GRILLED SALMON WITH MANGO SALSA AND COCONUT RICE



Grilled Salmon with Mango Salsa and Coconut Rice image

Here you have one of the ultimate summer meals! Flaky tender salmon is topped with a bright and creamy mango avocado salsa and served alongside of bed or rich coconut rice. Sure to impress anyone lucky enough to try it!

4 (6 oz) skinless salmon fillets
3 Tbsp olive oil, (plus more for grill)
2 tsp lime zest
3 Tbsp fresh lime juice
3 cloves garlic, (crushed)
Salt and freshly ground black pepper, (to taste)
1 1/2 cups Zico Coconut Water
1 1/4 cups canned coconut milk
1 1/2 cups jasmine rice, (rinsed well and drained well)
1/2 tsp salt
1 large mango, (peeled and diced)
3/4 cup chopped red bell pepper ((1/2 large))
1/4 cup chopped fresh cilantro
1/3 cup chopped red onion, (rinsed under water and drained)
1 large avocado, (peeled and diced)
1 Tbsp fresh lime juice
1 Tbsp olive oil
1 Tbsp Zico Coconut Water
Salt and pepper, (to taste)

Steps:

  • In an 11x7-inch baking dish whisk together olive oil, lime zest, lime juice, garlic and season with salt and pepper to taste (a fair amount of each).
  • Place salmon in baking dish, cover and allow to marinate in refrigerator 15 - 30 minutes, then flip salmon to opposite side and allow to marinate 15 - 30 minutes longer. Preheat a grill over medium-high heat during last 10 minutes of marinating.
  • Brush grill grates with oil. Place salmon on grill and grill about 3 minutes per side or until just cooked through (turn carefully as the salmon will be fragile).
  • While salmon is marinating prepare coconut rice. In a medium saucepan bring coconut water, coconut milk, rice and salt to a full boil.
  • Cover and simmer until liquid has been absorbed (there may be just a little bit of excess liquid in center which you can drain off), about 20 minutes. Fluff with a fork, then let rest 5 minutes.
  • While the salmon is grilling prepare salsa. In a medium bowl toss together mango, bell pepper, cilantro, red onion, avocado, lime juice, olive oil and coconut water. Season with salt and pepper to taste.
  • Serve salmon warm with coconut rice top with avocado mango salsa.

1/2 cup sliced yellow onions
1/4 cup olive oil
2 tablespoons orange juice
2 tablespoons lime juice
2 tablespoons fresh cilantro
5 cloves garlic, smashed
1 teaspoon salt
1 teaspoon cumin
Pinch cayenne
4 (6 to 8-ounce) troll-caught mahi mahi fillets, skin on
Coconut Rice, recipe follows
Tropical Salsa, recipe follows
Toasted coconut flakes, garnish
Chopped cilantro, garnish
1 cup coconut milk
1 1/2 cups water
1 teaspoon salt
3/4 teaspoon sugar
1 cup long grain white rice
3 tablespoons chopped fresh cilantro
1 ripe mango, peeled, seeded, and diced
1 ripe avocado, peeled, seeded, and diced
1/2 cup diced fresh pineapple
1/4 cup minced red onions
1/4 cup minced red bell peppers
3 tablespoons chopped fresh cilantro
1 tablespoon fresh lime juice
2 teaspoons minced jalapeno
1 teaspoon minced garlic
Pinch salt

Steps:

  • In a bowl, combine the onions, oil, orange and lime juices, cilantro, garlic, salt, cumin, and cayenne. Place the fish in a large, non-reactive baking dish. Pour the marinade over the fish, cover and refrigerate for up to 1 hour.
  • Preheat a grill, and lightly oil the grill rack with vegetable oil. Remove the fish from the marinade. Place on the oiled grill and cook, skin side up, until marked, 45 seconds to 1 minute. Turn carefully with a spatula and cook, skin side down, until the fish is just cooked through, about 4 minutes, depending upon thickness. Remove from the grill.
  • Spoon the coconut rice into the center of 4 large plates. Arrange 1 fillet onto each serving of rice and top with the Tropical Salsa. Garnish with toasted coconut and cilantro, and serve.
  • In a saucepan, combine the coconut milk, water, salt, and sugar. Bring to a boil. Add the rice, stir well, and reduce the heat to medium-low. Cover and simmer undisturbed until the liquid is absorbed and the rice is fluffy, about 20 to 24 minutes. Remove from the heat and let sit without stirring for 10 minutes.
  • Fluff with a fork and add the cilantro. Adjust seasoning, to taste. Serve hot.
  • Combine the mango, avocado, pineapple, onions, bell peppers, cilantro, lime juice, jalapeno, garlic, and salt in a bowl and gently fold to combine. Adjust seasoning to taste. Let sit for 30 minutes before serving for the flavors to blend.

I made this with my Make Ahead Meatballs, Recipe #457810, the other night and I have a feeling I'll be cooking my rice with coconut milk a lot from now on. The rice can be made without the fruit as well, it is so delicious and creamy. This is a lovely side served with grilled chicken, fish or pork.

