PEPPER AND ONION BURGER
Serve up this hero sandwich-inspired Pepper and Onion Burger at your next cookout. The fun doesn't stop with the grilled veggies, however. The Pepper and Onion Burger also features the added kick of A.1. Original Sauce!

Steps:
- Heat grill to medium heat.
- Place peppers and onions in center of large sheet heavy-duty foil; drizzle with 1/4 cup steak sauce. Fold to make packet. Grill 2 min.
- Meanwhile, mix meat and 2 Tbsp. of the remaining steak sauce; shape into 4 (1/2-inch) patties. Grill 8 to 10 min. or until vegetables are crisp-tender and burgers are done (160ºF), turning burgers after 4 min. and brushing with remaining steak sauce.
- Remove packet from grill; cut slits in foil to release steam before opening packet. Fill rolls with burgers and vegetables.

- Heat grill to medium heat.
- Spray both sides of onions with cooking spray. Mix meat and 1/4 cup steak sauce; shape into 4 (1/2-inch-thick) patties.
- Grill patties 5 min.; turn. Add onions to grill; cook 5 min. or until burgers are done (160ºF), brushing occasionally with remaining steak sauce and turning onions after 3 min.
- Fill rolls with burgers and onions.

GRILLED BURGERS

- Preheat a grill to medium high and oil the grates. Place the ground beef in a medium mixing bowl. Add 1 1/2 teaspoons salt and 3/4 teaspoon pepper. Add a few dashes of Tabasco sauce, then with your hands, mix the meat and seasoning well.
- Form the meat into six 1-inch-thick patties and place on the grill. Cover and cook 3 minutes, then rotate, leaving them on the same side, and cook 3 more minutes. Flip and repeat on the other side.
- Meanwhile, slice the rolls in half and spread each cut side with 1/2 tablespoon butter. Grill the rolls, cut-side down, until lightly toasted. Build the burgers with assorted toppings.
- Sauteed Mushrooms
- Melt 2 tablespoons butter in a large skillet over medium-high heat; add 1 pound sliced mushrooms, season with salt and pepper and cook 2 minutes. Add 2 to 3 tablespoons broth or wine and cook 6 to 8 more minutes.
- Caramelized Onions
- Melt 4 tablespoons butter in a skillet over low heat. Add 2 large sliced red onions and 3 to 4 tablespoons brown sugar. Cook until caramelized, tossing occasionally, about 20 minutes.
- Pico de Gallo
- Finely chop 5 plum tomatoes, 1/2 large onion, 3 jalapeno peppers and 1 bunch cilantro. Toss with the juice of 1/2 lime, and salt to taste.
- Bacon
- Cook over medium-high heat until crisp.
PERFECT GRILLED BURGERS

- Preheat a grill to medium high. Form ground beef (preferably chuck) into 6-ounce patties and make an indentation in each. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. For cheeseburgers, top with 2 slices cheese during the last minute of cooking; cover the grill to melt.
SKILLET CHARRED BURGER, GREEN PEPPERCORNS AND SHALLOTS

- Form the meat into burger patties and season each with salt and pepper. Heat a skillet (non-reactive and with grill ridges preferred) over medium high heat. Add 1 tablespoon of olive oil and heat for a moment before adding the burgers. Char the burgers on the grill ridges and flip to cook the other side. Cook the burgers to desired doneness, remove and keep warm. Add the shallots to the pan along with the remaining olive oil and cook the shallot for 2 minutes untill they begin to crisp but do not burn them. Add the peppercorns and saute for 1 minute. Add the red wine and reduce quickly by half. Place the burgers on several pieces of baguette, swirl the butter into the red wine sauce and pour sauce over the burgers. Serve with a green salad and roasted new potatoes.;

- Prepare grill for cooking on high heat.
- Mix jalapeno pepper, garlic, onion and ground beef in bowl.
- Separate beef mixture into about 7 equal bundles.

- Mix all ingredients except pepper, cheese and rolls.
- Shape mixture into 6 patties, about 3/4 inch thick.
- Press 3/4 teaspoons of the pepper into each side of the patty.
- Cover and refrigerate 2 hours before grilling.
- Heat grill.
- Grill patties uncovered about 4 inches from medium heat 12 to 17 minutes, turning once, until no longer pink in center and juices run clear.

CRUSTY GRILLED PEPPERCORN STEAKS
This is sort of like a Steak au Poivre prepared outdoors on the grill. Great for a special occasion cookout.

Steps:
- Pat steaks dry with paper towels. Rub both sides of each steak with garlic, then brush lightly with olive oil.
- Line large baking sheet or tray with waxed paper. Spread thin layer of pepper on plate, lightly coat both sides of steak with pepper, and place on waxed paper. Repeat with remaining steaks and additional pepper.
- Meanwhile, prepare charcoal for grilling (or heat broiler).
- Just before grilling, lightly salt both sides of steaks. Grill steaks over hot fire or broil 4 inches from heat until browned and crusty on outside but still pink at center, about 5 minutes each side for medium-rare.
- Transfer steaks to serving plates and serve at once.

GROUND PEPPERCORN BURGER
I love this burger, it is an adaptation of the burger served at Chili's. Blue cheese dressing, and fried onion strips make this a real treat.

Steps:
- Mix salt and pepper with the ground meat and make 4 patties.
- Mix Mustard and Cajun seasoning(Cayenne pepper too if you want, or chipotle powder, or both hehe).
- Brush the mustard mixture on the patties to cover thickly and completely. You don't need to use all the mustard, just make sure they are coated.
- Roll them in the cracked peppers until fully coated.
- Grill the burgers to desired doneness.
- Serve on a Grilled bun with lots of blue cheese dressing and onion strips on the bottom half underneath the burger.
- On top goes more blue cheese dressing, lettuce, tomatoes and pickles. MMMM, enjoy.
- *you can crush them under a heavy skillet. Don't use ground pepper in this recipe.
