24 shrimp, medium size shelled and deveined
1/3 cup balsamic vinaigrette dressing
12 slices bacon
24 pickled jalapeno peppers
24 wooden toothpicks
1/2 cup mayonnaise
1 tablespoon chili sauce
1 tablespoon sweet pickle relish
1 tablespoon red pepper, minced
1 tablespoon water

Steps:

  • Place shrimp and vinaigrette into a large resealable plastic bag; refrigerate for 15 mn.
  • Microwave bacon for 1 mn on HIGH. Cut slices in half crosswise (for a total of 24 pieces) and let cool.
  • Heat broiler. Coat a large broiler pan with nonstick cooking spray.
  • Remove shrimp from marinade, reserving marinade.
  • Put one piece of bacon on a work surface. Place a shrimp at one end; tuck a jalapeno slice into curl of shrimp. Roll bacon up tightly to enclose filling, securing with toothpick. Repeat using all bacon, shrimp and jalapenos.
  • Stir together mayo, chili sauce, pickle relish, red pepper and 1 TBL water in a small bowl.
  • Place shrimp rolls on prepared pan. Brush with reserved marinade.
  • Broil 3 mn. Turn, brush with marinade and broil 2 mn more.
  • Serve with sauce for dipping.

16 jalapeno peppers
1 (8-ounce) package cream cheese, room temperature
16 large shrimp, cleaned and cooked
8 ounces prosciutto
16 toothpicks

Steps:

  • Cut jalapeno in half and remove seeds. Roughly chop shrimp. Fill the cavity loosely with cream cheese. Add in cooked, chopped shrimp. Wrap peppers with prosciutto. Insert a toothpick to hold together. Grill until done, about 5 minutes.

16 (10-inch) wooden skewers
2 tablespoons butter
1/2 cup finely chopped onions
1 small jalapeno, seeded and chopped
1/2 teaspoon cayenne pepper
Salt and freshly ground black pepper
1 (1-inch) piece ginger, grated
1/2 cup dark brown sugar
1/4 cup orange juice
1 cup ketchup
16 colossal shrimp, shelled with tail on, deveined (about 1 1/4 pounds)
4 slices bacon

Steps:

  • Preheat grill to medium.
  • Soak skewers in water while preparing the BBQ sauce. In a medium saucepan melt butter and saute onions and jalapeno, until tender. Season with cayenne, and salt and pepper. Add ginger, brown sugar, orange juice and ketchup in that order making sure to blend each ingredient completely before adding the next ingredient. Let simmer until the edges begin to caramelize, about 15 minutes. Set aside and let cool. Once cool, remove half of the sauce and reserve for dipping. The other half is for brushing on the shrimp when grilling. Cut bacon in thirds. Thread each shrimp onto a skewer, starting from the tail end. Bend the shrimp as you thread it so it lies in 1 straight line on the skewer, removing its natural curve. Wrap the center of each shrimp with a piece of bacon. Brush with BBQ sauce and place skewers with bacon, seam side down, onto the grill. Cook over medium heat until bacon crisps and shrimp is cooked through, about 8 minutes.

1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon onion powder
1/2 teaspoon citrus lemon pepper
1 teaspoon garlic
1 tablespoon Worcestershire sauce
1 tablespoon fresh squeezed lemon juice
4 tablespoons butter, melted
9 slices bacon
18 prawns
18 wooden skewers, soaked in water for at least 15 min

Steps:

  • Combine butter and spices, add shrimp, stirring to coat the shrimp. Let shrimp marinate for 1 to 2 hours.
  • Slice bacon in half and cook over medium high heat to render out some fat, keeping bacon flexible. Drain the bacon and pat grease out with a paper towel.
  • Wrap each piece of shrimp with a piece of bacon. Slide on to skewers. If you use wooden skewers, the skewers need to be soaked in water for about 15 minute in water or use metal ones.
  • Grill on a hot grill until shrimp are opaque. Use remainder of marinade when turning the shrimp.

I have been making this recipe for years, for my friends and family. It's always a hit at parties.I have looked on the web for the original recipe but can't find it and I can't find it, so I'm posting my version. enjoy! WARNING I like it HOT!

