GRILLED TOMATILLO SALSA



Grilled Tomatillo Salsa image

Fire up the grill for a salsa packed with tomatillo, onion and cilantro and a shot of chipotle chile.

Number Of Ingredients 6

8 ounces tomatillos, husked and well washed (about 3 large tomatillos)
1/2 medium yellow onion, cut lengthwise into 3 wedges
1 large clove garlic, unpeeled
1/4 cup fresh cilantro leaves
1 chipotle chile in adobo sauce
Kosher salt

Steps:

  • Prepare a grill over medium heat.
  • Put the tomatillos, onion and garlic on the grill (put the garlic on a metal skewer or small piece of aluminum foil to keep it from slipping through the grates.) Grill the vegetables, removing them as they are ready, until the tomatillos, turning as needed, are soft but not bursting, the onion is tender and the garlic skin is charred, 5 to 15 minutes. Cool slightly.
  • Peel the garlic and put in a blender with the tomatillos, onion, cilantro, chipotle chile and 1/2 teaspoon salt. Blend until well incorporated but slightly chunky.

4 (6-ounce) mahi mahi, skin removed
1 lime, juiced
1 tablespoon olive oil
Salt and pepper
Tomatillo and Mango Salsa, recipe follows
1 semi-ripe mango, peeled and seeded, plus 1 semi-ripe mango, peeled, seeded, and small diced
1 jalapeno, seeded
2 limes, juiced
1 orange, juiced
10 medium sized tomatillos peeled, washed, and diced finely
1 medium ripe tomato, finely diced
1 red onion, finely diced
1/2 cup chopped cilantro
Salt and freshly ground black pepper

Steps:

  • Preheat a grill.
  • Lay fish in a plate sprinkle with lime juice, olive oil, salt, and pepper. Place fillet on hot grill cook on each side for 4 minutes. Serve with Tomatillo and Mango Salsa.
  • Begin by peeling 1 of the mangos removing all the flesh possible and discarding the seed. Place the mango pieces in a blender with jalapeno, lime juice and orange juice. Blend until smooth and place in large bowl.
  • Meanwhile peel and remove flesh from the remaining mango and finely dice.
  • To finish the salsa, add the tomatillos, tomato, red onion, cilantro, and the diced mango all to the pureed mango mixture season with salt and pepper. (Best served grilled fish or white shrimp).
  • Yield: 3 cups

The fresh tomatillo-mango salsa is simple, quick, and a perfect complement to the grilled fish. Serve with your favorite tortillas. You can also enjoy the salsa with grilled chicken, tortilla chips, or other fish tacos.

2 semi-ripe mangoes, diced
3 limes, juiced, divided
1 orange, juiced
4 tomatillos, peeled and diced, or more to taste
1 small red onion, chopped
1 jalapeno pepper, seeded and diced
½ cup chopped fresh cilantro
salt to taste
freshly ground black pepper to taste
6 (6 ounce) fillets boned, skinned swordfish
1 tablespoon olive oil
salt and ground black pepper to taste

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Place mango pieces in a bowl. Scoop out 1/4 of the pieces and place in a blender with the juice of 2 limes and orange juice. Blend until smooth.
  • Place tomatillos, red onion, jalapeno pepper, and cilantro in the bowl with the diced mangoes. Sprinkle salsa with salt and freshly ground pepper.
  • Pour the pureed mango mixture over the salsa and mix well.
  • Lay swordfish on a plate and sprinkle with the remaining lime juice, olive oil, salt and black pepper.
  • Place swordfish on the hot grill and cook until fish flakes easily with a fork, about 4 minutes per side. Spoon salsa over fish.

1 T canola oil
2 T minced garlic
1 T lime juice
1/2 tsp cayenne pepper
1/8 tsp salt
1/8 tsp white pepper
2 oz leeks, white part only, julienned
1/2 cup flour
4 oz canola oil (Wesson)
6 oz Tomatillo Essence
2 1/4 cups Tomato Onion Eggplant Shiitake Mixture
15 red currant tomatoes
Tomato Onion Eggplant Shiitake Mixture
3 C julienned onions
2 C julienned tomatoes
3 T minced garlic
1/2 tsp cumin powder
1/2 tsp salt
6 slices Japanese eggplant,1/4",cut on diagonal
2 T canola oil (Wesson)
8 medium shiitake mushroom caps
Tomatillo Essence
5 medium tomatillo, husked
3 cloves garlic, minced
1/2 C chopped onion
2 C water
1 C cilantro leaves
2 tsp minced jalapeno pepper
1/2 C rice vinegar
1/4 C canola oil (Wesson)
1 T sugar
1 tsp salt
1/8 tsp white pepper

Steps:

  • Method: Marinate the monchong fillets in oil, garlic, lime juice, cayenne pepper, salt and white pepper for 20 mins. Dust leeks with flour and fry in oil until lightly brown. Ladle 2 ounces of Tomatillo Essence on each of three plates. Top with 3/4 cup of Tomato Onion Eggplant Shiitake Mixture. Top with grilled monchong fillet. Garnish with fried leeks and red currant tomatoes. Makes 3 servings TOMATO ONION EGGPLAND MIXTURE Sweat onions, tomatoes, 1 tablespoon of the garlic and cumin on medium heat for 20 minutes. Do not brown. Season with salt. Lightly coat eggplant slices with oil and 1 tablespoon of the garlic; grill until soft. Lightly coat shiitake mushrooms with oil and the remaining 1 tablespoon of the garlic; grill. Cool, then quarter shiitake mushrooms. Combine all ingredients TOMATILLO ESSENCE In a saucepan combine tomatillos, garlic, onion and water; simmer for 15 minutes.
