GRILLED PINEAPPLE NAPOLEONS WITH COCONUT CARAMEL SAUCE
This was SUCH a good dessert! We love grilled fruit. And the caramel sauce - delicious. We never thought of grilling phyllo sheets before ... but that made for a really impressive dessert.

- 1. FOR CARAMEL SAUCE: Combine the sugar and coconut milk in heavy saucepan. Bring to a boil over medium heat, whisking to dissolve the sugar. Simmer briskly until thick, golden and very flavorful, about 5 minutes or so, whisking often. Remove the pan from the heat and let the sauce cool to room temperature.
- 2. FOR THE NAPOLEONS: Place 1 phyllo sheet on a flat work surface. Coat with cooking spray, and sprinkle evenly with 1/2 tsp. sugar. Top with 1 phyllo sheet; coat again with cooking spray, and sprinkle with 1/2 tsp. sugar. Cut phyllo stack into thirds lengthwise; cut each in half, creating 6 even rectangular stacks. Repeat procedure with remaining phyllo sheets, cooking spray, and 1 tsp. sugar.
- 3. Grill phyllo stacks, without grill lid, over medium-low heat, 1 to 2 minutes on each side or until lightly browned. Set aside till ready to assemble.
- 4. Next sprinkle the cinnamon sugar mixture on both sides of the pineapple slices. Grill the pineapple on med heat until warmed through and softened. Remove from grill onto a plate and get ready to assemble the napoleons.
- 5. Place 1 grilled phyllo stack on each of 6 serving plates; top with pineapple slices. Drizzle caramel sauce evenly on top of pineapple slices. Top each with 1 grilled phyllo stack. Top with fresh whipped cream or ready whip and drizzle with more caramel sauce. Serve immediately while pineapple is still warm.

- TO MAKE THE CARAMEL SAUCE:.
- Stir the sugar and water in a heavy based small sauce pan over a medium heat for about 2 minutes or until the sugar dissolves.
- Simmer the melted sugar without stirring for about 8 minutes or until it becomes golden brown, wiping down the sides of the pan with a wet pastry brush to remove any sugar crystals and swirling the pan occasionally.
- Once the sugar has turned golden brown, add the coconut cream and stir to blend (the mixture will bubble vigorously when the cream is added).
- Watch your hands!
- Simmer over a medium to low heat for about 3 minutes or until the caramel melts and the sauce thickens slightly.
- Remove the coconut caramel sauce from the heat and pour it into a serving bowl.
- TO TOAST THE COCONUT:.
- Preheat the broiler to low heat.
- Sprinkle the coconut evenly over a baking sheet.
- Broil the coconut for 2 minutes, stirring occasionally, or until it is lightly golden.
- Watch the coconut closely while it broils to ensure it does not burn since it will cook quite quickly.
- Transfer the toasted coconut to a plate.
- TO COOK THE PINEAPPLE SKEWERS:.
- Thread 1 piece of pineapple on the end of each skewer, making 20 skewers (if using wooden skewers ~ soak for 30 before because if not they will catch on fire).
- Heat a cast iron grill pan over medium to high heat until it is very hot.
- Brush the pan with a little melted butter and grill the pineapple for 1 to 2 minutes on each side or until it is heated through and grill marks appear.
- Remove the pineapple skewers from the pan and place them on a serving platter.
- Serve the pineapple skewers with the caramel sauce and toasted coconut alongside.
- The skewers are designed to be dipped into the caramel sauce and then into the toasted coconut.

- 1. Preheat grill on high. Slice off the top and bottom of the pineapple. Stand pineapple upright on cutting board; cut into quarters from top to bottom. Cut each quarter into 1/2-inch-thick slices. Thread three pineapple slices onto each skewer.
- 2. In a small bowl, whisk together the honey and lime juice, and the mint, if using. Brush over the pineapple, reserving about half of the glaze.
- 3. Coat pineapple with cooking spray. Grill the skewers for 2-3 minutes per side, or until it begins to brown. Brush with remaining glaze and serve.

- Pound the chicken breasts to an even 1/2-inch thickness between two pieces of wax or parchment paper. Cut the breasts into 1-1/2" pieces and set aside.
- Make the marinade by combining the soy sauce, dark brown sugar, lime zest, vegetable oil, garlic, curry powder, ginger, cardamom and salt in a large bowl. Add the chicken pieces to the bowl and mix until chicken is evenly coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 4 hours or overnight.
- Make the sauce by whisking together the coconut milk, peanut butter, brown sugar, soy sauce and red curry paste in a medium saucepan. Bring to a simmer, then cook over medium heat, stirring occasionally, for about 3 minutes. Add the fresh lime juice. Set aside.

- In small saucepan, place unwrapped caramels, half-and-half and rum flavoring. Heat over low to medium-low heat, stirring, until sauce is thick and smooth. Keep warm until ready to serve.
- Preheat grill to medium hot. Grill pineapple slices about 6 minutes on each side until pineapple softens and turns slightly more yellow in color. Turn; grill other side.

- Soak skewers in water 30 minutes. Meanwhile, trim ends from pineapple, then stand it upright and cut off peel. Quarter pineapple lengthwise and cut out core. Reserve half the pineapple for another use. Cut each remaining quarter into 4 lengthwise slices, then cut each slice in half crosswise to make 16 thin wedges. Skewer each lengthwise.
- In a small saucepan, combine sugar with 1/2 cup water. Bring to a boil, swirling to dissolve sugar; boil, swirling occasionally (do not stir), just until golden and honeylike. Remove from heat and slowly whisk in coconut milk (mixture will bubble furiously).
