GRILLED MEXICAN FISH FOIL PACK
Keep fish moist-and cleanup to a minimum-by grilling ingredients in individual foil packets.

Steps:
- Heat coals or gas grill for direct heat. If fish fillets are large, cut into 6 serving pieces. Place fish in heavy-duty aluminum foil bag. Mix olives, capers, tomato, onions and garlic; spoon over fish. Drizzle with lemon juice. Sprinkle with salt and pepper. Double-fold open end of bag.
- Cover and grill bag 5 to 6 inches from medium heat about 15 minutes or until fish flakes easily with fork. Place bag on serving plate. Cut large X across top of packet; fold back foil. Serve fish with lemon wedges.

GRILLED FISH IN FOIL
I adopted this recipe from the Recipezaar account. Last summer, I prepared this recipe with a few changes (as stated in the comment section below) and really enjoyed it.

Steps:
- On 4 large buttered squares of heavy-duty aluminum foil, place equal amounts of fish.
- In small saucepan, melt margarine; add lemon juice, parsley, dill weed, salt and pepper.
- Pour equal amounts over fish.
- Sprinkle with paprika; top with onion slices.
- Wrap foil securely around fish, leaving space for fish to expand.
- Grill 5 to 7 minutes on each side or until fish flakes with fork.
- Refrigerate leftovers.
GRILLED PESTO-FISH FOIL PACK
Give your fresh catch a special twist by grilling with pesto, tomatoes and olives.

- Heat gas or charcoal grill. In medium nonmetal bowl, mix tomatoes, olives and pesto.
- Place fish on 24x12-inch sheet of heavy-duty foil. Sprinkle salt and pepper over fish. Top with tomato mixture. Bring up 2 sides of foil over fish so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space on sides for heat circulation and expansion. Fold other sides to seal.
- Place on grill over medium heat. Cover grill; cook 20 to 30 minutes or until fish flakes easily with fork. Top with parsley.

GRILLED HERBED TILAPIA IN FOIL PACKETS
Steps:
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Cut a piece of heavy duty aluminum foil large enough to make an airy foil pouch to hold tilapia fillets.
- Place fillets on top of the foil and season with dill, salt, and pepper. Place chives on top of fillets, followed by butter. Seal up pouches loosely.
- Cook fillets on the preheated grill until they flake easily with a fork, 10 to 15 minutes.

FISH IN FOIL PACKETS RECIPE (GRILLED OR BAKED)!
Once you try cooking fish in foil packets, you'll absolutely love this easy method! You can grill or bake it in foil packets, and if you are grilling, the fish won't fall apart and won't fall into the grill! And best of all, no cleanup!

- If grilling, preheat the grill to Medium-High.
- If baking, preheat the oven to 400F.
- Prepare 4 sheets of foil, put them on the counter and spray with non-stick cooking spray.
- Slice the butter into 8 pieces.
- Put each fish fillet in the middle of the foil sheet.
- Sprinkle the fish with salt and pepper.
- Put 2 pieces of butter on top of each fish fillet.
- Put the lemon slices on top of the fish.
- Fold the foil up from both ends to make closed foil packets.
- If grilling, put the foil packets on the grill, close the grill and grill for 7 minutes per side.
- If baking, put the foil packets on the baking sheet, put in the oven and bake for 15 minutes.
- Unwrap 1 foil packet to check for doneness (the fish should be opaque and flake easily with a fork). If not done, wrap it back and cook the fish for 5 more minutes.
GRILLED-FISH FOIL PACKETS

- Heat grill to medium heat.
- Arrange 3 lemon slices, slightly overlapping, on half of each of 4 large sheets heavy-duty foil sprayed with cooking spray. Place fish, skinned-sides up, on work surface. Spread each with 1 Tbsp. cream cheese spread; top each with 2 tsp. onions. Roll up, starting at thin end of each fillet.
- Place 2 roll-ups, seam-sides down, on lemon slices on each foil sheet; top with asparagus and peppers. Fold each foil sheet to make packet.
- Grill 6 to 8 min. or until fish flakes easily with fork. Carefully open foil packets; top fish with remaining onions and lemon slices.

- Cut four 8x14 pieces of foil.
- .Preheat barbecue to medium.
- Brush foil with oil, fold in half (to crease), then open. On one half, layer potatoes, zucchini and mushrooms. Place Tilapia on top of vegetables. Spoon pesto over fish; sprinkle with cheese.
- Fold foil over to cover and crimp edges to seal packages. Grill packages, with lid closed, until fish is firm and opaque and vegetables are tender, 10-15 minutes. Season to taste with salt and pepper.
