ROASTED SHRIMP COCKTAIL WITH GREEN GODDESS DRESSING

- Preheat the oven to 400 degrees F.
- Peel and devein the shrimp, leaving the tails on. Place them on a sheet pan with the olive oil, salt, and pepper and spread them in one layer. Roast for 8 to 10 minutes, just until pink and firm and cooked through. Set aside to cool.
- For the dressing, place the mayonnaise, scallions, basil, lemon juice, garlic, anchovy paste, salt, and pepper in a blender and blend until smooth. Add the sour cream and process just until blended. Use immediately or refrigerate until ready to use. Serve as a dip for the shrimp with the celery sticks.
GRILLED ROMAINE
Steps:
- Preheat a grill to medium high. Drizzle the lettuce with the olive oil and season with salt and pepper.
- Place the lettuce cut-side down on the grill and cook until grill marks appear, about 2 minutes. Rotate 45 degrees and cook until crosshatch marks appear, about 2 more minutes. Transfer to a platter, drizzle with the lemon juice and serve immediately.

- Peel the oranges with a paring knife, removing any white pith. Slice between the membranes to remove the segments; set aside. Squeeze out the excess juice from the membranes into a blender. Add the herbs, scallions and coconut cream and puree until smooth. Add 1 tablespoon olive oil, 1/2 teaspoon salt and a few grinds of pepper and puree until creamy. Set the dressing aside.
- Season the shrimp generously with salt and pepper. Heat a medium skillet over medium-high heat. Add 1 tablespoon olive oil, then add half the shrimp and cook, turning once, until opaque, 5 to 6 minutes. Remove to a large bowl. Repeat with the remaining 1 tablespoon olive oil and shrimp.
- Add the romaine, avocado, cashews, radishes and orange segments to the bowl with the shrimp; toss. Drizzle with the dressing and season with salt and pepper.

Green goddess has been around for about a hundred years, but it's arguably more popular now than it has ever been: Restaurants are drizzling the dressing on anything and everything, and Trader Joe's fans love it so much, the grocery chain now sells a seasoning mix, dip and even a green goddess - flavored gouda. TikTokers have had their way with green goddess too: The founder of Baked by Melissa, Melissa Ben-Ishay, posted a green goddess chopped salad that has racked up 21 million views and counting. These days, the name green goddess can apply to any variety of herby salad dressing, but the original recipe - invented at San Francisco's Palace Hotel in 1923 - included chives, anchovies, scallions and parsley. Here's our take on the dressing.

- Preheat oven to 225 degrees F (110 degrees C). Mix olive oil, white sugar, rosemary, thyme, salt, and pepper in a large resealable plastic bag. Place tomatoes in the bag, seal, and shake to coat. Arrange coated tomato halves cut side up on a baking sheet. Bake tomatoes 2 1/2 hours in the preheated oven. Remove from heat, and let cool.
- In a blender or food processor, finely chop the shallots. Add vinegar and brown sugar, and process until smooth. Slowly add 1 3/4 cups oil, processing frequently, so as to thicken the mixture.
- Preheat grill for high heat. Brush romaine hearts with 1 tablespoon olive oil, and season with salt and pepper.
- Place romaine hearts on the preheated grill. Cook 5 to 10 minutes, turning frequently, until slightly charred but not heated all the way through. Serve warm on salad plates surrounded by tomato pieces and drizzled with the shallot dressing.

- Preheat grill to very high (about 550°F). Place scallions and parsley on oiled grates; grill, uncovered, turning often, until just wilted and lightly charred, 30 seconds to 2 minutes. Remove from grill. Remove and discard parsley stems. Place scallions, parsley leaves, basil, mayonnaise, lemon juice, anchovies, garlic, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper in a food processor; process until smooth, about 15 seconds. Refrigerate until chilled, about 30 minutes.
- Meanwhile, brush corn evenly with 1 tablespoon oil; sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper. Toss together shrimp, 2 tablespoons oil, remaining 1 teaspoon salt, and remaining 1/2 teaspoon pepper in a large bowl. Place corn and shrimp on oiled grates; grill, uncovered, turning occasionally, until corn is lightly charred and shrimp is just cooked through, 2 to 3 minutes for shrimp and 6 to 8 minutes for corn. Remove from grill; let cool slightly, about 5 minutes. Cut corn kernels off cobs; discard cobs. Set corn kernels and shrimp aside.
- Brush cut sides of lettuces with remaining 2 tablespoons oil. Place lettuces, cut sides down, on oiled grates; grill, uncovered, until grill marks appear but lettuce is still mostly crisp and not yet wilted, 2 to 3 minutes. Remove from grill; let cool slightly. Chop into 1 1/2-inch pieces.
- Place corn kernels, shrimp, lettuces, almonds, and 1 cup dressing in a large bowl; toss until evenly coated. Add avocado; season with salt and pepper to taste, and gently toss to combine. Serve with remaining dressing.
