SESAME SUMAC PAN FRIED LAMB CHOPS



Sesame Sumac Pan Fried Lamb Chops image

Juicy pan fried lamb chops seasoned with sumac and sesames served with whipped feta and caramelized lemon. A simply spectacular dinner recipe.

500 g (1lb) lamb chops
2 tbsp olive oil
2 tbsp lemon juice
1 tsp sumac
2 tsp sesame seeds
½ tsp garlic powder
2 tsp dried mixed herbs
2 tsp salt
1 tsp pepper
1 lemon (sliced)
2 tbsp honey
1 cup feta cheese
1-2 tbsp cream

Steps:

  • Place the lamb chops in a dish suitable for marinating.
  • Stir together the olive oil, lemon juice, sumac, sesame seeds, garlic powder, herbs, salt and pepper.
  • Pour over the lamb and marinade for at least 10 minutes but up to 24 hours covered in the refrigerator.
  • Heat a large frying pan over medium-high heat.
  • Add the lamb chops and cook for 3-4 minutes per side, depending on thickness.
  • Flip onto the fat cap and cook for another 2-3 minutes until the fat is golden brown and crisp.
  • Add the lemon slices and cook for a minute per side.
  • Turn the lamb chops back onto their sides then drizzle over the honey and allow to caramelize for a minute or two.
  • Place the feta in the bowl of a food processor and pour in the cream. Blend until smooth.
  • Dollop the feta onto a serving platter and smear across the plate with the back of a spoon. Top with the lamb chops then add the lemon slices and scatter over the coriander/cilantro. Serve with flatbread or naan.

2 large garlic cloves, crushed
1 tablespoon fresh rosemary leaves
1 teaspoon fresh thyme leaves
Pinch cayenne pepper
Coarse sea salt
2 tablespoons extra-virgin olive oil
6 lamb chops, about 3/4-inch thick

Steps:

  • In a food processor fitted with a metal blade add the garlic, rosemary, thyme, cayenne, and salt. Pulse until combined. Pour in olive oil and pulse into a paste. Rub the paste on both sides of the lamb chops and let them marinate for at least 1 hour in the refrigerator. Remove from refrigerator and allow the chops to come to room temperature; it will take about 20 minutes.
  • Heat a grill pan over high heat until almost smoking, add the chops and sear for about 2 minutes. Flip the chops over and cook for another 3 minutes for medium-rare and 3 1/2 minutes for medium.

3/4 cup apricot jam
2 teaspoons balsamic vinegar
2 tablespoons coarsely chopped fresh mint
2 tablespoons coarsely chopped fresh parsley, plus whole leaves for garnish
Kosher salt and freshly ground black pepper
Eight 4 to 5-ounce lamb porterhouse chops
2 tablespoons canola oil
1/4 cup shelled, lightly toasted pistachios, coarsely chopped
1 teaspoon ground sumac

Steps:

  • Preheat a charcoal grill to high heat using the direct heat method.
  • Whisk together the jam, vinegar, mint, parsley and season with salt and pepper.
  • Brush the chops with oil on both sides and sprinkle with salt and pepper. Put the chops on the grill and cook until golden brown and slightly charred, about 3 minutes. Flip over, brush with glaze and continue cooking until cooked to medium-rare doneness, about 3 minutes longer, brushing with more of the glaze.
  • Remove to a platter and sprinkle with the pistachios, sumac and parsley leaves.

¼ cup distilled white vinegar
2 teaspoons salt
½ teaspoon black pepper
1 tablespoon minced garlic
1 onion, thinly sliced
2 tablespoons olive oil
2 pounds lamb chops

Steps:

  • Mix together the vinegar, salt, pepper, garlic, onion, and olive oil in a large resealable bag until the salt has dissolved. Add lamb, toss until coated, and marinate in refrigerator for 2 hours.
  • Preheat an outdoor grill for medium-high heat.
  • Remove lamb from the marinade and leave any onions on that stick to the meat. Discard any remaining marinade. Wrap the exposed ends of the bones with aluminum foil to keep them from burning. Grill to desired doneness, about 3 minutes per side for medium. The chops may also be broiled in the oven about 5 minutes per side for medium.

1/4 cup red wine vinegar
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh thyme
2 cloves garlic, minced
1 tablespoon olive oil
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
8 lamb loin chops

Steps:

  • About 4 hours before you wish to serve dinner, prepare marinade: in a mixing bowl, whisk together the vinegar, fresh herbs and garlic, oil, salt and pepper.
  • Pour this mixture into a large zip-lock freezer bag, add lamb chops, squeeze out all the air and seal; place in a glass dish and refrigerate, turning it over at least once; let marinate for three to four hours.
  • Alternatively, if you don't have a zip-lock bag, marinate lamb chops in a covered glass dish.
  • Shortly before you wish to serve dinner, grease grill rack and preheat grill to medium-high heat.
  • Reserve marinade and place chops on preheated greased grill and cook, with a closed lid, for about 15 minutes for medium-rare-- baste with reserved marinade and turn once during cooking.
