4 teaspoons olive oil
4 teaspoons lemon juice
1 tablespoon drained capers
1 tablespoon Dijon mustard

1/8 teaspoon cayenne pepper

Steps:

  • Place each salmon fillet on a double thickness of heavy-duty foil (about 12 in. square). Combine the remaining ingredients; spoon over salmon. 1 bunch asparagus (chopped into thirds)
1 red pepper (chopped into 1 inch pieces)
1 zucchini (sliced)
1 yellow squash (sliced)

½ cup butter (room temperature)
¼ cup freshly chopped parsley
4 garlic cloves (minced)
1 teaspoon fresh rosemary (chopped)
1 teaspoon fresh thyme (chopped)
½ teaspoon salt
¼ teaspoon pepper

Steps:

  • Place four 18x12-inch pieces of heavy aluminum foil on counter. Place the salmon fillets in the center and evenly place vegetable mixture on each piece of foil.
  • To make the garlic herb butter: In a small bowl add the butter, parsley, garlic, rosemary, thyme, salt and pepper. Divide evenly and place on top of the salmon. Double fold top and ends of each piece of foil, leaving space for steam to gather.
  • Place packets on the grill and cover. Grill or bake at 400 degrees for 15-20 minutes or until salmon is cooked through and veggies are tender. Carefully open packets and serve.

4 Fresh Small Dill Sprigs

Steps:

  • Heat your grill.
  • Place one salmon fillet onto a sheet of aluminum foil. Season it with salt and black pepper and top with 1 slice of lemon dill compound butter (see note 2) and a sprig of fresh dill. Wrap well so there are no holes. Repeat with the rest of the fillets.

2 tablespoons vegetable oil
1/2 teaspoon salt

1 lemon
1 pound new potatoes, preferably a mix of yellow and red, halved
1 medium onion, thickly sliced
4 garlic cloves, crushed and peeled
3 tablespoons fresh oregano leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
4 ounces feta, cut into 1/2-inch cubes
2 tablespoons chopped fresh parsley leaves

Steps:

  • Prepare a grill to medium-high heat (about 450 degrees F). Halve the lemon. Cut one half into quarters and thinly slice. Set the other half aside.
  • Add the sliced lemon to a large bowl along with the potatoes, onion, garlic, oregano, red pepper flakes, 1 teaspoon salt and a generous grinding of black pepper. Drizzle with the olive oil and toss well.
  • Spread the potatoes in the middle of a piece of heavy-duty aluminum foil that's about 30 inches long. Scatter the feta cubes over top. Bring up the long sides of the foil and fold a seam in the center. Fold the ends in to seal the ingredients; make the seal as airtight as you can, but don't wrap the ingredients to snuggly; you want some room for the air to circulate around them as they cook.
  • Place the packet on the grill grate. Grill, covered, moving the packet occasionally so it cooks evenly, until the potatoes are caramelized and cooked through, 20 to 25 minutes. (You should be able to hear the potatoes sizzling in the packet as they cook.)
  • Carefully unwrap the potatoes and squeeze the remaining lemon half over top. Serve sprinkled with parsley.

907 g side salmon, boneless and skinless
4 tablespoons butter
8 garlic cloves, peeled and roughly chopped
1/4 cup dry white wine
2 tablespoons freshly-squeezed lemon juice, plus extra lemon wedges for serving
salt and pepper
1/4 cup chopped fresh Italian parsley
1/4 cup thinly-sliced green onion

Steps:

