I grew up with this gravy! Everyone has heard of sausage gravy. Well, it don't compare to this! After frying your bacon for breakfast, use the bacon dripping to make true Kentucky biscuit gravy. Fattening? Oh yeah, you better believe it! Worth it? Yes! Pour over biscuits and serve with crispy bacon and eggs in any style.

¼ cup bacon drippings
¼ cup all-purpose flour
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
4 cups milk, divided

Steps:

  • Heat bacon drippings in a skillet over medium heat; whisk flour into drippings until smooth. Reduce heat to low and cook the flour mixture until it turns a caramel brown color, stirring constantly, about 15 minutes. Be careful, the roux burns easily. Stir in salt and black pepper.
  • Whisk 1/2 cup milk into the roux until thoroughly blended. Continue whisking milk into the gravy, 1/2 cup at a time, whisking in each amount of milk completely before adding more. Bring gravy to a simmer and whisk constantly until thick, smooth, and bubbling.

Make this thick, delicious Southern Bacon Gravy to pour over hot biscuits. Biscuits and Gravy... yum!

2 cups milk
2 Tablespoons flour
1/2 teaspoon ground black pepper
3/4 teaspoon salt
6 pieces bacon (, cooked until crisp (RESERVE 2 Tablespoons bacon grease in skillet))
1-2 Tablespoons cold butter
8 warm biscuits ((pre-cooked, or bake them while cooking bacon))

Steps:

  • Cook bacon in large skillet until crispy. Remove cooked bacon to paper towels to absorb grease. When cool, crumble bacon into small pieces. Set aside.
  • Do NOT clean skillet. Leave 2 Tablespoons bacon grease in skillet. Discard the rest.
  • In separate bowl or container, whisk together milk, flour, salt and pepper, until lump-free. Pour the milk/flour mixture into skillet with remaining bacon grease. Add crumbled bacon pieces. Heat mixture on medium (whisking/stirring constantly) until it comes to a boil; reduce heat a bit, and continue cooking and stirring, until gravy has thickened (5-6 minutes). Give it a taste test.
  • Add additional salt and pepper, to taste (I ALWAYS add more). Once gravy has thickened, add 1-2 Tablespoons cold butter. Stir until butter is melted, incorporated into gravy, and mixture is heated through.
  • Slice warm biscuits in half horizontally. Place biscuit halves onto serving plate. Spoon hot gravy over each half. Serve and enjoy!

4 thick slices bacon
1 cup milk, or as needed
¼ cup all-purpose flour
salt and pepper to taste
1 (10 ounce) can refrigerated biscuit dough

Steps:

  • Bake biscuits according to package directions.
  • Cook the bacon in a deep skillet over medium heat until crisp, about 10 minutes. Remove bacon to a paper towel lined plate and keep the grease in the pan. Gradually stir in the flour so that no lumps form, then mix in the milk, continuing to cook and stir until thickened. Crumble the bacon into the gravy and season with salt and pepper before serving.
  • Split biscuits in half, top with gravy, and enjoy!

1 teaspoon poultry seasoning
1/2 teaspoon salt
1/2 teaspoon pepper (fresh ground if possible)

Steps:

  • Melt butter in a saucepan over medium heat. Sprinkle flour over melted butter and whisk together to form a paste. Allow this to cook for a minute.
  • Pour in milk, all at once, whisking constantly.
  • Add seasonings, whisking constantly. Allow the gravy to come to a boil, still whisking. Taste and adjust seasoning, if necessary.

This is a meal like my mother made. Neither the American Heart Association or Weight Watchers International would approve of this, but it's really good eat'n!

2 lbs Bob Evans sausage (Regular, Sage or Hot)
1/2 lb bacon
2 teaspoons rubbed sage
1/4 lb real butter
2 cups flour
1/2 gallon whole milk (2% or skimmed will not work)
black pepper

Steps:

  • Place flour into a dry non-stick frying pan over medium heat and cook until light brown.
  • Stir continually to prevent flour from burning.
  • Pour into a glass bowl and set aside to be used later.
  • (Browing the flour will keep it from lumping when added later) Cut bacon into 1/2" pieces and place into large pot or Dutch oven.
  • Fry bacon until crispy.
  • Pinch sausage into small pieces and add to bacon.
  • Continue frying until sausage is completely cooked.
  • Add sage and butter and stir in completely until butter is melted.
  • Add browned flour a few tablespoons at a time and stir until liquid becomes pasty (you may not need all of the flour).
  • Pour in milk slowly, bring to a slow boil and contiue stirring until gravy thickens.
  • Add black pepper to taste.
  • You may also add a pinch or two of crushed red pepper flakes if you want the gravy to be more zippy.
  • Serve over buttermilk biscuits prepared per package instructions.