1 large mango, firm but ripe
1 sweet red pepper
398 ml coconut milk
284 ml low sodium chicken broth, undiluted
sea salt, to taste
fresh ground pepper, to taste
15 ml olive oil
340 ml brown basmati rice
3 green onions, sliced

Steps:

  • Oil grill and preheat barbecue to medium-high.
  • Peel mango, slice from stone in thick pieces. Slice pepper in half, then core and seed.
  • Grill pepper until lightly charred, about 3 to 4 minutes per side.
  • Grill mango until hot, about 2 minutes per side.
  • Remove fruit from grill and cut into bite-size pieces. (Can be prepared up to 1 day ahead, then refrigerate covered. Reheat before serving).
  • Preheat oven to 350°F.
  • Grease a loaf pan or small casserole (preferably glass or stoneware) with 5 ml of olive oil.
  • Add rice to pan and drizzle with remaining olive oil.
  • In a medium saucepan, stir together coconut milk, chicken broth, sea salt and fresh ground pepper. Bring to a boil.
  • Pour hot liquid over rice, stir just enough to get all the rice wet, cover tightly with foil.
  • Bake one hour or until all liquid is absorbed.
  • Remove from oven and rest 5 minutes before uncovering. Fluff with a fork.
  • Serve rice with mango, pepper and green onion slices.

Go to Mexico and you will find vendors, either with carts in the city or baskets on the beaches, selling cups of fresh fruit and vegetables served up with a squeeze of lime, a sprinkling of salt and a dash of chile powder. The combination may seem odd at first to the North American palate but the combination of sweet, sour, salty and spicy flavors is addictive. Grilling the mango intensifies its natural honeyed sweetness, adding another dimension to an already simple but powerful play of flavors.

4 ripe mangoes
2 tablespoons canola oil
Juice of 1 lime
1 teaspoon fine sea salt
1/4 teaspoon ancho or New Mexican chile powder
Finely grated zest of 1 lime
Fresh cilantro leaves, for garnish, optional

Steps:

  • Heat the grill to medium for direct grilling. Slice the mangoes in 2 pieces from the pit. Score the flesh of the mangoes in a diamond pattern, taking care not to cut into the skin. Pop the flesh by holding the skin side and pushing up. Brush the flesh with the oil and grill, cut-side down, until slightly charred, about 1 minute.
  • Transfer the mangoes to a platter and immediately drizzle with the lime juice and sprinkle with the salt, chile powder and lime zest. Garnish with cilantro leaves if desired.

4 Mahi Mahi fillets (about 1-inch thick)
3/4 cup cilantro, chopped, divided
2 1/2 Tbsps fresh ginger root, grated (divided)
1 large mango, peeled, seeded, diced
1/4 cup brown sugar
2 Tbsps lime juice
1 can (14 oz.) light coconut milk, divided
Rice:
1 cup Mahatma® Jasmine Rice
1/2 cup water

Steps:

  • In a large bowl, combine ½ cup cilantro, 1½ tablespoons ginger, diced mango, brown sugar, lime juice and 6 ounces lite coconut milk. Reserve one cup of this mixture, cover and refrigerate. Purée remaining mixture. Place fish fillets in large plastic or glass dish. Pour puréed mixture; cover and refrigerate at least 1 hour. Preheat grill to medium heat and lightly coat grill rack with oil or cooking spray. Remove fillets from marinade and place on prepared grill rack. Cook the fish, brushing several times with puréed marinade, until it is cooked through and opaque in the center, turning fish after 4 to 5 minutes, until desired doneness. In a medium saucepan combine rice, water, remaining coconut milk, and remaining ginger and bring to a boil. Reduce heat and simmer on low heat for 15 minutes. Fluff with a fork and stir in remaining cilantro. To serve, divide rice evenly on the center of four plates. Top with one cooked fish fillet. Spoon 1/4 cup reserved marinade/salsa over fish. Garnish with fresh cilantro, if desired.

I have yet to try this myself, but I have enjoyed other fruits made this way so why not mangos! I think these would be nice in a salad, in salsa or just served as-is after a meal.

1/3 cup organic sugar (aka evaporate cane juice, any natural sugar should work)
2/3 cup water
2 inches gingerroot, sliced thin
3 ripe mangoes, peeled pitted and sliced
3 tablespoons Earth Balance margarine

Steps:

  • Combine sugar, water and ginger in a small saucepan and heat until the sugar is dissolved.
  • Remove from the heat and let cool; when the syrup is completely cooled, remove and discard the ginger. While that cools you can cut up your mangos and melt the margarine/butter.
  • Brush the mango slices with melted margarine/butter and grill until slightly charred (2-3 mnutes), turning once.
  • Place the mangos in a bowl, add the syrup, cover and let cool.
  • When ready to serve, cut the mango into bite-sized chunks or whatever size you need.

1 tablespoon butter
1 large sweet onion (such as Vidalia or 1 red onion, chopped)
2 tablespoons fresh ginger, minced
2 minced garlic cloves (optional)
1 1/2 cups long-grain rice
14 ounces light unsweetened coconut milk
2 cups water
2 teaspoons salt
1/2 teaspoon curry powder (optional)
1 mango
1 sweet red pepper
1 green onion
2 tablespoons lime juice or 2 tablespoons lemon juice, freshly squeezed
1/2 cup coriander leaves, coarsely chopped (optional)

Steps:

  • In a large saucepan, melt butter over medium heat.
  • Add sweet onion, ginger and garlic, if using.
  • Cook until softened, about 5 minutes.
  • Add rice and stir until grains are coated with butter.
  • Shake can of coconut milk; add to rice along with water, salt and curry, if using.
  • Cover and bring mixture to a boil.
  • Stir and reduce heat to low; Simmer, covered, for 20 minutes.
  • Meanwhile, peel mango and slice into thin bite-size strips or chop, then place in a bowl.
  • Seed and chop pepper, slice green onions in half, lengthwise, then into 1-inch (2.5-cm) pieces; Add to mango and stir in lime juice.
  • After rice has cooked 20 minutes, stir in mango mixture.
  • Cover, remove from heat and let stand for 5 minutes to warm mango.
  • Serve scattered with coriander, if you wish.
  • A nice way to present this dish is to lightly pack rice mixture into a small rounded bowl or cup, then turn out onto a plate and top with coriander.
