3 tbsp. freshly cracked black pepper
2 tbsp. kosher salt
2 tbsp. grated lemon zest, dried for 1 hour
2 tsp. garlic powder
2 tsp. mustard powder
2 tsp. onion powder
1 tsp. sugar
8 boneless rib-eye steaks (about 1 inch thick)
Kosher salt, to taste
1 stick salted butter, melted

Steps:

  • For the lemon-pepper seasoning: Stir together the pepper, salt, lemon zest, garlic powder, mustard powder, onion powder and sugar in a small bowl.
  • For the steaks: Preheat a grill to medium high. Season the steaks lightly with salt and rub the lemon-pepper seasoning on both sides. Brush the steaks liberally with the melted butter
  • Grill the steaks 1 minute 45 seconds, then rotate the steaks 90 degrees. Cook 2 minutes, then go ahead and flip the steak over to the other side. After 1 minute 45 seconds on the second side, rotate 90 degrees and finish cooking for 2 minutes, or until the steaks reach 115˚ to 120˚ on an instant-read thermometer (the steak will continue to cook slightly after you've removed it from the grill). This is medium rare- my favorite. Remember, you can always throw a steak back on the grill if it's too red for your taste but you can't undo it if it's overcooked!

1/2 teaspoon paprika
1/2 teaspoon pepper
1/4 teaspoon each salt, garlic powder and lemon-pepper seasoning

4 beef ribeye steaks (1 inch thick and about 10 ounces each)

Steps:

  • In a large bowl, combine the oil and seasonings; rub over steaks. Grill steaks, covered, over medium heat or broil 3-4 in. from the heat for 7-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°.) Baste occasionally with seasoning mixture. Let stand for 3-5 minutes before serving.

1 tablespoon garlic powder
1 tablespoon paprika
2 teaspoons dried ground thyme
2 teaspoons dried ground oregano
1-1/2 teaspoons kosher salt

1 teaspoon cayenne pepper
1 teaspoon crushed red pepper flakes
4 beef ribeye steaks (1-1/2 inches thick and 8 ounces each)

Steps:

  • Combine all seasonings. Sprinkle over steaks, pressing mixture into both sides to help it adhere. Refrigerate, covered, for at least 1 hour or up to 24 hours., Remove steaks; blot with paper towels to remove any surface moisture, taking care to leave as much garlic mixture on steaks as possible. If desired, sprinkle with additional kosher salt. Grill steaks, covered, turning occasionally, on a greased grill rack over medium indirect heat until a thermometer reads 110°. Move steaks to direct heat; continue grilling until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Let stand 5 minutes before slicing. 3 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil

1/2 teaspoon black pepper
2 tablespoons coarsely chopped fresh flat-leaf parsley
For steak
4 (1 1/2-inch-thick) bone-in rib-eye steaks (7 pounds)

Steps:

  • Make salsa:
  • Prepare grill for direct-heat cooking over medium-hot charcoal (moderately high heat for gas).
  • Oil grill rack, then grill bell peppers, covered only if using a gas grill, turning occasionally, until slightly softened and charred, 15 to 20 minutes.
  • Transfer bell peppers to a large bowl and cover tightly with plastic wrap, then let stand 20 minutes. When cool enough to handle, peel peppers, discarding stems and seeds, and cut lengthwise into thin strips. Toss with remaining salsa ingredients.
  • Grill Steaks:
  • Prepare grill for indirect-heat cooking over medium-hot charcoal (moderately high heat for gas).
  • Pat steaks dry and sprinkle with salt and pepper. Oil grill rack, then sear steaks directly over coals, uncovered, turning over once and moving to area of grill with no coals underneath if flare-ups occur, until well browned, 4 to 6 minutes total. Move steaks to area with no coals underneath and grill, covered, until thermometer inserted into center of meat (do not touch bone) registers 120°F for medium-rare, 8 to 12 minutes more. Transfer steaks to a cutting board and let stand 15 minutes.

4 1 1/4-to-1 1/2-inch-thick boneless rib-eye or New York strip steaks (about 12 ounces each) or filets mignons (8 to 10 ounces each), trimmed
2 tablespoons canola or extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • About 20 minutes before grilling, remove the steaks from the refrigerator and let sit, covered, at room temperature.
  • Heat your grill to high. Brush the steaks on both sides with oil and season liberally with salt and pepper. Place the steaks on the grill and cook until golden brown and slightly charred, 4 to 5 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F) or 8 to 10 minutes for medium-well (150 degrees F).
  • Transfer the steaks to a cutting board or platter, tent loosely with foil and let rest 5 minutes before slicing.