A dear and very close friend of mine who lives in Australia asked me about southern biscuits and gravy for breakfast. It is RARE that I make this because it's artery clogging as HECK so if you're steadfastly health conscious...forget it!! It is an old southern tradition ...like grits. So if you only do it once every 5 years (haha) you're probably safe from a coronary. It's out of this world good! For those who don't know, biscuits and gravy is really more like biscuits, sausage and gravy. Every southern cook adds her/his own twist to it ...like throwing in sugar and vanilla isn't the norm--it's just the way I do it -- once every 5 years or more!

2 cups flour
1/4 cup sugar
1 teaspoon vanilla
4 teaspoons baking powder
1/4 teaspoon baking soda
1 pinch salt
3 ounces cold butter, diced
8 ounces buttermilk
1/2 lb ground sausage
2 tablespoons butter
4 tablespoons flour
3 cups cold milk
salt and pepper

Steps:

  • Combine the dry ingredients. Knead in the butter.
  • Add buttermilk and knead on a floured surface. Make sure you only knead it just enough to get the dough together. Do it gently so the flour doesn't develop gluten which will cause your biscuits to be tough.
  • Flatten the dough with the ball of your
  • fist. Use a glass to cut out your bisquits. Don't make them too tall or the outside may get crusty while the inside is still too doughy.
  • Cook them in a 350 degree oven on a greased cookie sheet and then get started on the gravy straight off.
  • Fry up the sausage until it's thoroughly cooked. Remove the sausage with a slotted spoon.
  • Don't drain the grease. You'll need it to make the roux. You should have about 2 tablespoons of rendered fat. Add the butter and melt it. Then add the flour a little at a time over medium heat, constantly whisking.
  • Cook for about 2-3 minutes. Now start adding the cold milk a little at a time, whisking incessantly.
  • Toward the end of the milk add the sausage back inches When it's nice and thickened up add salt and pepper to taste.
  • Cut the biscuits in half, pour the gravy over them, and enjoy! We're talking breakfast heaven here!

One day DH wanted biscuits and gravy, but I didn't have sausage, only bacon. So, I found a recipe online and went for it. Thus, bacon gravy was born!

6 slices bacon
2 tablespoons bacon grease
2 tablespoons flour
2 cups milk
salt and pepper

Steps:

  • Preheat a large skillet to medium-hi. Place 6 slices of bacon in the skillet and cook until just under crispy.
  • Remove bacon from skillet and drain; set aside. Discard all but 2 tablespoons of the bacon grease.
  • Add flour to grease, and whisk together. Cook for about a minute without burning the flour.
  • Add milk; whisk together.
  • Heat until bubbling. Simmer for 5-10 minutes, until sauce starts to thicken.
  • Meanwhile, crumble bacon. Add salt and pepper (to taste), and bacon to gravy. Allow to simmer until desired consistency.
  • Serve over biscuits.

  • In a large frying pan, saute the bacon for 5-8 minutes over medium high heat until cooked completely and the fat has rendered. Transfer the bacon to a paper towel lined plate. Pour all but 3 tbsp of the bacon drippings from the pan.
  • Add the diced onion to the bacon drippings and cook until softened, about 5 minutes. One the onions have softened, add the diced tomatoes, tomato juice, salt, sugar, smoked paprika, and black pepper. Simmer over medium heat for 10-15 minutes.
  • Make a corn starch slurry by stirring 3 tbps of water with 3 tbsp of cornstarch. Blend together completely. Slowly add the slurry to the simmering tomato gravy and stir until the gravy starts to thicken. Add the cooked bacon back to the pan and turn off heat. Stir heavy cream into the gravy.
