Japanese country-style grilled chicken. The thigh meat stays moist and tender, but boned chicken breasts can be used also.

2 tablespoons light soy sauce (usukuchi shoyu)
2 tablespoons sake
2 tablespoons mirin
2 tablespoons light miso
2 green onions, crushed and slivered
1 teaspoon minced gingerroot
1 garlic clove, minced
8 boneless chicken thighs, skin intact
1 tablespoon five-spice powder
toasted sesame seeds

Steps:

  • Blend soy sauce, sake mirin, miso, green onions, ginger root and garlic in a rectangular baking dish.
  • Coat chicken with mixture.
  • Marinate 1 hour or refrigerate overnight, turning several times.
  • Preheat a hibichi, portable tabletop grill or charcoal grill. (Can also be cooked in a skillet.).
  • Shake marinade off chicken; pat dry.
  • Place skin-down on hot grill. Grill 4 to 5 minutes.
  • Turn chicken; grill second side 4 to 5 minutes or until golden brown and done inside.
  • When chicken is done, sprinkle with sesame seeds and seven-spice mixture.

My mom makes miso every year and this is one of the first things that we make with her miso. The recipe (with a variety of differences) is readily available, but I tend to go with the most simple versions of things, so this is what we use. The grilling/broiling instructions are a bit vague, but grills are different enough that the operator should use whatever method they think is most reasonable, just keep an eye on it to make sure it doesn't burn. Burnt miso is not a good thing. Prep time includes marinating time.

2 tablespoons soy sauce
2 tablespoons sake
2 tablespoons mirin
2 tablespoons miso, preferably white miso
2 green onions, thinly sliced
1 teaspoon fresh grated ginger
1 clove garlic, crushed
8 boneless chicken thighs (take the skin off if you prefer)
1 teaspoon sesame seeds, lightly roasted

Steps:

  • Mix together the soy sauce, sake, mirin, miso, onions, ginger and garlic in a shallow dish.
  • Place chicken pieces into marinade, turn to coat well and marinate for 1 hour, turning several times.
  • Preheat grill so that it is very hot.
  • This can also be broiled in the oven, turning only once halfway through the cooking time.
  • Remove the chicken from the marinade and pat dry on kitchen paper.
  • Grill the chicken until cooked through and juices run clear.
  • Sprinkle with sesame seeds, serve with steamed rice.

3 lb. skinless, boneless chicken thighs
3 1/2 tsp. kosher salt, divided, plus more
1 (12-oz.) can ginger beer
6 garlic cloves, finely grated
3/4 cup plus 6 Tbsp. unseasoned rice vinegar, divided
3 Tbsp. plus 1 tsp. finely grated ginger (from about one 4" piece)
1 Tbsp. white miso
3/4 cup plus 1 Tbsp. vegetable or sunflower oil, plus more for grill
6 scallions, finely chopped
2 bunches radishes, preferably with greens, halved lengthwise
Freshly ground black pepper
3 heads Little Gem lettuce or romaine hearts, leaves separated

Steps:

  • Season chicken on all sides with 2 1/2 tsp. salt and place in a large bowl. Add ginger beer, garlic, 3/4 cup vinegar, and 3 Tbsp. ginger to bowl and toss to combine. Cover and chill at least 2 hours and up to 24 hours.
  • Meanwhile, whisk miso, 3/4 cup oil, 1 tsp. salt, and remaining 6 Tbsp. vinegar and 1 tsp. ginger in a small bowl. Mix in scallions. Let dressing sit at room temperature up to 1 hour, or chill up to 24 hours.
  • Prepare a grill for high heat; brush grate lightly with oil. Grill chicken, turning occasionally, until lightly charred and an instant-read thermometer inserted into thickest part of thigh registers 165°F, 12-15 minutes. Transfer to a platter and tent with foil to keep warm.
  • Toss radishes with remaining 1 Tbsp. oil in a medium bowl; season lightly with salt and pepper. Grill, turning occasionally, until charred in spots, 8-10 minutes. Transfer to platter with chicken.
  • Toss lettuce with about one-third of dressing in a large bowl. Drizzle another third of the dressing over grilled radishes. Serve remaining dressing alongside.