1 lb large shrimp, peeled and cleaned
1 lb bacon, raw uncooked
1 large sweet onion, cut into wedges
6 fresh jalapeno peppers
2 teaspoons seafood seasoning, or
2 teaspoons cayenne pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Wash shrimp and set aside in a bowl, starting an assembly line.
  • Cut bacon in half vertically, place on a plate.
  • Cut and peel onion into wedges and separate, place in a bowl.
  • Wash Jalapenos,slice into thirds, lengthwise, removing seeds.place in a bowl.
  • Start assembly with a shrimp, a slice of Jalapeno, and a slice of onion. Holding all in your hand, wrap bacon around and secure with a wooded toothpick. Repeat with each shrimp.
  • Place on a baking sheet.
  • Sprinkle with seasoning.
  • Place in the oven and roast until bacon is slightly crisp. Roasting time may be adjusted.

I'd like to give credit to a 'zaar receipe #189995, but also say that it isn't exactly the same. On a business retreat, a gentleman in our group offered to try his hand at grilling an appetizer for us. What you see here is his version, and while very similar to the posted receipe #189995, it is decidedly different so I decided to post it as a grilling version. We were using a Weber charcoal grill but I'm sure it a gas grill will work just as well. These were served with steaks, baked potatoes and salad and everyone was grabbing "just one more" of these tasty little treats even during the meal. I hope you find it as wonderful as we did!

12 -15 jumbo shrimp, frozen, uncooked and deveined
1 fresh jalapeno
1 (8 ounce) container cream cheese, prepared, we used onion and chive flavored
1/2 lb bacon
1/4 cup olive oil
toothpick

Steps:

  • Cut jalapeno in half, remove and discard seeds and dice into small pieces.
  • Stir jalapeno pieces into cream cheese and set aside.
  • Cut a slit into the back of each shrimp.
  • Gently "stuff" the cream cheese mixture into the shrimp.
  • Wrap one slice of bacon completely around the shrimp several times and secure with toothpicks.
  • Place shrimp on a foil lined grilling basket or tray.
  • Drizzle with olive oil.
  • Place on grill and close the lid, checking every 2 minutes, turning at least one time until bacon is browned - depending on the temperature of the grill this is anywhere from 7-12 minutes.

6 fresh jalapeno peppers, halved lengthwise and seeded
1 (8 ounce) package cream cheese
12 slices bacon

Steps:

  • 1. Preheat an outdoor grill for high heat.
  • 2. Spread cream cheese to fill jalapeno halves. Wrap with bacon. Secure with a toothpick.
  • 3. Place on the grill, and cook until bacon is crispy.
  • My Note: Here's what I found made them great. After slicing the peppers and cleaning them out, drop in boiling water for 4 - 6 minutes. This will pretty much take all the heat out though so if you want a punch, leave the membranes. We taste tested several cream cheese flavors. We picked 3 fav's, they were the cream cheese mixed with a powdered ranch mix, or mixed with a chipotle seasoning, or mixed with worstershire and garlic powder. (we tried 12 different flavors to get this perfect) Also, I found that 1/2 a strip of bacon was not enough - used the whole thing! And finally after you put the pepper together with cheese and bacon and toothpick - freeze it for 15 minute Then 10 minutes on the grill is perfect.
  • After making these many times, I can tell you that you really need to make them ahead of time and put them in the refrigerator for a couple of hours or the freezer for about 15 minutes. This will allow the cheese to firm up a bit and it won't all leak out of your peppers. I also have found that if you want them hot, leave all of the membrane inside and some seeds. If you want them barely warm(like me), get almost all of the membrane out from inside the pepper and leave no seeds. I cook them in the oven on 350 for about 45 minutes. ***A low calorie version is use fat free cream cheese and wrap each 1/2 pepper with only 1/2 slice of bacon. They are just as good and only about 60 calories each!

  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Grill shrimp over high heat until bacon crisps and shrimp just cook through, about 2-3 minutes per side. Remove to a platter and serve with lime wedges.
