This grilled meatloaf recipe is a basic, well-seasoned mixture. The meatloaf is finished with a simple BBQ sauce glaze and cooked on a grill.

1 pound ground beef (lean 85% to 90%)
1/2 pound ground pork
1/3 cup ketchup
2 teaspoons Worcestershire sauce
1 egg (large)
1 cup bread crumbs (soft)
1 cup onions (fresh or frozen finely chopped onions thawed)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Optional: barbecue sauce, for glaze

Steps:

  • Gather the ingredients.
  • Prepare a gas or charcoal grill for indirect heat. Adjust the heat on the active burner to medium heat (350 F to 375 F). In a large bowl, combine the ground beef, pork, ketchup, Worcestershire sauce, egg, breadcrumbs , onions, salt, and pepper. Mix until well blended.
  • Form the meatloaf in the center of a double sheet of heavy-duty foil. Fold up the sides of the foil to contain any juices released during grilling. Alternatively, use an aluminum loaf pan.
  • Brush the meatloaf with barbecue sauce, if using, and transfer to the grill.
  • Grill over indirect heat zone until the meatloaf registers at least 160 F on an instant-read thermometer , Note: 160 F is the minimum safe temperature for ground meat. The minimum safe temperature for ground pork is 145 F.

"WHAT YOU GOT" MEATLOAF ON THE GRILL

1 cup ketchup
1/3 cup light brown sugar
3 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 tablespoon apple cider or sherry vinegar
Freshly ground black pepper
2 pounds ground meat (I'm using beef)
1 cup breadcrumbs
1 cup peeled and grated onion (I'm using yellow)
1/2 cup fresh parsley leaves, finely chopped
1 teaspoon cayenne
1 teaspoon paprika
1/2 teaspoon spice mix (I'm using Old Bay)
5 shakes Worcestershire sauce
2 large eggs, beaten
1 head roasted garlic, mashed, recipe follows
Kosher salt and freshly ground black pepper
8 ounces smoked sausage (I'm using kielbasa), optional
3 heads garlic
3 teaspoons olive oil

Steps:

  • For the glaze: In a medium bowl, add the ketchup, brown sugar, Worcestershire sauce, mustard, vinegar and 1/2 teaspoon pepper. Whisk to combine and set aside.
  • For the meatloaf: Preheat the oven or grill to 375 degrees F. If using a gas grill, set to medium heat on one side and low on the other side. If using a charcoal grill, bank medium-hot coals on one side of the grill.
  • Prepare your pan: Line a baking sheet with foil if using an oven. If grilling, gather a sturdy grilling tray, disposable foil pan or some sheets of foil.
  • In a large bowl, add the meat, breadcrumbs, onion, parsley, cayenne, paprika, Old Bay, Worcestershire sauce, eggs and garlic. Mix the ingredients thoroughly and season well with salt and pepper.
  • Put the meat mixture on the prepared tray. Form the meat into a loaf around the kielbasa, if using, so the sausage is sealed inside. Spread the glaze over the top. Bake in the oven or on the cooler side of the grill, covered, until cooked through and the glaze is sticky, about 1 hour.
  • Serve with potatoes or a side salad or use on a sandwich.
  • Preheat the oven to 400 degrees F. Line a baking sheet with foil.
  • Remove the outer papery skin from the garlic, then cut 1/4 inch off the top of each head. Drizzle 1 teaspoon of olive oil over each head of garlic, then wrap each head in foil. Seal the foil packets and transfer to the prepared baking sheet. Roast until completely soft and caramelized, about 1 hour. Allow to cool slightly.
  • When cool enough to handle, squeeze the garlic cloves from the skin into a medium bowl and mash with a fork into a paste.

Steps:

  • Heat gas or charcoal grill for indirect cooking,.
  • Mix 1/4 cup of the ketchup and the honey in a small bowl; set aside. Mix remaining 1/4 cup ketchup, Worcestershire sauce, garlic powder, pepper and egg in large bowl. Stir in onion and breadcrumbs. Stir in beef until well mixed.
  • Shape beef mixture into 6 patties, 3/4 inch thick and about 3 1/2 inches in diameter. Wrap 1 slice bacon around each patty; secure with toothpick.
  • Carefully spray grill rack with cooking spray. Place patties on unheated side of 2 burner gas grill or over drip pan on charcoal grill (medium heat). (If using one burner gas grill, cook over low heat.) Cover grill; cook 20 to 25 minutes or until slightly pink in center. Using spatula, turn patties over. Brush with ketchup mixture. Cover grill; cook 5 to 8 minutes longer or until meat thermometer inserted in center of patties reads 160 degrees F and bacon is crisp.

