GRILLED NAAN RECIPE
You could go out and buy yourself a tandoor oven (small ones run about $200 or so), but here's a better suggestion: Just grill it. It works so well for pizza, why shouldn't it do just as well for naan?

- Combine flour, yeast, salt, and sugar in the bowl of a stand mixer and whisk until combined. Add yogurt and knead with dough hook on low speed until dough comes together into a smooth ball. Dough should stick slightly to bottom of bowl as it kneads (add slightly more yogurt or milk as necessary). Continue to knead for 5 minutes. Cover tightly with plastic wrap and allow to rise at room temperature until roughly doubled in volume, about 2 hours.
- Turn dough out onto floured work surface. Using a bench scraper or a knife, cut the dough into 12 even pieces. Roll each piece into a ball, then place on a well-floured surface (leaving a few inches of space between each one) and cover with a floured cloth. Alternatively, place each ball of dough in an individual covered pint-sized deli container. Allow dough to rise at room temperature until doubled in volume, about 2 hours.
- Ignite a large chimney full of coals (about 5 quarts of coals) and spread evenly over half of the grill. Set grill grates in place, cover, and allow to preheat for 5 minutes. Scrape grill grates clean with a brush.
- Working with two to three balls of dough at a time, stretch with your hands into an oblong roughly 10-inches long and 6-inches across (you can use a rolling pin for this as well). Once you have two or three pieces stretched, lay them out on the grill above the coals. Cook without moving until bottom side is charred in spots and light golden brown. Flip with a large spatula, pizza peel, or with tongs and cook until second side is charred and browned. Remove naan from the grill and immediately brush with melted butter. Transfer the naan to a large plate and cover it with a clean dish towel while you cook the remaining bread.

CEDAR GRILLED MEDITERRANEAN NAAN PIZZA

Steps:
- 1. Float Cedar Grilling board in pan of water for 1 to 2 hours, so not fully submerge. After soak time, remove from water and place on counter.
- 2. Heat grill to 325 to 350F.
- 3. Place 1 Naan flat breads on each Grilling Board (dry side).
- 4. One each Naan, spread 2 tablespoons Pesto or Pizza sauce.
- 5. Top each Naan with 1/2 cup mozzarella.
- 6. On each Naan, lay 1/3 cup of thinly sliced zucchini, also add Onion (to your taste) and place amount of olives you desire.
- 7. Add one-quarter of the salami to each Naan.
- 8. Top each Naan with sprinkling of grated Romano cheese.
- 9. Carefully place Grilling Boards on the Grill, off center and with indirect heat.
- 10. Grill, covered, over medium-low heat until mozzarella has melted and vegetables are tender.
- This is about 8 to 12 minutes, check on progress at 8 minutes into cooking to see if it needs more time.
- 11. Once Naan is done and cheese is slightly browned, top with fresh basil leaves as desired.
- 12. Carefully remove Grilling Boards from Grill, as they will be hot, and let Naan rest for 2 to 3 minutes before cutting and serving.
- 13. Use Grilling Board as serving tray, plate and serve!

NAAN GRILLED PIZZA
We substituted grilled naan bread for pizza dough and topped with mozzarella cheese, cherry tomatoes and basil leaves. It's ready in only 10 minutes.

- Heat gas or charcoal grill. When grill is hot, cook naan bread over medium heat about 45 seconds on each side. Remove from heat.
- To assemble pizza, brush oil over one side of bread. Top with cheese and tomatoes. Season with salt and pepper.
- Return pizza to grill. Cover grill; cook 1 to 2 minutes or just until cheese is melted. With large metal spatula, remove pizza from grill. Sprinkle with basil.

- Prepare the balsamic glaze: Heat 1/4 cup balsamic vinegar in a small saucepan over medium heat. Simmer until syrupy and reduced to about a tablespoon, 8 to 10 minutes.
- Grill the chicken: Preheat an outdoor grill or indoor grill pan to medium high (about 425 degrees F). Slice the chicken breast in half length-wise so that you have 2 chicken cutlets. Brush with the remaining 2 tablespoons balsamic vinegar and 1 tablespoon olive oil. Grill on each side until the chicken is cooked through and reaches an internal temperature of 165 degrees F, about 6 to 8 minutes per side. Remove to a plate, cover, and let rest 5 minutes. Cut into thin slices, then re-cover and set aside.
- Prepare the rest of your toppings: Peel, pit, and slice the avocado (cover it with plastic or a squirt of lemon juice to prevent browning); cut the strawberries into 1/4-inch-thick rounds or slices; crumble the goat cheese; and slice the basil into thin ribbons.
- Grill the naan and assemble the pizzas: If using a grill pan indoors on the stove, heat the grill pan over medium high. Brush both sides of one of the naan with olive oil and place it in the grill pan, pressing down on the top of it with a spatula to sear. Cook on the first side until just beginning to char, about 2 to 3 minutes. Flip and cook on the second side, just until you have light browning, 30 seconds to 1 minute, then remove to a sheet pan or large plate. Repeat with second naan. If using an outdoor grill, ensure your grill plates are very clean (I recommend heating the grill to very high heat, then brushing the grates to remove any residue). Reduce the heat to medium, about 350 degrees F. Brush both sides of the naan with oil, place them on the grill, and close the lid. Let cook 2 to 4 minutes, until the first side has light grill marks.
