"This recipe called for salmon, but I substituted another fish with delicious results," says Lisa Rowley of North East, Maryland. "It saves me time in the kitchen because all I have to do is mix up the seasoned butter, then turn it over to my husband, who does the grilling.

3/4 cup butter, softened
1 tablespoon lemon juice
1-1/2 teaspoons dried minced onion
1-1/2 teaspoons garlic salt
1-1/2 teaspoons dried parsley flakes
3/4 teaspoon dill weed
1/4 teaspoon sugar
1/4 teaspoon pepper
4 halibut or swordfish steaks, 1-inch thick

Steps:

  • In a small bowl, combine the first eight ingredients; let stand for 30 minutes. Spread 1 tablespoon herbed butter over each halibut steak., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fish, butter side down, covered, over medium heat or broil, buttered side up, 4 in. from the heat for 5-1/2 minutes. , Spread 1 tablespoon herbed butter over each halibut steak; turn and spread with remaining butter. Grill or broil 5-6 minutes longer or until fish flakes easily with a fork.

1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon ground cumin
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon ground black pepper
1 pinch cayenne pepper
3 (4 ounce) fillets wild-caught skin-on mahi-mahi fillets
3 tablespoons olive oil
2 tablespoons lemon juice

Steps:

  • Preheat a gas grill for medium-high heat (450 degrees F (230 degrees C)) and lightly oil the grate.
  • Combine the paprika, oregano, cumin, garlic powder, onion powder, salt, pepper, and cayenne in a small bowl. Brush mahi mahi fillets with olive oil on both sides and season with the spice mixture.
  • Grill on the hot grill until golden, 4 to 5 minutes per side. Drizzle with lemon juice and serve.

I made this one hot summer night when I wanted fish without heating up the kitchen. It turned out very nice. It can also be done in the oven.

1 lb halibut steaks
6 large prawns
4 tablespoons butter
3 -4 garlic cloves, minced
1/2 small red onion, chopped
season salt
pepper
cajun seasoning (optional)
1 tablespoon fresh parsley, chopped
2 tablespoons lemon juice

Steps:

  • Place halibut on large sheet of aluminum foil.
  • Rub the garlic around fish.
  • Put dabs of butter down the middle.
  • Sprinkle with onion, salt, pepper, Cajun seasoning, lemon juice and parsley.
  • Top with prawns.
  • Seal the foil around the fish.
  • Grill until done about 10 each side.
  • Or oven at 350°F for 25-30 minutes.
  • ~Note: If you choose to use two or more smaller steaks, adjust ingredients for each serving and wrap each steak in it's own foil packs. This is a nice way to do it for individual servings.~.

1 small onion, minced
2 cloves garlic, minced
1 teaspoon peanut oil
1 lb raw jumbo shrimp or 1 lb king prawns, shelled
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
2 limes, juice of
1 tablespoon peanut butter

Steps:

  • Mix the onion and garlic with peanut oil.
  • Add the prawns and toss to coat.
  • Leave to marinate for at least three hours or overnight.
  • Grill, barbecue or broil the prawns for about 5 minutes, turning once.
  • Whisk together the remaining ingredients to make the sauce and pour it into a small sauce bowl, placed at the center of the platter of prawns.

HALIBUT OR MAHI MAHI BAKED IN FRESH GREEN SALSA

I found this in Sunset magazine and wanted to keep it around it was delicious. Recipe calls for poblano chilies but they weren't avail in the store so Jalapenos did the trick. I also tried it with Mahi Mahi fish and it turned out excellent. Recipe can be halved.

1 tablespoon butter
2 tablespoons flour
3/4 cup tomatillo, coarsely chopped (green tomatoes)
1/2 cup onion, coarsely chopped
2 poblano peppers, coarsely chopped (or sub in jalapeno for less heat)
1/4 cup fresh cilantro, packed coarsely chopped, plus 2 TBSP leaves for garnish
1/2 cup reduced-sodium chicken broth
3/4 cup sour cream, divided (I used Light Sour Cream)
kosher salt
1 tablespoon lime juice
1 3/4 lbs salmon fillets (about 1 inch thick) or 1 3/4 lbs mahi mahi (about 1 inch thick)

Steps:

  • Preheat oven to 375. In a large frying pan, melt butter over high heat. Stir in flour, remove from heat, and mix to form a smooth paste.
  • Scrape flour paste into a blender. Add tomatillos, onion, chilies, chopped cilantro, chicken broth, and 1/2 cup sour cream. Puree in blender. Pour green sauce back into frying pan; add salt and lime juice to taste and bring to a boil.
  • Rinse fish, pat dry with paper towels, cut into 6 equal pieces, and season with salt. Set pieces slightly apart in an 8 by 12 in baking dish.
  • Pour evenly over fish.
  • Bake fish until it flakes but still looks moist in the center of the thickest part (cut to test), 15 to 20 minutes.
  • Serve up fish and spoon sauce over portions. Top off with small spoonfuls of remaining sour cream, and sprinkle with cilantro leaves.

BACON WRAPPED GRILLED HALIBUT STEAKS

We love the zippy flavor using jalapenos and cilantro to grilled whitefish. I use a fish rack with handle on the grill, some may want to use a drip pan, others might want to place fish on a greased piece of foil and others may want to plop these right on the grill rack....whatever! I have also broiled these, but there's nothing like the flavor of things when grilled! I serve this with a Mango Salsa Ole, Recipe #235769 on the side and a lettuce salad using a ginger-flavored vinagarette.

1/2 cup lime juice
2 green onions, sliced thin with green tops
2 tablespoons vegetable oil
2 jalapeno peppers, seeded and chopped
1 teaspoon salt
1/2 teaspoon pepper
4 (6 -8 ounce) halibut steaks (6-8 oz. ea.)
8 slices bacon

Steps:

  • In ziplock bag combine lime juice, green onions, oil, cilantro,jalapeno, salt and pepper.
  • Add haliut steaks, seal, and turn to coat. Refrigerate for 15 minutes, turning once.
  • Meanwhile, fry bacon until cooked but not crisp. Drain on paper towels.
  • Remove halibut when marinated, discarding marinade.
  • Wrap two slices of bacon over top and sides of each steak and secure with soaked wooden toothpicks.
  • Spray nonstick cooking spray on grill racks before heating. Place halibut, bacon side down, on grill rack with drip pan underneath rack to catch any bacon drippings.
  • Grill covered over medium heat for 4-5 minutes on each side or until fish flakes easily with a fork.
  • Discard toothpicks, serve and enjoy!

  • Combine first 4 ingredients in bowl.
  • Place Mahi Mahi in a zip lock bag and pour marinade over steaks.
  • Seal and place in refrigerator for 30 min.
  • Preheat Grill on Medium high
  • Using vegtable oil, oil grill and place steaks on grill grate.
  • Grill for 3-5 min on each side.
  • Serve with rice and top with favorite salsa.

1/3 cup water
1/3 cup granulated sugar
1 pinch salt