Steps:

  • Heat gas or charcoal grill. Cut 6 (18x10-inch) sheets of heavy-duty foil; spray with cooking spray. In medium bowl, mix beef, dry soup mix, egg, milk and bread crumbs. Shape into 6 loaves, 4x2 1/2x1 inch. Place 1 loaf on each foil sheet; top each with about 1 tablespoon of the ketchup. Place about 1/2 cup potatoes and 1/2 cup carrots around each loaf.

1/2 cup finely minced onion
1 tablespoon butter
1 teaspoon kosher salt
3/4 cup Spicy Ketchup
2 pounds lean ground beef
1 egg, lightly beaten
20 Ritz crackers, crushed into crumbs
2 tablespoons Honey Habanero Seasoning (see note)

Steps:

  • Heat the grill to 375°F. If you are using a charcoal grill, or a gas grill that allows you to have variable heat, you will want to have one VERY HOT side with direct heat for searing, and then a side that is indirect heat for cooking.
  • In a small skillet, heat the butter over medium, add the minced onion, sprinkle with the salt, and then sauté over medium heat until the onions are soft and translucent, about 10 minutes. Let the onions cool.
  • To a large bowl add the ground beef, egg, Ritz cracker crumbs, cooled sauteed onions, and seasoning. Mix with clean hands until everything is evenly combined. Then add half of the spicy ketchup and mix until combined. Do not over-mix.
  • Divide the mixture in half and form into two uniform loaves that are not too thick.
  • Place the loaves on the DIRECT HEAT side of the grill for about 3 minutes per side. You want to seal in all the juices and form a crust so that you can easily flip the loaves.
  • After you've sealed both sides, move the loaves to the INDIRECT HEAT side of the grill and close the lid. Cook for 15 minutes, flip the meatloaves, and then spoon the remaining ketchup over the top. Close the lid and grill for about 10 more minutes or until the internal temperature reaches 160°F.
  • Let the meatloaves rest for about 5 minutes before slicing. Serve with more spicy ketchup.

1 tablespoon chopped fresh rosemary
4 celery stalks, chopped
2 carrots, chopped
1 white onion, chopped
1 pound ground bison
1 pound lean (90/10) ground pork
1 pound ground veal
1 cup grated Parmesan cheese
1/4 cup Worcestershire
3 eggs, lightly beaten
Freshly ground black pepper
1 cup ketchup
1/2 cup dark brown sugar
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
Canola oil spray, for spraying meat and rolls
12 to 15 onion slider rolls
12 to 15 slices Cheddar cheese
1/2 cup mayonnaise
12 to 15 pieces green leaf lettuce
12 to 15 thinly sliced pieces red onion

Steps:

  • For the meatloaf: Preheat the oven to 425 degrees F and line a 9-by-13-inch baking dish with foil.
  • In a small bowl, add the milk and bread and set aside. To the bowl of a food processor, add the rosemary, celery, carrots and onions. Pulse until the vegetables are medium chopped, about 15 seconds.
  • In a large bowl, combine the ground bison, pork and veal. Add in the bread mixture, chopped vegetables, Parmesan, Worcestershire, beaten eggs and some pepper and mix with your hands to combine. Continue to mix the meat for about 2 minutes or until the seasoning and vegetables are evenly distributed. Place the meatloaf mixture into the lined baking sheet and gently shape into a flat football.
  • For the glaze: In a medium bowl, whisk together the ketchup, brown sugar, Dijon mustard and apple cider vinegar.
  • Spread the glaze evenly over the surface of the meatloaf. Bake for 40 minutes. Let cool for 10 minutes before cutting.
  • For the sandwiches: Preheat a grill to medium high.
  • Spray the meatloaf pieces with canola spray and place on the grill for 3 minutes per side. Spray the insides of the onion rolls with canola spray and grill for 1 minute per side. Transfer the grilled meatloaf and rolls to a plate and assemble the sandwiches. Begin with a roll, top with cheese, some mayonnaise, a piece of lettuce and onion and a slice of tomato. Add a piece of meatloaf and serve immediately.

These burgers are super flavorful and have the same tenderness and meatloaf. If you like a more firm burger, leave out the milk when making the mix. The sauce is great and we will sometimes double the sauce recipe so we'll have extra for dipping fries or other goodies into. You can also cook these on a skillet over medium-high heat.

