salmon fillet
1 oz fresh basil leaves
1 oz mint leaves
7 oz olive oil
1 egg yolk
1 teaspoon mustard
2 tablespoons cream
2 teaspoons lemon zest
juice of one lemon
Salt & pepper

Steps:

  • Instructions:Boil a pot of water and add the mint leaves and basil leaves to infuse for 15 seconds. Remove and drain. Remove excess water on the leaves. Put the mint leaves and basil with 7 oz. olive oil and purée. Marinate for 15 minutes. In a bowl, combine the egg yolk, mustard, salt, and pepper. Whisk until you get a smooth sauce. Stir the mint and basil-flavored olive oil into this mixture gradually until the preparation gets thick and creamy. Whisk well with the lemon zest, lemon juice and cream. Place this sauce in the refrigerator. Brush salmon fillets with oil. Grill on medium heat for 5-7 minutes on each side, depending on thickness. Cover fish with mint & basil sauce to serve. Enjoy!

1/3 -1/2 cup extra virgin olive oil (I begin with 1/3 cup and then add as needed)
1 cup fresh peas that have been blanched, or frozen peas that have been thawed
1/2 cup fresh mint leaves
1/4 cup fresh basil leaves
1-2 cloves garlic
Pinch of crushed red pepper flakes
1/4 cup chopped toasted hazelnuts or toasted pine nuts if you prefer
1/4 cup fresh grated parmesan cheese
Squeeze of lemon
Salt and pepper to taste

Steps:

  • Place the olive oil, peas, mint, basil, garlic, red pepper flakes, nuts and cheese into a food processor. Pulse until the pesto is smooth.
  • Add the lemon and pulse once more and then season to taste with salt and pepper. Serve with grilled or roasted salmon, lamb or chicken.
  • This is also tasty on crostini with shaved, aged provolone and grilled asparagus tips.

6 (1/4-inch-thick) lime slices
1/4 cup plus 1 1/2 tablespoons extra-virgin olive oil
6 (1-inch-thick) pieces salmon fillet with skin (6 oz each)
Fine sea salt to taste
1 cup loosely packed fresh basil, thinly sliced
3/4 cup loosely packed fresh mint, thinly sliced

Steps:

  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 3 to 4 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes.
  • Brush both sides of citrus slices with 1/2 tablespoon oil, then brush fish all over with 1 tablespoon oil and season with sea salt and pepper.
  • Grill citrus slices, covered only if using a gas grill, on lightly oiled grill rack, turning over once, until grill marks appear, 2 to 3 minutes total. Transfer citrus slices to a plate, then, if using a gas grill, reduce heat to moderate. Grill fish, skin sides down, covered only if using a gas grill, until skin is crisp, 3 to 4 minutes. Turn each piece of fish onto 1 side and grill 1 minute. Turn over onto opposite side and grill until fish is just cooked through, 2 to 3 minutes more. Transfer fish to a platter and keep warm, covered loosely with foil.
  • Heat basil and mint in remaining 1/4 cup oil in a heavy skillet over moderate heat, stirring, until herbs are just wilted, about 1 minute.
  • Serve fish with herbed oil and top with citrus slices.

½ cup white vinegar
