place the plums on the hot grill and cook until golden brown all over, about 1 minute per side. Remove from the grill and let cool slightly before cutting into wedges.
  • Add the radicchio and endive to the bowl with the dressing, season with 1/4 teaspoon salt and toss well to coat. Add the plums and toss gently. Sprinkle with the feta and pistachios.

4 plums, pitted, halved and each half cut in 3
2 tablespoons olive oil, divided
1/2 teaspoon kosher salt, divided
1 head bibb lettuce, torn into bite-sized pieces
1/4 cup chopped fresh basil leaves
1/4 cup chopped fresh mint leaves
1 tablespoon white balsamic vinegar
1/4 cup toasted pistachios, chopped
1/2 cup ricotta salata cheese shavings

Steps:

  • Preheat a grill pan over medium-high heat.
  • In a large bowl, toss together the plums, 1 tablespoon olive oil and 1/4 teaspoon salt. Place the plum wedges on the hot grill pan and grill until nice grill marks have formed, 1 to 2 minutes per side. Remove to a plate to cool slightly.
  • To the large bowl add the lettuce, basil, mint, white balsamic vinegar, remaining 1 tablespoon olive oil, and remaining 1/4 teaspoon salt. Using your hands, gently toss to coat the greens, being careful not to bruise the lettuce. Sprinkle the salad with the pistachios and gently place the plums on top. Sprinkle with the ricotta shavings and serve.

1 1/2 pounds cleaned squid, cut into rings
Juice of 1 lemon
2 tablespoons red-wine vinegar
3/4 pound potatoes
1 clove garlic, minced, with green part removed
1/4 cup chopped Italian parsley
1/2 cup extra-virgin olive oil
1/4 teaspoon hot pepper flakes
1 tablespoon red wine vinegar
Lemon juice to taste
1/2 cup mint leaves, chopped
Coarse salt and freshly ground pepper to taste
Whole mint leaves to garnish

Steps:

  • Poach squid in two quarts water with lemon juice and vinegar until tender (about 20 to 30 minutes). Cook potatoes until tender and cut them into one-inch cubes. Set aside.
  • Make dressing. Combine garlic and parsley and add olive oil, pepper flakes, vinegar and lemon juice. Shred mint leaves and add them to the mixture. Season to taste with salt and pepper and mix thoroughly.
  • Combine the squid and potatoes in a serving bowl and add dressing. Toss and let marinate for at least three hours in the refrigerator before serving.

2 teaspoons sambal oelek (Asian chili paste)
3 tablespoons plus 2 teaspoons nam pla (Asian fish sauce)
1 tablespoon plus 1 teaspoon safflower oil
1 pork tenderloin (about 14 ounces), trimmed
1/4 cup fresh lime juice (from 2 limes)
3 tablespoons sugar
1 tablespoon finely chopped fresh red Thai chile
5 ounces rice vermicelli
2 cucumbers, preferably Persian, very thinly sliced lengthwise, preferably on a mandoline
1/2 large carrot, peeled and cut into matchsticks
1 small shallot, very thinly sliced lengthwise (about 1/4 cup)
1/3 cup coarsely chopped fresh cilantro
1/3 cup coarsely chopped fresh mint
1/3 cup coarsely chopped fresh basil
Garnish: cilantro, mint, and basil sprigs

Steps:

  • Rub sambal oelek, 2 teaspoons nam pla, and 1 teaspoon oil over pork to coat completely. Let marinate in refrigerator, covered, for at least 1 hour.
  • Heat grill to high. Grill pork, rotating often, until charred on all sides and an instant-read thermometer inserted into the center reaches 140 degrees, about 20 minutes. Transfer to a platter, and tent with foil. Let rest for 10 minutes.
  • Meanwhile, whisk together remaining 3 tablespoons nam pla and tablespoon safflower oil, the lime juice, sugar, and chile in a large bowl until sugar dissolves.
  • Bring a large pot of water to a boil. Cook noodles according to package instructions until al dente. Drain, and rinse under cold water. Drain very well, and add to bowl with sauce.
  • Thinly slice pork on the bias, and add to bowl along with cucumbers, carrot, shallot, and chopped herbs. Toss well to coat, and arrange on a platter. Garnish with herb sprigs.

500 g squid, cleaned hoods only
1/2 teaspoon cracked black pepper
1 teaspoon sea salt
1/2 teaspoon lemon pepper seasoning
1 tablespoon peanut oil
1 lebanese cucumber, sliced thinly (about 130 grams)
2 green onions, sliced thinly (also known as spring onions)
250 g cherry tomatoes, halved
1/3 cup roasted peanuts, chopped coarsely
1/2 cup fresh mint leaves, loosely packed
1 tablespoon red wine vinegar
1 tablespoon peanut oil

Steps:

  • Cut squid hoods along one side and open out. Using a small sharp knife, score inside of hoods in a diagonal pattern, without cutting all the way through. This will allow the squid to curl during cooking. Cut each squid hood into eight pieces.
  • Sprinkle squid with combined pepper, salt and lemon pepper seasoning.
  • Heat oil in wok or large frying pan, stir-fry squid in batches until curled and just cooked through. Serve squid with cucumber salad.
  • Cucumber Salad: Combine cucumber, onion, tomato, nuts and mint in medium bowl. Add combined vinegar and oil, toss to combine.

It's a terrific salad to serve as a foil to spicy food, or to sprinkle on a taco as kind of green-ish version of pico de gallo.

1 cup flat-leaf parsley leaves
1 cup mint leaves
1 cup arugula leaves
2 cups mâche or other soft lettuce leaves
Kosher salt and freshly ground black pepper
1/2 teaspoon red-pepper flakes
3 tablespoons lime juice, or to taste
2 tablespoons olive oil, or to taste

Steps:

  • Wash the herbs and greens. Fill a large bowl or clean sink with cold water, and add the leaves. Swish them around to loosen dirt, then gently lift out and dry in a salad spinner or on clean kitchen towels. (You can do this up to a day ahead, refrigerating the dry leaves in sealed plastic bags or containers with a paper towel to absorb excess water.)
  • When ready to serve, whisk together the salt, pepper, red-pepper flakes, lime juice and olive oil in a small bowl, then check the seasonings. Put the leaves in a large bowl, drizzle the dressing over them and toss gently to coat. Serve immediately.
