GRILLED PEACHES WITH HONEY RICOTTA
Summer peaches steal the show in this super simple dessert. Caramelized peaches paired with a lightly whipped lemon-honey ricotta are sure to satisfy your sweet-tooth.

- Preheat grill to medium-high heat. If you don't have a grill, you can use the oven broiler (see below). Brush halved peaches with oil. Place peaches on grill flesh side down and grill for about 5 minutes, until softened but still hold shape.
- Whip ricotta with a hand mixer until it has a whipped cream like consistency. Add honey, lemon juice and zest and stir together.
- Add about 1 tbsp of ricotta mixture to each peach. Top with freshly chopped mint and a drizzle of honey, if desired. Serve immediately.

- Cut the peaches in half and remove the pit. Slice each half in half and toss them in a bowl with the vanilla extract, almond extract, and brown sugar. Set aside for 15 minutes while you preheat a grill with a medium-high heat. Grill skin side down until skin is slightly charred, about 3 minutes. Turn and grill on the other 2 sides until you get nice grill marks, about 1 minute on each side.
- Divide the peaches among 4 bowls and serve with the frozen yogurt and toasted almonds, if desired.

- Heat gas or charcoal grill for indirect cooking as directed by manufacturer. For two-burner gas grill, heat one burner to high.
- In small bowl, stir together ricotta, honey and vanilla. Cover; refrigerate until ready to serve.
- Spray cut sides of peaches with cooking spray. Place peaches cut side down on heated side of gas grill or over coals on charcoal grill. Cook 2 to 3 minutes or until grill marks form.
- Move peaches to unheated side of gas grill or over drip pan on charcoal grill. Cook until soft, about 5 minutes. Remove peaches from grill; place on individual serving plates or large serving platter.
- Spoon 1 tablespoon cheese mixture into each peach half. Top each with cereal crumbs.

SIMPLEST GRILLED PEACHES
Grilled peaches may be summer's greatest joy. Cook them over a medium to low gas grill or a dying charcoal fire, and serve them with ice cream, whipped cream or nothing at all.

- Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
- Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
- Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.

SWEET GRILLED PEACHES WITH HONEYED VANILLA BEAN MASCARPONE AND WALNUT SUGAR
Steps:
- Melt butter and honey in a small saucepan over medium-low heat. Split the whole vanilla bean in half lengthwise. Scrape all the seeds from 1 vanilla bean and place into saucepan along with the vanilla bean. Stir to combine; let simmer until sauce has thickened, about 5 minutes then reduce heat to low.
- Preheat indoor grill pan to medium heat on stovetop.
- Place mascarpone cheese and honey into a medium bowl. Split the remaining 1/2 vanilla bean in half lengthwise, scrape all the seeds from the bean and place into bowl; discard the bean. Stir to combine and set aside.
- Cut each peach in half and discard the pit. Dip peaches cut side down into the butter-honey sauce and in batches, place onto hot grill pan. Grill for 2 to 3 minutes, until peaches have nice grill marks.
- Combine walnuts and sugar into a bowl. Place grilled peaches, onto serving plates, 2 per plate. Top each with a dollop of mascarpone cheese and sprinkle with walnut sugar. Remove the vanilla bean from honey sauce and drizzle a spoonful of warm sauce over peaches and plates. Serve warm.
GRILLED PEACHES
Choose fruit with a fragrant aroma and flesh that yields a bit when pressed gently. If a peach has cuts or tan spots, or if it's rock-hard or mushy, don't buy it. Color has more to do with variety than ripeness.

- In a saucepan over medium heat, stir together the white sugar, balsamic vinegar, and pepper. Simmer until liquid has reduced by one half. It should become slightly thicker. Remove from heat, and set aside.
- Preheat grill for medium-high heat.
- Lightly oil the grill grate. Place peaches on the prepared grill, cut side down. Cook for about 5 minutes, or until the flesh is caramelized. Turn peaches over. Brush the top sides with the balsamic glaze, and cook for another 2 to 3 minutes.