3 tablespoons mirin (Japanese sweet wine)
3 tablespoons rice wine
3 tablespoons soy sauce
3 tablespoons honey
2 cloves garlic, minced
2 teaspoons minced fresh ginger
1 pound boneless, skinless chicken thighs
1 teaspoon sesame seeds

Steps:

  • Mix miso, mirin, rice wine, soy sauce, and honey together in a bowl until miso is completely dissolved. Stir in garlic and ginger.
  • Pour marinade into a resealable plastic bag. Add chicken, squeeze out excess air, and seal the bag. Turn the bag or mix chicken to ensure even distribution of marinade. Refrigerate and allow to marinade 8 hours or overnight, mixing or turning the bag occasionally.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove from the grill and chop into wide strips, approximately 4 to 5 slices per piece. Sprinkle with sesame seeds and serve.

Making a compound of unsalted butter and the salty, fungal deliciousness of Japanese miso paste is a surefire way of adding immense flavor to a simple weeknight meal. Here the mixture is spread over chicken thighs, which are then roasted to golden perfection. But you could easily use it on salmon or flounder, on corn or potatoes. The recipe calls for white miso, which is more mild than the aged version known as red miso. But you could certainly use red for a more intense result.

4 tablespoons unsalted butter, softened
1/2 cup white miso
2 tablespoons honey
1 tablespoon rice vinegar (do not use seasoned rice vinegar)
Black pepper, to taste
8 skin-on, bone-in chicken thighs, approximately 2 1/2 to 3 pounds

Steps:

  • Heat oven to 425 degrees. Combine butter, miso, honey, rice vinegar and black pepper in a large bowl and mix with a spatula or spoon until it is well combined.
  • Add chicken to the bowl and massage the miso-butter mixture all over it. Place the chicken in a single layer in a roasting pan and slide it into the oven. Roast for 30 to 40 minutes, turning the chicken pieces over once or twice, until the skin is golden brown and crisp, and the internal temperature of the meat is 160 to 165 degrees.

I saw this on Food Network Canada and it has been on my to do list ever since. The original recipe calls for thighs but I would use breasts and have updated the recipe to reflect this.

3 lbs boneless skinless chicken breasts
4 lemons, juice of
1 tablespoon salt (15ml)
1/2 cup plain yogurt (125ml)
3 tablespoons ground almonds (15ml)
1 tablespoon of freshly grated gingerroot (15ml)
5 garlic cloves
3 teaspoons paprika (15ml)
2 teaspoons garam masala (10ml)
1 teaspoon turmeric (5ml)
1/2 teaspoon fresh ground pepper (2.5ml)
1/2 teaspoon cayenne pepper (2.5ml)
extra virgin olive oil

Steps:

  • Combine chicken lemon juice and salt in a large bowl and toss until the chicken is well coated. Place the chicken and the remaining liquid into a large plastic bag.
  • In another bowl, combine yogurt, almonds, ginger, garlic, paprika, garam masala, turmeric, pepper & cayenne. Mix well and pour over the chicken. Toss and coat the chicken in the mixture. Close the bag and place it in the fridge to marinate for 4 hours up to overnight.
  • Place some bamboo skewers into water and leave to soak for 30 - 45minutes.
  • Remove the chicken from the refrigerator ½ hour prior to cooking time. Leave it to come to room temperature.
  • Preheat the grill to medium high heat.
  • Place two or three pieces of chicken on each bamboo skewer. Oil the grill grate and then place the skewers down in a way that the skewers are off the heat and the chicken is on. Cook with the lid up for 7 to 8 minutes per side.
