GRILLED POTATOES IN FOIL
Grilled potatoes in foil are a great side dish to any grilled meat. Easy to fix and cooks while your meat does.

- Preheat an outdoor grill for high heat; close cover. Lay out three 18-inch long pieces of aluminum foil on a work surface, dull side facing up.
- Smear 1/2 tablespoon butter in the middle of the first piece of foil. Add 1/3 of the potato slices, onion, and bell pepper. Sprinkle with 1/3 of the garlic powder; season with salt and pepper. Fold up the edges of the foil over the vegetables to create an almost leak-proof packet, making sure to seal the edges. Repeat with last 2 pieces of foil and the remaining ingredients to make 2 more packets.
- Reduce the heat of the grill to medium. Place foil packets on the grate; cook until potatoes are tender, 20 to 30 minutes.

- After potatoes are washed and cut, combine the ingredients for the ranch mix.
- Use just enough of the mix to thoroughly coat the potatoes and stir together in a large bowl.
- Spoon potatoes out onto individual aluminum foil squares and sprinkle with desired toppings. We did cheddar and bacon for one, and gorgonzola cheese and bacon for the other.
- Wrap the potatoes up in the foil so they are completely covered. We usually wrap each one in two pieces of foil.
- Bake, grill, or cook in a fire pit. It is ready to eat when you peel back some of the foil and potatoes are fork tender and break apart easily.

GRILLED RANCH POTATO FOIL PACKETS
These foil packet grilled ranch potatoes are the perfect side for your BBQ this summer. So simple to make and perfectly cheesy, they are a sure fire hit!

- In a large ziplock bag, combine the ranch dressing packet and olive oil. Shake to combine.
- Add the potatoes to the mixture and close securely before shaking.
- Cut 4 large pieces of tinfoil and divide the potatoes evenly between the four.
- Top each potato packet with a fourth of the cheese.
- Pull up the long ends and meet in the middle, then fold down. Fold the ends closed tightly.
- Preheat the grill to 350° on medium heat.
- Place the foil packets, seam side down. Grill for 10 minutes, then flip over.
- Grill an additional 7 to 10 minutes.
- Remove and carefully open and enjoy.
- Top with chives, sour cream, bacon, ham, salsa, or broccoli.

- Preheat grill.
- Place quartered potatoes in a microwave-safe bowl and microwave on high for up to 5 minutes, stirring once. Let potatoes cool.
- Combine the sour cream, ranch dressing mix, pepper, and salt.
- Thread potatoes onto skewers. Brush sour cream mixture on all surfaces of the potatoes.
- Grill for about 5-6 minutes per side, turning and basting with more sour cream mixture as needed, until the potatoes are crispy and done.