  • Heat oven to 375°F. Or heat a grill to medium heat.
  • Line a large baking dish with a large piece of aluminum foil.
  • In a small saucepan, heat butter over medium-high heat until melted. Stir in the garlic and cook for 1-2 minutes until fragrant. (You want the garlic to be partly- but not fully-cooked.) Remove from heat and stir in the white wine and lemon juice.
  • Using a pastry brush, brush a tablespoons of the butter mixture on the foil until it is evenly covered. Lay the salmon out on the foil. Then pour the remainder of the butter-garlic mixture on top of the salmon and brush it around until it evenly covers the salmon. Season the salmon evenly with a few generous pinches of salt and pepper.
  • Fold the sides of the aluminum foil up and over the top of the salmon until it is completely enclosed. (If your sheet of foil is not large enough, just place a second sheet of foil on top and fold the edges so that it forms a sealed packet.
  • TO COOK IN THE OVEN: Bake for 14-15 minutes, or until the salmon is almost completely cooked through. (Cooking times will vary on the thickness of your salmon, so I recommend checking it a few minutes early if you have a thinner cut of salmon.) Remove the salmon from the oven and carefully open and pull back the aluminum foil so that the top of the fish is completely exposed. (Be careful, lots of hot steam will be released!) Change the oven setting to broil, then return the fish to the oven and broil for 3-4 minutes, or until the top of the salmon and the garlic are slightly golden and the fish is cooked through. (Keep a close eye on the salmon while broiling, though, to be sure that the garlic does not burn.).
  • TO COOK ON THE GRILL: Carefully transfer the packet of salmon to the grill, and grill for 12-14 minutes, or until the salmon is almost completely cooked through. (Cooking times will vary on the thickness of your salmon, so I recommend checking it a few minutes early if you have a thinner cut of salmon.) Carefully open and pull back the aluminum foil so that the top of the fish is completely exposed. (Be careful, lots of hot steam will be released!) Continue cooking for 3-4 minutes, or until the top of the salmon and the garlic are slightly golden and the fish is cooked through.
  • Remove salmon from the oven or grill. Sprinkle the top of the salmon evenly with parsley and green onions, and serve immediately.

1.25 pounds skin-on salmon fillet
1 lemon, sliced into thin rounds
1/4 cup unsalted butter, melted
1/4 cup honey
3 tablespoons lemon juice (from about 1 lemon)
1 teaspoon kosher salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
2 teaspoons finely chopped fresh parsley, optional for garnishing

Steps:

  • Preheat outdoor grill to medium-high heat. Alternatively, preheat oven to 425F.
  • Place salmon on a sheet of foil (with the longer side parallel with the longer side of the sheet pan) with the skin-side down. Raise the edges of the foil up about 2 inches (or enough so that when you pour the buttery mixture over the top it will be contained in the foil).
  • Nestle lemon slices underneath the salmon, spaced evenly around the fillet; set aside.
  • To a microwave-safe glass measuring cup or bowl, add the butter and heat on high power to melt, about 1 minute.
  • Stir in the honey and lemon juice. Pour or spoon about three-quarters of the mixture over the salmon; reserve remainder.
  • Evenly season salmon with salt and pepper.
  • Seal up the foil. Likely you will need to add another sheet of foil on top in order to seal it. Crimp or pinch the top and bottom pieces of foil together; get it as air-tight as possible but it doesn't have to be perfect.
  • If you have time, set aside to marinate for about 10 to 15 minutes (enhanced flavor).
  • Place foil pack on the grill and cook for about 7 minutes, or until done.
  • Optionally, if you want additional browning on the top of the salmon, set your oven to Hi broil.
  • Open the foil pack or remove the top piece of foil so the salmon is exposed but keep the edges raised to contain the buttery mixture.
  • Spoon the reserved buttery mixture over the salmon, if desired. Use your judgment and if there's already lots of juice you don't need to add it because you don't want it to start leaking. If you have extra buttery mixture, it's great served over the finished dish.
  • Broil salmon for about 5 minutes, or until salmon is as golden as desired. Tip - You don't have to broil on the top rack, you can use the second rack, and while it will take longer, there's less chance of it burning. Keep a close eye on it because all broilers are different and you don't want the salmon to burn. Exact broiling time will depend on the size and thickness of the salmon, climate and oven variances, and personal preference.
  • Optionally garnish with parsley and serve immediately.

