Grilled Lamb Chops with Chimichurri Sauce image

Grilled lamb chops are an easy dinner that you can have ready to eat in 10 minutes! A chimichurri marinade adds the flavour of fresh herbs to the juicy chops. This grilling recipe makes a delicious summer dinner.

8 lamb chops
Salt and black pepper to taste
chimichurri sauce (plus more for serving)
1 tbsp olive oil

Steps:

  • In a freezer bag or silicone bag (this is my favourite one), add lamb chops, salt and pepper and ¼ cup of chimichurri sauce. Close the bag and shake until lamb chops are coated with the marinade sauce. Set aside for about 1 hour on the kitchen counter top.
  • Preheat cast iron pan or grill over medium heat. I like to use my cast iron because my lamb chops were small.
  • Pour olive oil to pan if using pan and place lamb chops on it.
  • Cook for about 3 minutes on every side of the lamb without touching of flipping. Lamb chops will be cooked when chops get the internal temperature of 140°F in the thickest part.
  • Transfer the chops to a platter and drizzle with the rest of the chimichuri sauce over them. Serve with tomato sauce and grilled veggies. Enjoy!

2 (2-lb.) racks of lamb (8 bones each), frenched
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon black pepper
1 ¼ teaspoons kosher salt, divided
6 tablespoons olive oil, divided
5 small green garlic stalks or large scallions
⅓ cup chopped fresh flat-leaf parsley
2 tablespoons red wine vinegar
¼ teaspoon crushed red pepper
1 medium garlic clove, grated (¼ tsp.)

Steps:

  • Preheat grill to medium-high (400°F to 450°F). Cut lamb racks between bones to form 16 rib chops total. Stir together cumin, coriander, black pepper, and 1 teaspoon of the salt in a small bowl. Brush both sides of lamb chops evenly with 1½ tablespoons of the oil; sprinkle evenly with cumin mixture. Let stand at room temperature 15 minutes.
  • While lamb stands, drizzle garlic stalks evenly with 1½ teaspoons of the oil in a bowl; toss gently to coat. Arrange garlic stalks on oiled grates; grill, uncovered, turning often, until lightly charred, 4 to 5 minutes. Transfer to a cutting board; let cool slightly, about 3 minutes.
  • Stir together parsley, vinegar, crushed red pepper, grated garlic, and remaining ¼ teaspoon salt and ¼ cup oil in a medium bowl. Chop grilled garlic stalks, and stir into parsley mixture.
  • Place lamb chops on oiled grates; grill, covered, just until grill marks appear, about 2 minutes per side. Serve lamb alongside chimichurri.

GRILLED PORK CHOPS WITH GREEN BEANS AND CHIMICHURRI



Grilled Pork Chops with Green Beans and Chimichurri image

Pork, green beans and tomatoes simply grilled and served with a garlic-herb oil.

12 ounces green beans, trimmed
2 cups grape tomatoes, halved
2 tablespoon olive oil, plus more for the grill grates
Kosher salt and freshly ground black pepper
4 bone-in pork chops (about 3 pounds total)
1/4 cup mixed fresh herbs, such as parsley, mint and/or cilantro leaves
1 tablespoon red-wine vinegar
1/2 small garlic clove

Steps:

  • Preheat an outdoor grill to medium-high heat.
  • Put a double layered piece of heavy-duty foil on a baking sheet or cutting board. Fold and gather the edge to form a rim all around. Toss the green beans and tomatoes on the foil with 1 tablespoon olive oil and sprinkle with salt and pepper.
  • Lightly oil the grill grates. Slide the foil tray onto one side of the grill and cook, tossing occasionally, until the beans char slightly and are tender and the tomatoes begin to burst, about 15 minutes. Meanwhile, sprinkle the pork chops all over with 1/2 teaspoon each salt and pepper. Grill until the pork chops are just slightly pink near the bone, 6 minutes on the first side and 4 to 5 minutes on the second side. Transfer the pork chops to a cutting board to rest for about 5 minutes.
  • Combine the herbs, vinegar, garlic, remaining 1 tablespoon olive oil and 1 tablespoon water in small food processor and pulse until herbs are coarsely chopped. Season with salt and pepper. Serve the pork chops with the green beans and tomatoes and chimichurri sauce.

1 dozen individual lamb chops
Salt and pepper
FOR THE MARINADE
1 cup Tom Gore Vineyards Cabernet Sauvignon
1/2 cup olive oil
1/4 cup soy sauce
2 tablespoons spicy Dijon mustard
1/4 cup onions, chopped
1/4 cup green garlic, chopped
2 sprigs fresh thyme
1 teaspoon black pepper
FOR THE MINT CHIMICHURRI
1/4 cup green garlic, finely minced
3 tablespoons capers, finely minced
5 anchovies, finely minced
1 shallot, finely minced
1 cup fresh parsley, finely chopped
1/2 cup fresh mint, finely chopped
1/2 cup fresh oregano, finely chopped
1/4 cup fresh tarragon, finely chopped
1 tablespoon red pepper flakes
1/3 cup red wine vinegar
1 cup extra virgin olive oil
2 teaspoons black pepper
1 teaspoon kosher salt

Steps:

  • Combine all marinade ingredients together and cover lamb chops. Refrigerate and let marinade for 12 hours.
  • Remove chops from marinade and sprinkle with salt.
  • Grill over high heat. About 2 minutes on each side. Let rest for 5 minutes before serving.
  • For chimichurri, combine all ingredients together and serve at room temperature. Drizzle over lamb and serve.

  • Preheat the grill on high heat for at least 20-30 minutes, covered. Clean your grill grates. Take a wad of paper towels and holding them with a pair of tongs, dip them into a small bowl of oil and brush the grill grates 3-5 times. This will help to create a barrier on the grates, making them somewhat nonstick.
  • Prep the lamb chops. Trim off a bit of the extra fat and cut the rack of lamb into individual chops, by cutting in between the rib bones.
  • Season the lamb chops evenly with salt and ground black pepper on both sides. Set aside in a large bowl.
  • Take the leaves off the parsley and the cilantro. Pack them into the measuring cup to measure. Slice the green onions/chives. Mince the garlic or press through a garlic press. Doing this beforehand will help all the ingredients to process evenly.
