- To assemble the sandwiches, butter both sides of each bread slice. Lay ham and cheese on one slice and cover with the another slice. Trim the crusts off the sides.
- Heat a saute pan over medium-low heat, then fry the sandwiches until the cheese starts to melt and the sandwiches are golden brown, about 3 minutes on each side. You may need to add more butter to the pan.
- Remove the sandwiches to paper towels to drain, let them cool for 1 minute, then cut into quarters diagonally and serve 3 quarters each per serving.

- In a large cast-iron or other heavy skillet, heat olive oil and 2 tablespoons butter over medium-high heat. Fry mushrooms in a single layer until golden and beginning to crisp, turning halfway through, 10-12 minutes. Sprinkle with salt and pepper. Remove mushrooms; wipe out skillet., Spread 3 tablespoons butter on 1 side of each slice of bread. Place bread, butter side down, in same skillet over medium-low heat; toast until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with mushrooms; sprinkle with fresh thyme; add sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inwards. Spread the butter-mayonnaise mixture on the outsides of each sandwich. - Preheat a grill to medium heat.
- Place two 2-foot pieces of nonstick aluminum foil next to each other so the long sides are just touching. Pinch the edges together and then fold them over several times to seal and form one large piece of foil. Line a rimmed baking sheet with the foil and set aside.
- Crack the eggs into a large bowl and whisk well. Add the scallions, 1 teaspoon salt and 2 tablespoons water and whisk to combine.
- Split the whole pack of attached dinner rolls in half horizontally using a serrated knife. Set aside.
- Put the prepared baking sheet on the grill and add 1 tablespoon of the butter. Cover the grill and let the butter melt, about 3 minutes. Spread the butter all over the baking sheet using a pastry brush and then pour on the egg mixture. Place the attached roll halves cut-side down and side by side on top of the eggs and cover the grill. Cook until the eggs are completely set, about 10 minutes.
- Meanwhile, butter another baking sheet with the remaining 1 tablespoon butter. Using heatproof mitts, top the rolls with this baking sheet and invert the whole thing onto the grill. Remove the top baking sheet and peel back the foil. Top half the eggs with the cheese and the other half with the ham. Cover the grill and cook until the cheese is melted, about 5 minutes. Using a large metal hamburger spatula, flip the bottom half of the rolls onto the other half, so the rolls are top-side up. Serve with hot sauce.

- Heat oil in a large nonstick skillet.
- Add mushrooms and cook over medium high heat until juices are released then evaporated.
- Season with salt and pepper and remove.
- Sprinkle 1/2 the cheese on 2 bread slices, top each slice with 1/2 the mushroom and chicken.
- Sprinkle with remaining cheese and top each with a bread slice.
- Spread the top of each sandwich with 1/2 tbs of mayo, pressing gently.
- Wipe skillet with paper towels and place over medium high heat, add sandwiches mayo side down.
- Spread remaining mayo on top of the sandwiches.
- Cook 3 minutes per side or until golden brown.

- Mix together Parmesan cheese, soft butter, and garlic powder.
- Build the sandwich as follows--on 4 slices of bread put 1 slice of cheese on each.
- Then put 2 slices of ham on each.
- Spread each ham slice with desired amount of mustard.
- Top with tomato slices and fresh basil, if desired, or just sprinkle a tad of dry basil on it.
- Cover with remaining slices of cheese and second slice of bread.
- Very carefully spread the butter, Parmesan cheese, and garlic powder mixture on both sides of the sandwich.
- Place on a griddle and cook over medium heat for 4-5 minutes or until golden brown and cheese is melted.
- Cut in half and serve.

- Saute the mushrooms in the olive oil in a medium sized pan for 4-5 minutes.
- Add the shallots and garlic and cook for an additional 2 minutes.
- Add the chopped herbs.
- Add the white wine and reduce until the liquid is evaporated.
- Season with salt and fresh ground black pepper and set aside.
- Butter one side of each slice of bread. Place the butter side down on four slices of the bread in a large non-stick fry pan at medium-low heat.

- Slice bread on the diagonal so you have longer slices, into 8 slices for 4 sandwiches. Place olive oil and garlic in small saucepan and heat only till it's just warm and garlic infuses into oil. Remove from heat. Butter inside of bread slices. Place ham on microwavable dish and heat through. Blot any juices that lay on the plate so it doesn't make sandwiches soggy.
- Preheat large skillet or griddle on stovetop on medium heat. Put ham on buttered bread, then basil leaves, then cheese. Brush garlic-infused olive oil on outside of sandwiches and place in preheated skillet or griddle. Lightly brown on each side.

- Butter one side of each slice of bread.
- Place on slice of bread butter side down into the frypan.
- Layer cheese, ham, cheese, ham,& cheese.
- Fry for 1 1/2 minutes and check underside to see if bread is golden brown.
- Flip sandwich if ready, if not leave in pan for no longer than 1 more minute.
