GRILLED PEACH AND BACON SALAD



Grilled Peach and Bacon Salad image

6 slices thick-cut bacon, cut into lardons (1-by-1/4-inch pieces)
Vegetable oil, for the grill pan
4 firm peaches, cut into sixths
Kosher salt and freshly ground black pepper
1 teaspoon honey
2 teaspoons Dijon mustard
2 tablespoons apple cider vinegar
1 bunch kale, stemmed and thinly sliced
1 cup grape tomatoes, halved
1/2 cup toasted pecan pieces

Steps:

  • Add the bacon lardons to a cold skillet and heat over medium heat. Cook, stirring, until the fat is rendered and bacon is crisp, 10 to 12 minutes. With a slotted spoon, remove the bacon to a paper-towel-lined plate. Reserve the fat in the pan and keep warm; there should be a little more than 4 tablespoons fat.
  • Meanwhile, lightly oil and preheat a cast-iron grill pan over medium-high heat. Brush the peaches with a little of the reserved bacon fat and season with a little black pepper. Grill until fragrant and clear grill marks appear, 1 to 2 minutes per side. Remove to a plate.
  • In a small bowl, whisk together the honey, mustard and vinegar. Slowly whisk in the warm bacon fat. Season with salt and pepper to taste.
  • In a large bowl, drizzle the dressing over the kale; toss to coat. Taste and season with a little more salt and pepper as needed. Transfer the kale to a serving platter and top with the tomatoes, peaches, pecans and bacon.

1/4 cup extra-virgin olive oil, plus more for drizzling
4 ears corn, shucked
3 peaches, each cut into 4 wedges
Kosher salt and freshly ground black pepper
2 tablespoons white wine vinegar
1 teaspoon Dijon mustard
1/2 Fresno pepper, halved, seeded and thinly sliced into half-moons
1/2 small shallot, finely minced
1/3 cup toasted sliced almonds
1/3 cup crumbled feta (2 ounces)
4 cups baby arugula (2 1/2 ounces)

Steps:

  • Prepare a grill for medium-high heat. Drizzle some olive oil on the corn and peaches and sprinkle with salt and pepper. Grill the corn and peaches, turning them periodically, until they develop dark grill and char marks on all sides, 6 to 8 minutes for the peaches and 10 to 12 minutes for the corn. Let cool slightly.
  • Meanwhile, whisk together the olive oil, vinegar, mustard, Fresno pepper, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Cut the corn kernels from the cobs and discard the cobs. Slice the peach wedges crosswise so each piece has some grill marks. Add the corn kernels and sliced peaches to the large bowl of dressing along with the almonds and feta. Toss gently to coat. Check for seasoning and add more salt and pepper to taste.
  • Arrange a bed of arugula on a large platter. Top with the peach and corn salad.

¼ cup balsamic vinegar
2 tablespoons olive oil
¼ cup honey
2 teaspoons salt
1 teaspoon pepper
4 peaches
2 boneless, skinless chicken breasts
oil, to taste
salt, to taste
pepper, to taste
5 oz mixed greens
1 cup grape tomatoes, halved
½ cucumber, chopped
½ red onion, sliced
½ cup pecan

Steps:

  • Add the balsamic vinegar, olive oil, honey, salt, and pepper to a bowl and mix until well combined. Reserve half for salad dressing.
  • Halve the peaches and remove the pit. Lightly brush the cut side with balsamic vinaigrette.
  • Grill for 5 minutes over medium high heat, or until browned.
  • On a cutting board, sprinkle the chicken with oil, salt, and pepper.
  • Grill the chicken until browned on one side and flip. Brush with vinaigrette on cooked side and repeat once other side is browned.
  • Prepare the peaches and chicken for the salad by slicing both.
  • Add the grilled peaches and chicken to a bowl with the mixed greens, grape tomatoes, cucumber, red onion, and pecans, and drizzle with the remaining balsamic vinaigrette. Mix thoroughly.

Grilling fruit really brings out the natural sugars in them and they take on a whole new dimension. Don't use canned or very ripe peaches for this recipe or you will have a big mess on your grill. I like to buy extra peaches and the citrus fruits when I make this so I can juice them in my Lalanne juicer to make a tart sorbet. The recipe for the dressing alone is here Recipe #329371

1 orange, juice of
1 lime, juice of
1 lemon, juice of
1/4 cup white wine vinegar
1 tablespoon shallot, minced
1 tablespoon sugar
3/4 cup canola oil
1 lb flank steak
1 cup bottled Italian dressing
2 tablespoons olive oil
6 peaches
salt and pepper
mixed baby lettuces and spring greens (1 small bag)
4 cups romaine lettuce, chopped
1 red pepper, cut in thin strips
1 cup toasted pecans
4 ounces goat cheese

Steps:

  • Whisk together first 7 ingredients to make dressing. Season with salt and pepper and set aside.
  • Marinate steak in italian dressing in the fridge for at least an hour.
  • Cut peaches in half, remove pits, brush with olive oil.
  • Grill steak to your liking. I like mine medium for a salad. Slice the meat thinly and on an angle against the grain. This will help avoid it being tough or chewy.
  • Grill peaches for just a minute or two on each side. Let cool a minute and then slice into segments.
  • Arrange spring mix and romaine lettuce on a large platter or individual plates. Top with steak, grilled peaches, red pepper, pecans and crumbled goat cheese. Drizzle citrus dressing on top.

400g pack mini chicken fillet
3 tbsp olive oil
4 ripe peaches , stoned and cut into quarters
4 tsp sherry vinegar
1 tbsp clear honey
1 red chilli , finely chopped
110g bag herb salad
100g feta cheese , crumbled

Steps:

  • Heat a griddle pan. Toss the chicken in ½ tbsp of the oil, and season. Cook for 3-4 mins on each side or until cooked through. Pop on a plate to rest.
  • Next toss the peach slices in ½ tbsp oil and some ground black pepper. Grill on their cut sides for 1-2 mins each side.
  • Mix the remaining olive oil, vinegar, honey and chilli. Toss with the salad leaves. Arrange the chicken and nectarine slices on top and scatter with the feta. Drizzle with the resting juices from the chicken and eat straight away.

4 large tomatoes
5 peaches
1 large red onion
1 1/2 cups fresh basil leaves
1 cup reduced-fat feta cheese
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons white wine vinegar
2 tablespoons balsamic vinegar
1 1/2 tablespoons sugar
1 teaspoon garlic powder
1 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Wash all fresh ingredients. Slice the tomatoes wedges to desired thickness - add to salad bowl. Slice the red onion in thin strips - add to bowl.
  • Slice the peaches in halves and pit them. Place the peaches on a hot grill (face down) for approximately 3 minutes - until they have grill marks, but are a little firm. Slice the grilled peaches to desired thickness (I like a little thinner than the tomato) - add to the bowl.
  • Combine all ingredients for the vinaigrette together in a separate bowl and then add to tomato, onion, and peaches - lightly mix.
  • Add the basil - add as the whole leaf, do not slice (think lettuce).
  • Crumble the feta in, if you wish for more - feel free to add, if you wish for less - add less.
  • Mix all ingredients together well.
  • I finish by adding some extra feta on the top, and you're done!
