PORK TENDERLOIN MARINATED IN GARLIC, LEMON AND OREGANO WITH GREEK SALAD

Steps:
- Combine the garlic, zest, juice, oregano and oil in blender and blend until smooth. Put the pork in a baking dish, add the marinade and turn to coat. Cover and refrigerate for at least 1 hour and up to 4 hours.
- Heat a grill to high. Remove the pork from marinade and season with salt and pepper, to taste. Grill until golden brown on all sides and cooked to medium doneness. Brush the radicchio and tomatoes with oil and grill until lightly charred. Remove the pork from the grill to a cutting board and loosely tent with foil. Let rest 10 minutes before slicing. Remove the radicchio and tomatoes from grill and set aside to cool slightly.
- Whisk together vinegar, mustard, anchovy paste and a touch of honey in a medium bowl. Slowly whisk in the olive oil until emulsified. Add the radicchio, tomatoes, arugula, cucumber, olives, and capers and toss to combine. Transfer to a platter and top with feta and pork slices. Garnish with fresh oregano and serve.

- Combine all ingredients except the tenderloin and grind in a spice grinder. Cover the tenderloin with the rub and marinate for 30 minutes.

- Preheat the oven to 450 degrees F.
- In separate bowl mix dry ingredients such as garlic powder, oregano, cumin, coriander, thyme and salt. Stir mixture with a fork until all the ingredients are well combined and they form a seasoning. This will be used as a rub to ensure the pork is well seasoned throughout. Sprinkle the rub over the tenderloin with a dry hand, then rub the pork with the seasoning over both sides of the meat, pressing gently so the seasoning adheres well to the tenderloin.
- In a large skillet over medium-high heat, add the olive oil and heat. Add the minced garlic and saute, stirring, for 1 minute. Put tenderloin in the pan and cook for about 10 minutes, searing each side using tongs to turn the meat. Transfer meat to a roasting pan and bake for 20 minutes. Slice and serve.
GRILLED PORK TENDERLOIN WITH HAZELNUT ROMESCO AND FRESH OREGANO VINAIGRETTE
Steps:
- Preheat grill. Rub pork with oil and season with salt and pepper. Place on the grill and grill until golden brown, turn over and continue grilling to desired doneness. Let rest and cut on the bias. Serve with a dollop of Hazelnut Romesco and drizzle with Fresh Oregano Vinaigrette.
- Heat the olive oil in a large saute pan over high heat until smoking. Separately saute the garlic, bell pepper, tomatoes, chiles, and bread cubes until lightly browned, about 2 minutes each. Remove each ingredient with a slotted spoon as it is done. Deglaze the pan with the wine.
- Place all the sauteed ingredients and the deglazing liquid into a food processor and blend until smooth. Add the hazelnuts and process until finely chopped. Add the honey and season to taste with salt and pepper.
- Whisk together vinegar, shallot, mustard, honey, and oregano in a small bowl. Season with salt and pepper, to taste. Slowly whisk in olive oil until emulsified.
GRILLED PORK TENDERLOIN WITH OREGANO SALT RUB
Steps:
- Heat grill to 400°F.
- Place pork tenderloin on a sheet pan.
- Mix salt and oregano in a small bowl.
- Rub avocado or grapeseed oil onto pork tenderloin, followed by the oregano salt mixture.
- Grill pork tenderloin for about 18 minutes, flipping it halfway through the cooking time. Remove the pork from the grill when it reaches an internal temperature of 145°F, as measured by a meat thermometer.
- Serve with a lemony, garlicky hummus, or tomato jam for some real pizza vibes.
GRILLED PORK TENDERLOIN WITH ITALIAN RUB
You will want to grill this over indirect heat. What I do is light one side of my grill and then place the tenderloins on the other side. You do not want the flame directly under the meat.

- Finely chop together rosemary and other spices.
- Rub into surface of pork tenderloins.
- Place tenderloins on grill over medium indirect heat.
- Grill for 25-35 minutes or until internal temperature of the meat reaches 155 degrees.
- Let the tenderloins rest for about 5 minutes; slice and serve!

I came across this recipe in one of my cookbooks and was describing it to one of my cyber friends so she asked that I post it for future reference. I haven't made this recipe, but I have to say it does sound good. The cook time would depend on how long you decide to marinate it.

- Rub the tenderloins with the seasoning mix and coat evenly.
- Refrigerate at least 30 minutes or up to 3 hours for stronger flavor.