Steps:

  • If grilling, preheat grill (on high if you have that option). Scrape grill grates clean to minimize sticking.
  • In a large bowl combine all the meatloaf ingredients (beef, bread crumbs, egg, parsley, onion, garlic, Worcestershire sauce, mustard powder, salt, pepper, ketchup or tomato sauce, and milk). Cook a small piece of the meat at the point to taste for seasonings. If you want to add more salt/pepper, add it now before baking.
  • Form the meat into 6 patties, they will be a little softer than traditional burger patties (we'll often use wax paper to help separate them later.)
  • Make the sauce: combine all the sauce ingredients (ketchup, bbq sauce, apple cider vinegar, brown sugar, smoked paprika, and chipotle) and pour over the top and top edges of the meatloaf.
  • Lighly oil grill grates. Cook patties for about 3 minutes on the first side. Carefully flip the patties (they will be more tender than a traditional burger), and then coat the topside with sauce. Continue cooking for another 3 minutes, or until cooked through. Toast the buns and serve with additonal sauce & your desired burger toppings.

MEATLOAF ON THE GRILL

We don't eat beef so we use ground pork and ground turkey for this, but you could use any ground meat you'd like. This is a fun way to cook a meatloaf that is great for a hot summer day when you don't want to turn on the oven. We use a charcoal grill. I usually don't measure the seasoning, so go by your own tastes.

  • Preheat an outdoor grill for medium heat.

3 tablespoons mustard
2 tablespoons mayonnaise
4 slices leftover meatloaf
8 slices Swiss or Havarti cheese
3 tablespoons butter, softened

Steps:

  • Place the bread on work surface. Cut the bread in half horizontally; spread open. Butter cut sides of bread sparingly. Or use slices of any type of your favorite bread; butter them.
  • Place 1 cheese slice on half of the bread slices, then top with the meatloaf slices; top with cheese. Top with remaining bread slices, buttered side down. Spread the outsides of the sandwiches with more softened butter. Press down on sandwiches with the palm of your hand.
  • Grill the sandwiches on dual contact indoor grill for 4 to 5 minutes until bread is crisp and golden, or grill on regular griddle, turning once and pressing down with a spatula, for 7 to 9 minutes or until bread is crisp, the meatloaf is thoroughly heated, and the cheese is melted.

2 cups dry bread crumbs
1 cup finely chopped sweet onion (such as Vidalia®)
1 egg, beaten
1 teaspoon Worcestershire sauce
1 teaspoon minced garlic
1 teaspoon dried tarragon
1 teaspoon sea salt
1 teaspoon ground black pepper
½ cup barbeque sauce
½ cup ketchup

Steps:

  • Preheat an outdoor grill for medium heat, and scrape the grates clean. Spray grates with nonstick cooking spray.
  • In a bowl, mix together the ground beef, ground pork, bread crumbs, onion, egg, Worcestershire sauce, garlic, tarragon, sea salt, and black pepper. Healthy Grilled BBQ Meatloaf Foil Pack image

What makes this low-fat BBQ meatloaf speedier than the typical oven version? The reflective surface of the foil packet, which traps and intensifies the heat like a mini silver oven. Plus the loaf is slightly thinner, so it cooks more quickly while maintaining a flavorful char on the surface.

Number Of Ingredients 12

¼ cup 2% milk
1 large egg
3 tbsp whole-wheat breadcrumbs
1 tbsp Worcestershire sauce
4 tbsp barbecue sauce
2 cups baby spinach
2 scallions, trimmed
1 large clove garlic
12 ounce lean ground beef
8 ounce 99-percent fat-free ground turkey
Kosher salt and freshly ground black pepper
Nonstick cooking spray

Steps:

  • Prepare a grill for medium-high heat.
  • Stir together the milk, egg, breadcrumbs, Worcestershire sauce and 1 tablespoon of the barbecue sauce in a medium bowl.
  • Finely chop the spinach, scallion and garlic together on a cutting board. Transfer to the bowl, along with the ground beef and turkey, 1 teaspoon salt and several grinds of black pepper. Gently combine the mixture well with your hands.
  • Coat a 20-inch piece of heavy duty aluminum foil all over with cooking spray. Pile the meatloaf mixture onto the foil just off the center and form into a 9-by-5-inch loaf that's about 1-inch thick. Fold the long half of the foil over the meatloaf, lining up the edges, and crimp and fold tightly to make a sealed packet.
  • Put the packet on the grill, close the grill lid and cook for 10 minutes. Turn the packet over using 2 large metal spatulas; cover and grill 10 minutes more. Remove and let rest for 5 minutes. Carefully open the packet (hot steam will escape). The meatloaf should have some grill marks and an internal temperature of 165°F. Brush the top and sides of the loaf with the remaining 3 tablespoons barbecue sauce. Cut into slices and serve.
