Grilled Salmon and Lemons with Herbs image

This beautiful salmon dish is quick and easy, but still impressive. Any leftover salmon is great in green salads, pasta salads, omelets or sandwiches.

Number Of Ingredients 6

4 teaspoons extra-virgin olive oil, plus more for the grill
1 (2 1/2-pound) skin-on side of salmon, pin bones removed
1/2 teaspoon fine sea salt
1/2 teaspoon ground black pepper
4 lemons, halved
2 tablespoons mixed chopped fresh herbs such as tarragon, marjoram, thyme and parsley

Steps:

  • Oil grill grates, then preheat grill to medium-high heat.
  • Meanwhile, brush salmon all over with oil and sprinkle with salt and pepper.
  • Arrange salmon on grill, skin-side down and cook, gently flipping once, until golden brown on both sides and cooked to desired doneness, up to about 15 minutes total.
  • To flip the salmon, use two large spatulas.
  • Or use a rimless baking sheet to help you flip the salmon and slide it back onto the grill to cook on the second side.
  • Meanwhile, arrange lemons on grill, cut-sides down and grill until deep golden brown and fragrant, 5 to 7 minutes.
  • When done, carefully transfer salmon to a large platter, scatter herbs over the top and serve with lemons on the side for squeezing.

1/2 cup butter, cubed
1/3 cup lemon juice
2 tablespoons minced parsley
1-1/2 teaspoons soy sauce
1-1/2 teaspoons Worcestershire sauce
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 salmon fillet (2-1/2 to 3 pounds and 3/4 inch thick)

Steps:

  • In a small saucepan, combine the first nine ingredients. Cook and stir over low heat until butter is melted; set aside. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on grill. Grill, covered, over medium-hot heat or broil 4 in. from the heat for 5 minutes. Baste with butter sauce. Grill or broil 10-15 minutes longer or until fish flakes easily with a fork, basting frequently.

1 stick butter, room temperature
2 Meyer lemons, zested
1/2 bunch dill, finely chopped
1/2 bunch thyme, picked and finely chopped (lemon thyme is even better)
1 small clove garlic, smashed and finely chopped
Kosher salt
4 (6-ounce) salmon fillets, skin-on
Extra-virgin olive oil

Steps:

  • In a small bowl, combine the butter, zest, herbs and garlic. Mix until everything is well mixed. Season, to taste, with salt. If using right away, keep the butter at room temperature. If making ahead, reserve in the refrigerator and bring to room temperature before using.
  • Preheat grill to medium.
  • Remove the salmon from the refrigerator and let come to room temperature. Season with salt and coat with olive oil. Brush and oil the grill. Place the salmon, skin side down, on the clean, preheated grill. After 2 to 3 minutes, rotate the salmon 90 degrees to create cross-hatch grill marks on the salmon skin. Cook the salmon for another 3 to 4 minutes. As the salmon cooks it will turn from translucent orange to opaque pink.
  • Turn the salmon over and cook for another 2 to 3 minutes. If the salmon starts to burn, or the flames flare up move the fish to a cooler part of the grill.* Remove from the grill and top with the room temperature compound butter. The butter should act as a sauce and melt over and coat the grilled salmon.
  • What a delish fish!
  • *Tip: It is a general rule to cook fish for 8 minutes per inch of thickness. I like salmon cooked to about medium, so I cook mine for a little less.

1/2 cup butter or 1/2 cup olive oil
1 lemon, juice of
1 1/2 teaspoons soy sauce
1 1/2 teaspoons Worcestershire sauce

2 tablespoons chopped fresh parsley (or less for dried)
2 lbs wild caught alaskan salmon

Steps:

  • Melt the butter or place the olive oil in a bowl.
  • Add the remaining ingredients, except for salmon, and mix well.
  • Grill salmon skin side down at medium low temperature. Use tinfoil shaped into a pan to protect grille and hold sauce.
  • Pour butter sauce over fish, close grille and cook just until fish begins to flake, approximately 10-12 minutes.
  • Slip spatula between fish and skin and remove salmon to serving platter.
  • Pour any remaining sauce over fish.
  • Note: For oven, bake at 350°F Put foil on cookie sheet and follow above instructions.

