MEDITERRANEAN SALMON KABOBS

Best grilled salmon kabobs, prepared Mediterranean-style with a garlicy, zesty marinade, zucchini and onions! Serve these with your favorite Mediterranean salads and sides and a little Tahini sauce or Tzatziki (lots of ideas up in the post).

Number Of Ingredients 12

1.5 lb Salmon fillet, cut into cubes approximately 1-inch to 1-1/2 inch or so in size
1 zucchini, sliced into rounds
1 small red onion, cut into squares
Kosher salt and pepper
1/4 cup to 1/3 cup Extra Virgin Olive Oil (I used Early Harvest Greek olive oil)
1 lemon, zested and juiced
3 garlic cloves, minced
2 tsp chopped fresh thyme leaves
2 tsp dry oregano
1 tsp ground cumin
1 tsp mild chili pepper (I used this Aleppo pepper )
1/2 tsp ground coriander

Steps:

  • In a small bowl, whisk together the marinade ingredients of extra virgin olive oil, lemon juice and zest, garlic, oregano, thyme, cumin, Aleppo pepper and coriander.
  • Place salmon pieces, zucchini and onions in a large mixing bowl. Season with kosher salt and pepper, and toss briefly. Now pour the marinade over the salmon and toss again to make sure the salmon is well coated with the marinade. Let the fish marinate for about 15 to 20 minutes (see Cook's Tip)
  • Beginning with salmon, thread salmon, zucchini and onions through skewers (if using wooden skewers, be sure to have soaked them for 30 minutes before using.)
  • Heat an outdoor grill (indoor grilling instructions in notes). Arrange salmon skewers on top and cover the grill. Grill salmon kabobs for 6 to 8 minute, covered, or until the fish is opaque throughout, turning once midway through cooking (using tongs is the best way to turn the salmon skewers)

These grilled salmon kabobs are soaked in in a unique marinade blend that's full of flavor and skewered with lemon. If you can't cook them on the grill, they can also be baked in the oven. Either way, you'll get delicious, perfectly seasoned salmon that pairs perfectly with your favorite sides.

1 1/2 - 2 pounds salmon, cubed
2 lemons, thinly sliced
3 tablespoons lemon juice
2 tablespoons olive oil
1 tablespoon water
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon Dijon
2 teaspoons sesame seeds
2 teaspoon capers
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon coarse salt
1/4 teaspoon crushed red pepper flakes

Steps:

  • Add the marinade ingredients in a large mixing bowl. Whisk to combine.
  • Place the cubed salmon into the marinade and cover the bowl. Refrigerate for at least 30 minutes to allow the salmon to marinate. While the salmon marinates, soak the wooden skewers.
  • Assemble the skewers with a lemon slice between each of the salmon cubes, about 5 salmon pieces per kabob.
  • Preheat grill to high heat, and add a grill grate or piece of heavy duty aluminum foil.
  • Grill salmon for 10 minutes, turning once to evenly brown both sides.

These Grilled Salmon Kabobs with Greek Marinade are loaded with lemon and garlic flavor!

Number Of Ingredients 18

2 salmon fillets
1 large zucchini, sliced
1/2 red onion, sliced
For the Marinade:
1/4 cup Oil
1/4 cup Greek Yogurt
2 tablespoons minced garlic
1 tablespoons brown sugar Monkfruit sweetener
1/2 lemon, juiced
1 tablespoon fresh dill
1 tablespoon Oregano
1 teaspoon salt
1 teaspoon pepper
Toss the veggies in:
1 tablespoon Oil
1 tablespoon fresh dill
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat a grill to high heat (400 degrees)
  • Slice the salmon, zucchini and red onion into cubes wide enough that they will securely hold on the skewer. Set aside.
  • In a medium size mixing bowl combine all of the marinade ingredients and whisk until combined.
  • Add the salmon to the marinade and chill for 30 minutes.
  • Toss the zucchini and red onion in the corn oil, dill, salt and pepper.
  • If using wooden skewers soak in water for 10 minutes. If using metal skewers lightly spray with cooking oil so the ingredients do not stick.
  • Remove the salmon from marinade and thread the salmon, zucchini and red onion on the skewers.
  • Grill 4 minutes on each side.
  • When flipping or removing the skewers use tongs to grab the skewer itself or a slice of zucchini. If you try to move the skewers by grabbing the salmon it will flake off.
  • Enjoy with extra lemon, dill and feta if desired!

500 g beef rump, trimmed and cut into 2 . 5 cm (1 inch cubes)
8 teaspoons olive oil (2 tablespoons)
1/4 cup red wine
1 tablespoon lemon juice (4 teaspoons)
1 lemon, zest of one lemon
1 small onion, finely chopped
2 garlic cloves, crushed
1 tablespoon dried oregano (4 teaspoons)
2 bay leaves
1 red onion, cut into six wedges and separated
1 red capsicum, cut into 2 . 5cm (bell pepper)
1 green capsicum, cut into 2 . 5 cm pieces
16 button mushrooms, halved if large

Steps:

  • soak 8 bamboo skewers in water for 30 minutes, or alternatively you can use metal skewers.
  • Combine all of the marinade ingredients in a ceramic or stainless steel bowl.
  • Marinate the meat for 1 to 2 hours.
  • Preheat the barbeque grill plate to medium high (or you can use a grill pan indoors or large banquet sized skillet).
  • Thread marinated meat , alternating with the onion, capsicums and mushrooms onto the skewers.
  • xrizzle some extra olive oil over the kebabs and barbecue for 2-3 minutes each side, or done to your liking.

1 (8 ounce) package small whole mushrooms
1/4 cup fresh lemon juice

1 teaspoon salt
2 tablespoons extra virgin olive oil
2 garlic cloves, minced

Steps:

  • Cut chicken breast into 1 inch pieces.
  • Place chicken and mushrooms in zip-top plastic bag.
  • In a bowl, combine lemon juice, oregano, mint, salt, oil and garlic; mix well.

3/4 cup olive oil (or use vegetable oil)
4 tablespoons fresh lemon juice
1 1/2 tablespoons Worcestershire sauce

2 teaspoons dried red pepper flakes (or to taste)
1 teaspoon black pepper
