BREAKFAST QUESADILLAS RECIPE (3 EASY WAYS)
Breakfast quesadillas are the easiest one-pan breakfast and take just minutes to make. Change up the egg quesadillas with your favorite protein. Watch the video tutorial to see how we made them with breakfast sausage, bacon, and sliced deli ham.

- Heat a non-stick pan over medium heat. Cook Sausage or Bacon until browned and cooked through then remove to a plate. If using cooked ham, you can heat it up or just add it over the cheese in step 4. Wipe excess oil from skillet if needed. Reduce heat to low.
- In a measuring cup, add 2 eggs with a pinch of salt and pepper, or add seasoning to taste. Beat with a fork. Add beaten eggs and swirl to spread evenly over the bottom of the pan. Cook over low heat until When eggs are nearly cooked through (if you tilt the pan they shouldn't run).
- Sprinkle the top with 2 Tbsp shredded cheese then cover with a tortilla. The cheese will make the tortilla stick to the egg. Use a large spatula to get under the egg and quickly flip over.
- Sprinkle another 2 Tbsp of cheese or add cheese to taste. Sprinkle your cooked protein (sausage, bacon or ham) over half of the surface and fold the tortilla in half. Sautee on both sides until golden brown.* Remove from skillet and use a pizza cutter to cut quesadilla into wedges and serve warm.

BREAKFAST QUESO--NOT JUST FOR BREAKFAST!
Someone brought this to our neighborhood Bunko group one night, and we all loved it! I've made it several times since, but I use it as part of my brunch menu when we have overnight guests. I serve it with warm flour tortillas and tortilla chips. If you like spicy get the hotter type of Rotel. YUM!!

Steps:
- Brown the sausage chopping it into tiny pieces as it cooks. While the sausage is cooking, cut the cheese bricks into cubes.
- Once the sausage is browned and crumbly, toss in the cheese, and pour in the rotel.
- Cook and stir until cheese is melted and mixture is bubbly. Serve warm with flour tortillas and/or tostada chips!
- *Reduce the fat/calories by using less sausage and reduced or fat free cream cheese.

BREAKFAST QUESADILLA

- Cook bacon in frying pan on medium-high until lightly crisp, remove and chop. Open can of beans drain half of the liquid then put into pan. Add about 2 Tbs. of the rendered bacon fat to the beans and cook on medium low, begin mashing the beans with a potato masher or other utensil like a slotted spoon. Once mashed to desired consistency mix in chopped bacon then salt and pepper to taste and remove from heat. (Make sure not to over salt due to the already saltiness of the bacon)
- Warm 4-8 tortillas by placing them in between two salad size plates face to face (this creates a tortilla warmer effect and will keep them warm without drying them out) and microwave for about 30seconds.
- Meanwhile begin frying eggs in the remaining rendered bacon fat until done sunny side up or to your desired style. (I like my yolk done easy)
- Spread refried beans onto individual tortillas then top with slices of queso fresco then plate, return to microwave for 15-20 seconds on high or place flat in a wide pan on medium heat until warm. Once warm place one egg on top of each tortilla with bean and cheese, then top with about 3-4 Tbs. fruit salsa, top that with 3-4 slices of avocado and sprinkle a pinch of chopped cilantro.

- Combine flour and salt; cut in butter until crumbly. Gradually add 3-5 tablespoons ice water, tossing with a fork until dough holds together when pressed. Wrap and refrigerate 1 hour., Preheat oven to 450°. On a lightly floured surface, roll dough to an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of heavy-duty foil. Bake 5 minutes; remove foil. Bake 5 minutes longer; remove from oven and cool on a wire rack. Reduce heat to 375°., Sprinkle bacon, cheeses and onion over crust. Beat remaining ingredients until blended; pour over top. Bake until a knife inserted in center comes out clean, 30-35 minutes. Let stand 10 minutes before cutting.

- To prepare the eggs: In a bowl, whisk the eggs with the hot sauce and salt until they are well blended. Add the beans and set aside.
- To cook the eggs: Melt the butter in a medium-sized skillet (either well-seasoned cast iron or nonstick) over medium heat until it’s bubbling. Pour in the egg mixture and cook, stirring often, until the eggs are just set, about 1 to 3 minutes.
