GRILLED RIBEYE STEAK KABOBS
Grilled Ribeye Steak Kabobs are a delicious meal, perfect for an easy dinner for two, or feeding a crowd at a summer BBQ! Ribeye steaks are skewered with fresh, colorful veggies, creating a bright and beautiful skewer!

Steps:
- Add the cubed pieces of ribeye to a large plastic bag with ¼ cup of the chimichurri sauce.
- Toss to coat and place in the refrigerator for at least 30 minutes, or up to 4 hours, to marinate.
- Skewer the pieces of steak with the onion, bell pepper and cherry tomatoes onto 8 skewers.
- Heat a grill over medium high heat (400-450°F).
- Place the skewers on the grill for 4-5 minutes per side, for medium rare.
- Remove the skewers from the grill, place on a large cutting board, tent with foil and rest for 5 minutes.
- After 5 minutes, drizzle the remaining ¼ cup chimichurri sauce over the skewers and serve.

- In a shallow dish, combine soy sauce, onions, brown sugar, garlic, ginger and pepper; add the steaks and turn to coat. Cover and refrigerate 8 hours or overnight., Drain and discard marinade. Grill steaks, covered, over medium heat 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).

- Place potatoes in 2-quart microwave-safe dish. Cover and microwave on HIGH 2 to 3 minutes or until just tender, stirring once. Cool slightly.

- In a medium bowl, whisk together the oil, soy sauce, red wine vinegar, Worcestershire sauce, lemon juice, garlic, brown sugar, paprika, onion powder, oregano, salt, and pepper.
- Place the steak in the bowl with the marinade or place both in a large Ziploc bag, making sure the meat is covered in the marinade. Chill in the refrigerator for at least one hour so the meat can tenderize, can marinate for up to 8 hours.
