This recipe calls for a whole chicken cut up, but feel free to use your favorite pieces. I like using the whole chicken because it gives everyone a choice. If you like your chicken saltier or spicy, add some seasoned salt before starting the grilling process. I find the soy sauce adds enough salt for me. Prep time does not include the time needed for your grill to get hot.

- Mix canola oil, lemon zest, lemon juice, Dijon mustard, honey, garlic, Worcestershire sauce, Italian herb seasoning, salt, and black pepper in a bowl; pour into a resealable plastic bag. - Place the chicken pieces in 1 or 2 large re-sealable plastic bags and add the rest of the ingredients. Seal the bag and shake to mix. Refrigerate at least 1 hour or overnight.
- Heat grill to medium heat, or until the coals are lightly covered with ash. Oil the grill.
- Cook the chicken, skin side up, for 20 minutes. Turn the pieces and cook an additional 15 to 20 minutes, or until a meat thermometer inserted reaches 155 degrees and the chicken is fork-tender and the juices run clear when a thigh is pricked with a fork. - Grate 2 garlic cloves and mince the other one. More flavor this way.
- In a large bowl, add chicken, honey, soy sauce, lemon juice and garlic. Stir with tongs and let marinate while oven is preheating.
- Preheat oven to 450 degrees F and line large rimmed baking sheet with silicone baking mat or unbleached parchment paper.

- 1. About an hour before grilling, in a small bowl, mix the ketchup, honey, garlic, sesame oil and soy sauce. Refrigerate for an hour, this gives the garlic time to flavor the sauce.
- 2. Have your grill good and hot, I turn mine on medium. Salt & pepper chicken. I then spray with olive oil cooking spray so doesn't stick to grids. Grill chicken on one side for about 5 minutes, then begin basting as you turn - often, until chicken is completely cooked. Make sure you keep basting as you turn. Once done I give it one more coat.