1 (5 to 6 pound) whole salmon
2 to 3 tablespoons olive oil
Salt and freshly ground black pepper
Herbed Butter Sauce, recipe follows
2 shallots, minced
1 tablespoon unsalted butter, plus 1/2 cup cold unsalted butter
1/4 cup Chardonnay
2 tablespoons chicken stock
1 tablespoon white wine vinegar
1 tablespoon lemon juice
1/4 cup heavy cream
1/2 cup packed chopped tarragon leaves
2 tablespoons packed chopped parsley leaves
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F. Preheat a grill to high heat.
  • To make the fish: fillet the fish and remove all bones (You can ask your fishmonger to do this). Season the fish with the olive oil, and salt and pepper. Grill on both sides until the fish has clear grill marks, about 6 minutes per side. Remove from the grill, place on a sheet pan, and finish in the oven.
  • Transfer to a warmed platter and brush with Herbed Butter Sauce.
  • To make the sauce: in a small pan, sweat the shallots in butter. Add the wine, stock, vinegar, and lemon juice and simmer until reduced by half.
  • Stir in 3 tablespoons cream. Add half of the tarragon. Whisk in the cold butter, 1 tablespoon at a time, strain and add remaining tarragon and chopped parsley. Season with salt and pepper to taste.
  • Reserve warm.

2 lbs whole salmon, Alaskan (can be fresh, thawed or frozen)
4 sheets aluminum foil (6 inches larger than length of salmon)
1 large onion, sliced (can use 2 leeks separated into leaves)
1 lemon (can use lime too!)
1 tablespoon italian seasoning (can use any favorite, Mexican, Cajun, etc.)
1 1/2 cups coarsely chopped fresh herbs (basil, cilantro, oregano, dill, etc.)

Steps:

  • Rinse any ice glaze from frozen salmon under cold water and pat dry.
  • Lay out 2 sheets of aluminum foil, double thickness, on a large tray. Coat top layer with nonstick cooking spray.
  • Lay half of onions lengthwise across foil. Place salmon over onions.
  • Squeeze lemon on both sides of fish. Sprinkle dry seasoning onto salmon.
  • Place fresh herbs over, under and into belly cavity (if fish is not frozen).
  • Lay out remaining two sheets of foil, double thickness and coat top layer with nonstick spray and place coated side face down onto herbs and salmon.
  • Roll up, crimp, and seal all sides to form packet.
  • Cook frozen salmon over medium-hot grill (450 F), 5-6 inches from heat for 50-60 minutes, turning packet every 15 minutes.
  • Cook until fish is opaque throughout.
  • Cook fresh or thawed salmon over medium grill (400 F) 5-6 inches from heat for 45-55 minutes, turning packet over every 15 minutes. Cook until opaque throughout.

WHOLE SALMON ON THE GRILL WITH FENNEL, LEMON, AND ONIONS



Whole Salmon on the Grill with Fennel, Lemon, and Onions image

1 (6 to 7 pound) whole salmon, gutted and scaled
Sea salt
1 medium onion, peeled and thinly sliced
1 lemon, thinly sliced
1 small bunch copper fennel fronds or substitute regular fennel fronds
10 sprigs fresh thyme
Olive oil, as needed
All-purpose flour, as needed

Steps:

  • Fire up the grill, with the coals lined up under the fish for direct grilling.
  • Sprinkle sea salt generously in the cavity of the fish and over the skin, then stuff it with the onions, lemons, fronds, and herb sprigs. Tie butcher string around the fish in three or four places to hold the stuffing in. In between the string, make deep incisions with your knife through the thickest part of the fish on both sides, all the way down to the spine. (The fish will cook more quickly, and the smoke flavor will get inside the fish better.) Brush both the fish and the grill lightly with oil, dust the salmon skin on both sides lightly with flour, and place the salmon on the grill.
  • Grill over medium-hot direct heat, with the cover on and the vents open. When the skin is browned on 1 side, use 2 large metal spatulas to loosen the salmon from the grate and carefully turn over. Continue cooking until just cooked through and an instant read thermometer inserted in the thickest part of the fish registers 135 degrees F to 140 degrees F, about 35 to 40 minutes total cooking time. Remove the fish from the grill and place it on a large platter. Allow the fish to cool for 5 minutes, then remove the butcher string and serve.
