Two 6-ounce salmon fillets
Kosher salt and freshly ground black pepper
1/4 cup barbecue sauce, homemade or your favorite store-bought
2 ears corn
2 tablespoons olive oil
3 cups watercress
3 cups chopped romaine
1 cup grape tomatoes, sliced in half
1 cup croutons, store-bought or homemade
5 slices cooked bacon, chopped
2 hard-boiled eggs, chopped
1 avocado, cut into cubes
Ranch Dressing, recipe follows
1 cup mayonnaise
1/2 cup plain yogurt
1/4 cup buttermilk
2 tablespoons minced fresh chives
2 tablespoons minced fresh flat-leaf parsley
1/4 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Preheat a grill pan over medium heat.
  • Put the salmon fillets on the prepared baking sheet, season with salt and pepper and brush with the barbecue sauce. Bake until firm and the thickest part flakes through, 12 to 15 minutes. Let rest for 5 minutes, then flake with a fork.
  • Meanwhile, brush the corn with the olive oil and season with salt. Put on the grill pan and grill, turning every 2 minutes, until grill-marked and tender on all sides, about 8 minutes total. Let cool, then slice the kernels off the cob.
  • Add the watercress and romaine to a large serving bowl. Top with the salmon flakes, corn, tomatoes, croutons, bacon, egg and avocado. Pour on about 1/3 cup of the Ranch Dressing, toss and serve.
  • Add the mayonnaise, yogurt, buttermilk, chives, parsley, garlic powder, salt and pepper to a medium bowl and mix to combine. Refrigerate until ready to serve.

4 slices turkey bacon, cooked until crisp and crumbled

2 tablespoons drained capers
2 hard boiled eggs, sliced
1/4 cup crumbled gorgonzola
1/2 cup sour cream

1 Cup Cherry Tomatoes, halved

1 Clove Garlic, finely minced

Steps:

  • Preheat the grill (or a grill pan) and drizzle the salmon filet and zucchini rounds with the olive oil and season with salt and pepper. Cook the zucchini until grill marks appear and then flip and repeat on the other side. This should only take a few minutes. Grill the salmon for about 5-7 per side or until opaque throughout and it flakes easily with a fork. Once the salmon is done, flake it into bite-sized pieces and set it aside along with the zucchini to cool slightly while you prepare the rest of the salad. Divide the arugula equally among two bowls and then top with bacon, eggs, tomatoes, zucchini, and salmon. To make the dressing whisk together the mayo, vinegar, garlic, parsley, and chives in a small bowl. Serve the salad drizzled with the dressing and enjoy!

2 tablespoons olive oil
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Salt and pepper for seasoning

2 medium tomatoes (diced)
2 medium ripe avocados (pitted and diced)
1 medium cucumber (thinly sliced)
1/3 cup crumbled feta cheese

olive oil flavored cooking spray
3/4 teaspoon kosher salt, divided
3/4 teaspoon fresh ground black pepper, divided
1 pint cherry tomatoes, halved
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
3 tablespoons thinly sliced fresh basil, plus
whole basil sprig (to garnish) (optional)
4 (4 ounce) salmon fillets

Steps:

  • Soak corn in a large bowl of cold water for 20 minutes. Remove and pat dry.
  • Coat corn on all sides with cooking spray, and season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Grill about 15 minutes or until charred on all sides.
  • Remove cobs from grill, and cool slightly. Slice the kernels from the cobs, and transfer to a medium bowl.

Steps:

  • Pre-heat grill.
  • In a small bowl, combine 6 tbsp oil, red wine vinegar, Dijon, honey, and garlic. Season with salt and pepper and set aside for later.
  • Toss lettuce halves with 2 tsp oil, salt, and pepper. Toss the tomato halves with 2 tsp oil, salt, and pepper. Split the avocados, remove the seeds, and keep them in the skins. Season the inside of the avocados with oil, salt, and pepper. Toss the corn with 2 tsp oil, salt, and pepper.
  • Put the smokies and corn on the grill, making sure to char them outside and cooking them all the way. Now on high heat, char the inside of the lettuce, tomatoes, and avocados making sure to keep them mostly uncooked. You just want the charred flavour.
  • Remove all the ingredients from the grill. Slice the smokies into half-moons, dice the tomato, remove the corn from the cob, and slice the avocados. Now it's time to assemble.
  • Place the charred lettuce on a large platter, add a row of tomatoes, then the hardboiled eggs, followed by the sliced smokies, then the Cheddar, then a row of avocados, and finish it with the corn. Drizzle with the red wine vinaigrette and serve with grilled tortillas.

2 lbs salmon fillets, cut into 4 ",slices
1 cup celery, diced small
1/2 cup red onion, diced small
2 tablespoons capers, drained and rinsed
2 tablespoons raspberry vinegar
2 tablespoons extra virgin olive oil
1/2 teaspoon sea salt (or kosher salt)
1/2 teaspoon fresh ground pepper
1 tablespoon fresh dill, minced

Steps:

  • Rub the salmon filets with a little olive oil so they don't stick to the grill and salt and pepper them lightly.
  • Cook the filets on a hot grill for about 5- 6 min.
  • per side.
  • They should still be rare in the middle.
  • Cover with plastic wrap and chill for several hours until cold and firm.
  • Remove from frig and remove any skin.
  • Break filets up into small chunks and put into a bowl.
  • If there is any juice on the plate they chilled on, dump it into the bowl with salmon.
  • Add the celery, onion, capers and dill.
  • Mix the olive oil, vinegar salt and pepper and pour over salmon.
  • Mix well and serve cold or at room temp.

(The idea of blueberries mixed in a corn salad intrigued me, and love all the ingredients so I made this. DS and I liked it a lot, not DH-think the cumin might have been too much for him so if you have a dislike for cumin you should reduce it.) Priscilla was inspired to create this recipe b/c of "her father's post-heart attack switch to a healthier diet. She created this dish with some of her favorite healthful foods. Dad? He just turned 90." Love that story.:) Feel free to sub in green onion tops for the chives. After reading Chef#1227141 review I agree a bit of paprika on the salmon would be even better! I served with brown rice but a noodle thing would be good too. You could make the corn salad a day ahead, I did and it kept very well but I think it tastes better at room temperature.

  • For the corn salad: In bowl combine corn, sweet pepper, chives, basil, maple syrup, lemon juice, and the 1/4 teaspoon of salt.
  • For the salmon seasoning mixture: In small bowl, combine lemon peel, cumin, the 1/2 teaspoon salt, and the black pepper.
  • Lightly coat both sides of salmon with nonstick spray.