2/3 cup olive oil
2 tablespoons minced fresh thyme
2 tablespoons minced fresh savory or 2 teaspoons dried
4 teaspoons mashed anchovy fillets
4 14- to 16-ounce rib-eye steaks (each about 11/2 inches thick), trimmed of excess fat
3 red bell peppers
3 yellow bell peppers
2 green bell peppers
4 garlic cloves, minced
2 tablespoons minced fresh parsley

Steps:

  • Whisk 1/3 cup oil, thyme, savory and 2 teaspoons anchovies in 13x9x2-inch glass dish to blend. Add steaks; turn to coat. Let stand at room temperature 1 hour, or cover and refrigerate overnight.
  • Char all peppers over gas flame, in broiler or on barbecue until blackened on all sides. Enclose peppers in paper bag 10 minutes. Peel, seed and cut peppers into 1/2-inch-wide strips. Mix 1/3 cup oil, 2 teaspoons anchovies and garlic in large bowl to blend. Add peppers. Season with salt and pepper. (Can be made 1 day ahead. Cover and chill. Bring peppers to room temperature before continuing.)
  • Prepare barbecue (medium-high heat). Remove steaks from marinade; pat dry. Sprinkle steaks with salt and pepper. Grill steaks to desired doneness, about 6 minutes per side for medium-rare. Transfer to cutting board. Let stand 5 minutes.
  • Cut steaks diagonally into thin slices. Divide meat among plates. Spoon peppers next to meat. Pour any juices from cutting board over peppers. Sprinkle with parsley and serve.

I have even made these on my indoor grill--they are very good! Use freshly ground pepper from a pepper mill only for this.

1 tablespoon dried thyme
1 1/2 teaspoons salt
5 teaspoons garlic powder (use only garlic powder not fresh garlic!)
1 1/2 teaspoons lemon pepper
1/2 teaspoon ground red pepper (this stuff is hot!)
1 1/2 teaspoons dried parsley flakes
5 rib eye steaks (about 1-1/2-inch)
3 -6 tablespoons olive oil

Steps:

  • In a bowl combine first 7 ingredients.
  • Rub olive oil well on the steaks.
  • Then rub the spice mixture all over well on the meat, patting down with your hands to adhere to the meat.
  • Place the steaks on a tray and refrigerate for a minimum of 3 hours.
  • Remove the steaks and let sit out until almost room temperature.
  • This is a very important step, as it will relax the meat fibers and make for a tender and juicy steak, this might take about 2 hours depending on how cold your steaks are).
  • Set grill to about 350-400°F (medium-high heat).
  • Cover with lid and grill for about 8-10 minutes on each side or to desired doneness.
  • Delicious!

2 sticks (1 cup) salted butter, melted and slightly cooled

3 teaspoons steak seasoning
3 tablespoons butter, softened

Steps:

  • Let steaks stand at room temperature 15 to 20 minutes. Rub steaks evenly with steak seasoning (I use McCormick Grill Mates Montreal Steak Seasoning).
  • Grill, covered with grill lid, over medium heat (300 to 350) for 2 1/2 minutes. Using tongs, turn each steak at a 60-degree angle, and grill 2 1/2 minutes more. 1/4 cup gorgonzola, crumbled
2 tablespoons butter, room temperature
1 tablespoon fresh marjoram, minced

1/4-1/2 cup olive oil
6 garlic, minced
2 tablespoons fresh marjoram, minced
4 rib eye steaks
2 large red peppers, cut into strips
2 large yellow peppers, cut into strips
2 large green peppers, cut into strips

Steps:

  • Gorgonzola Butter: In a small bowl, beat together Gorgonzola, butter and marjoram. Season with pepper.
  • Combine oil, garlic and marjoram in zip lock plastic bag. Place steaks and peppers in marinade. Turn to coat. Let stand 2 hours at room temperature or overnight in fridge.
  • Heat barbecue to medium high. Place steaks and peppers on grill. Sprinkle with salt and pepper. Grill steaks 5 minutes per side for medium rare.
  • Grill peppers until tender (10 minutes), turning occasionally.
  • To serve: Top each steaks with a small pat of Gorgonzola Butter. Any remaining butter can be frozen for another time or used on steamed veggies.

4 (10 -12 ounce) rib eye steaks, cut 1 inch thick
1 tablespoon olive oil
1 tablespoon paprika

2 teaspoons dried thyme, crushed

1 1/2 teaspoons lemon-pepper seasoning
1 teaspoon salt
1/2-1 teaspoon ground black pepper

4 red bell peppers or 4 orange bell peppers
olive oil
2 tablespoons snipped fresh basil
2 tablespoons balsamic vinegar

Steps:

  • Trim fat from meat. Brush steaks with oil.
  • In a small bowl, combine paprika, garlic powder, thyme, oregano, lemon-pepper seasoning, salt, black pepper, and cayenne pepper.
  • Sprinkle paprika mixture evenly over meat; rub in with your fingers. Cover steaks and chill for 1 hour.
  • Place steaks on the rack of an uncovered grill directly over medium coals. Grill until desired doneness, turning once. (Allow 11 to 15 minutes for medium-rare doneness [145 degree F] or 14 to 18 minutes for medium doneness [160 degree F].).
  • Cut steaks into serving-size pieces. Serve with Grilled Peppers.
  • GRILLED PEPPERS: Seed and quarter 4 yellow, red, and/or orange sweet peppers. Brush peppers with 4 teaspoons olive oil. Place pepper quarters on grill rack directly over medium coals. Grill for 12 to 15 minutes or until peppers are crisp-tender and lightly browned, turning once. Remove peppers from grill; cool slightly. Cut peppers into wide strips. Place peppers in bowl. Add 2 tablespoons snipped fresh basil and 2 tablespoons balsamic vinegar; toss well. Serve immediately or cool to room temperature.