1 teaspoon sea salt

1 medium potato, sliced into very thin rounds about 1/16th-inch thick, divided
4 tablespoons olive oil, divided
salt and pepper, divided
2 salmon fillets, about 170 g each
1 large orange, halved
1 lemon, halved

Steps:

  • Preheat oven to 400F/200°C To a 12-inch long sheet of foil (I use Reynold's Heavy Duty Non-Stick), add half the potato slices in a pile in the center of foil. Slightly fan out the potatoes so air can circulate. Make sure potatoes are sliced very thin so they cook through in the same amount of time it takes the salmon to cook.
  • Evenly drizzle the potatoes with about 1 tablespoon of olive oil, season with salt and pepper, and repeat process with another sheet of foil and the remaining potato slices.
  • Top each pile of potatoes with 1 salmon filet.
  • Evenly drizzle each salmon filet with about 1 tablespoon olive oil.
  • Squeeze half the juice of the orange over one salmon filet and half the juice over the other filet.
  • Squeeze half the juice of the lemon over one salmon filet and half the juice over the other filet.
  • Season each salmon filet with salt and pepper.

One 1 1/2-pound piece center-cut skinless salmon fillet
4 tablespoons (1/2 stick) unsalted butter, melted
1 tablespoon dried Italian seasoning

Steps:

  • Prepare a grill for medium-high heat.
  • Toss the onion, lemon and garlic with a generous pinch each of salt and pepper. Spread the mixture in the center of a 24-inch-long piece of heavy-duty foil. Put the salmon on top of the onion mixture, drizzle with the butter and sprinkle with the Italian seasoning and a generous amount of salt and pepper. Bring the 2 long sides of foil together and fold over twice to seal. Bring the ends of the foil in and crimp to seal, leaving a bit of room for steam to circulate inside.
  • Place the packet on the grill and cook for 10 to 15 minutes. Careful of the steam, open the packet and check the salmon. It should be mostly opaque with a slightly rosy center. Transfer the package to a cutting board and set aside for about 5 minutes.
  • Cut the salmon into 4 equal pieces and transfer to 4 plates. Evenly spoon the onions, lemons and collected juices over the salmon.

Steps:

  • 1. Combine the vegs., oil, and lemon pepper. Mix well
  • 2. Divide the vegs. among the pcs. of foil
  • 3. Place a Salmon filet on top of vegs. Sprinkle with lemon pepper and top with a pat of butter. Top with a slice of lemon and 1 clove of the crushed garlic.
  • 4. Fold up sides of foil creating a packet, leaving a little air space on top for steam.
  • 5. Grill on medium high flame for 10 - 20 mins.

Olive oil, for brushing
3/4 teaspoon kosher salt
1/4 teaspoon each garlic powder, onion powder, cumin
8 lemon wedges
Fresh herbs, for garnish (oregano, chives, basil, parsley, tarragon, etc)

Steps:

  • Preheat a grill to medium-high heat (375 to 450 degrees).
  • Place a large sheet of aluminum foil on a baking sheet and brush it with olive oil. Pat each piece of salmon dry and place it on the foil. Sprinkle the salmon with the salt, garlic powder, onion powder, and cumin (add a few grinds of black pepper if you like). Close the foil and seal it around the salmon.
  • Place the packet directly on the grill grates and cook for 6 minutes. Then carefully open the packet and release the steam. Cook additional 1 to 5 minutes, depending on thickness, until just tender and pink at the center (the internal temperature should read between 125 to 130F when a food thermometer is inserted in the thickest part of the salmon).
  • Meanwhile, grill the lemon wedges directly on the grill grates, cut side down, until blackened. (This doesn't affect flavor too much, but gives a nice charred look to the lemons.)
  • Generously spritz the cooked salmon with the lemon. Top with fresh herbs and serve. Leftovers keep up to 3 days in the refrigerator.
