SAUSAGE AND PEPPER PACKETS

Fold butterflied Italian sausage and bell peppers into a foil pouch and toss it on the grill for an easy meal.

Number Of Ingredients 7

1 pound sweet or hot Italian sausage links (4 to 6 links)
2 red, orange or green bell peppers, sliced (about 2 cups)
1 large onion, sliced (about 3 cups)
1 tablespoon olive oil
1/2 teaspoon dried Italian seasoning
Kosher salt and freshly ground black pepper
Chopped fresh flat-leaf parsley, for garnish

Steps:

  • Prepare a grill for medium-high heat. Lay two 18-inch-long sheets of heavy duty aluminum foil on a flat surface.
  • Cut a long lengthwise slit in each sausage about two-thirds of the way through and flatten gently so it opens like a book. Divide the sausages between the 2 pieces of foil. Toss the peppers and onions with the oil, oregano, 1 teaspoon salt and 1/2 teaspoon pepper and divide evenly between the foil pieces.
  • Fold and seal the edges of each packet. Grill 17 to 20 minutes; the sausages will be charred with grill marks on the bottom and the vegetables will be tender. Carefully open the packets, watching for the escaping steam. If necessary, throw the packets back on the grill, unsealed, for a few more minutes. Garnish with the parsley.

1/4 c. extra-virgin olive oil, divided

Steps:

  • Heat grill to high. Cut 4 sheets of foil about 12" long.
  • Grill sausages until charred, 3 minutes per side, then divide among foil. Top with peppers and onions and drizzle each with 1 tablespoon olive oil, then season with salt and pepper.
  • Fold foil packets crosswise over the sausage and peppers mixture to completely cover the food. Roll top and bottom edges to seal closed.
  • Grill until peppers and onions are tender and sausage is cooked, 13 to 15 minutes.
  • Garnish with parsley and serve.

1/2 pound smoked sausage, cut into 1/2-inch pieces
3 medium zucchini, sliced
3 medium tomatoes, sliced
1 medium green pepper, julienned
1/4 cup butter, melted
1 envelope onion soup mix
1 tablespoon brown sugar
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine all the ingredients. Divide between two pieces of double-layered heavy-duty foil (about 12-in. square). Fold foil around sausage mixture and seal tightly. , Grill, covered, over medium heat for 25-30 minutes or until the vegetables are tender. Open foil carefully to allow steam to escape.

2 Italian turkey sausage links
1 medium zucchini, cut into 1-inch slices
1 medium summer squash, cut into 1-inch slices
1/2 medium bell pepper, sliced
1/2 medium onion, cut into wedges
6 -10 okra pods, steam cut off, cut into 1 inch lengths (optional)
1/2 cup mushroom, quartered (optional)
4 -6 garlic cloves, peeled
2 tablespoons olive oil
2 teaspoons dried oregano
2 teaspoons dried parsley flakes
1 teaspoon paprika
salt and pepper

Steps:

  • Place the sausages in a small amount of water and bring to a boil; boil for 3 to 4 minutes or until they are no longer pink; remove from water and allow to cool slightly.
  • Mix together the vegetables, oil and seasonings.
  • Tear 2 sheets of foil (10x10inch), divide the prepared vegetables among the foil sheets, slice the sausages into 1 inch lengths and place on top.
  • Season each packet with salt and pepper to taste, bring foil up to center and fold over several times, sealing well; fold in ends and seal.
  • Preheat grill, place packets on grill and cook 10 minutes, turn over and cook an additional 10 minutes.
  • Enjoy!
