This is an easy make ahead appetizer with lots of flavour. It is like a cross between Greek salad and Chicken spanokapita. It was really popular at a recent potluck.

1 large store bought thin pizza dough
1/2 cup kraft Greek salad dressing, divided
1 boneless chicken breast
1 container prepared spinach dip
1/4 English cucumber, sliced
1/4 red pepper, cut in bite size pieces
12 cherry tomatoes, halved
1/4-1/3 cup feta cheese

Steps:

  • Lightly coat inside of pizza crust with salad dressing.
  • Marinate chicken breast in remaining salad dressing for 1 hour- Grill until done- about 10 minutes over medium heat.
  • Spread spinach dip over crust.
  • Slice chicken into bite sized pieces and spread evenly over pizza.
  • Add red pepper, cucumber, and tomatoes.
  • Sprinkle with feta.
  • Slice into thin wedges.
  • May be made several hours ahead and stored in refrigerator.

White pizza and antipasto salad-two pizzeria favorites that come together in a single fun dish. The grill adds a smoky flavor to the pizza crust, and as an added bonus you don't need to heat up your kitchen. If you don't have a pizza pan you can stretch the dough on a flat baking sheet.

2 tablespoons red wine vinegar
Kosher salt and freshly ground black pepper
1/4 teaspoon dried oregano
3 tablespoons extra-virgin olive oil
1 tablespoon grated Parmesan
1 clove garlic, crushed and peeled
1/2 cup halved cherry tomatoes
1 Persian cucumber, diced
1/4 small red onion, sliced
1/2 cup drained giardiniera, chopped
1/2 cup drained marinated artichoke quarters, chopped
1/4 cup pitted black Italian olives, such as Gaeta, halved
2 ounces thickly sliced provolone, cut into strips
1 ounce sliced Genoa salami, cut into strips
2 hearts of romaine, chopped
1 cup fresh ricotta
1 clove garlic, finely chopped
2 to 3 tablespoons heavy cream or whole milk
Kosher salt and freshly ground black pepper
Extra-virgin olive oil, for brushing
1 pound prepared pizza dough, at room temperature
1 1/2 cups shredded mozzarella
1/4 cup grated Parmesan
1/4 cup grated pecorino
Crushed red pepper flakes, for garnish
Dried oregano, for garnish

Steps:

  • Prepare a grill for medium heat.
  • For the salad: Whisk the vinegar, 1/2 teaspoon salt, several grinds of pepper and the oregano together in a large salad bowl. Slowly whisk in the oil to make a smooth dressing. Whisk in the Parmesan. Add the garlic clove and let sit for about 30 minutes to infuse (about as long as it takes to prepare the pizza).
  • Just before serving, discard the garlic clove. Add the tomatoes, cucumber, red onion, giardiniera, artichokes, olives, provolone and salami to the bowl and toss to coat. Add the romaine and toss again.
  • Meanwhile, for the pizza: Stir together the ricotta and chopped garlic in a small bowl. Stir in enough cream or milk to make a spreadable mixture. Season with salt and pepper. Brush a 14-inch or larger pizza pan with oil. Form the pizza dough into a ball and place on the pan. Brush the dough with oil. Use your fingers to gently stretch the dough to a 12- to 13-inch round. Brush the top of the dough once more with oil.
  • Quickly flip the pizza over the grill and remove the pan, leaving the dough round on the grill. Grill, covered, until the bottom of the dough is golden, has distinct grill marks and the top is set, about 3 minutes. Flip the dough so the grilled side is up. Brush the crust with olive oil. Spread the ricotta mixture almost to the edges. Sprinkle with the mozzarella, Parmesan and pecorino. Cover the grill and cook until the cheese is melted and the bottom crust is crisp and golden, 6 to 7 minutes.
  • Remove the pizza from the grill and cut into 8 slices. Sprinkle the pizza with red pepper flakes and oregano. Pile the salad on top and serve.

1 jar (12 ounces) marinated quartered artichoke hearts, drained and chopped
1 cup grape tomatoes, halved
1/2 cup pitted Greek olives, halved
1/3 cup chopped fresh parsley
2 tablespoons olive oil
1/4 teaspoon pepper
3/4 cup hummus
4 whole pita breads
1 cup crumbled feta cheese

Steps:

  • Place the first six ingredients in a small bowl; toss to combine. Spread hummus over pita breads. Top with artichoke mixture; sprinkle with cheese. Grill pizzas, covered, over medium heat until bottoms are golden brown, 4-5 minutes.

3 tablespoons fresh lemon juice
1/8 teaspoon dried oregano, crumbled
1 small garlic clove, forced through a garlic press
1/2 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon black pepper
1/3 cup extra-virgin olive oil plus additional oil for brushing
1 (19-ounce) can chickpeas, rinsed and drained
1 tablespoon water
4 (6- to 8-inch) pocketless pita rounds
10 ounces Italian mixed salad (8 cups)
1/2 cup cherry or grape tomatoes (1/4 pound), halved
1 small cucumber, peeled if desired, halved lengthwise, and thinly sliced crosswise
1/2 cup pitted Kalamata olives, halved lengthwise
1/3 cup crumbled French or Greek feta (2 ounces)
Special Equipment
a well-seasoned large (2-burner) ridged grill pan (preferably cast-iron)

Steps:

  • Whisk together lemon juice, oregano, garlic, sugar, salt, and pepper in a large bowl, then add oil and whisk dressing until combined well.
  • Purée 1 1/4 cups chickpeas, water, and 1/4 cup dressing in a food processor until almost smooth.
  • Heat grill pan over high heat until smoking and lightly brush with oil, then grill pitas, 2 at a time, turning over once, until grill marks appear, about 2 minutes total per batch. Transfer to plates.
  • Add salad greens, tomatoes, cucumber, olives, cheese, and remaining chickpeas to remaining dressing in bowl and toss to coat well.
  • Spread some chickpea purée on each pita, then mound salad on top.

3 tablespoons olive or vegetable oil
1/8 teaspoon salt
6 drops red pepper sauce
1 clove garlic, finely chopped
2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
3 green onions, sliced (3 tablespoons)
2 medium tomatoes, seeded, coarsely chopped (1 1/2 cups)
1/3 package (48-oz size) frozen pizza dough & Italian bread (1 loaf), thawed
1 cup shredded mozzarella cheese (4 oz)
1/2 cup crumbled feta cheese (2 oz)
10 kalamata olives, cut in half, pitted

Steps:

  • In small bowl, mix oil, salt, pepper sauce and garlic; reserve 1 tablespoon. To remaining oil mixture, add basil, onions and tomatoes; toss. Cover; let stand at room temperature 30 minutes.
  • Heat gas or charcoal grill. Divide dough in half. On floured surface, roll each half into 8-inch round. Place dough rounds on grill over medium heat. Cover grill; cook 1 to 2 minutes or until bottoms of crusts begin to brown.
  • Remove crusts from grill, and place browned sides up on ungreased cookie sheet. Brush reserved oil mixture evenly over crusts. Top with tomato mixture, cheeses and olives.
  • Slide pizzas from cookie sheet onto grill. Cover grill; cook 2 to 4 minutes or until bottoms of crusts are brown and cheese is melted. (If crusts brown too quickly, place a piece of foil between crusts and grill.)

Brush half of the olive oil on one side of the dough and sprinkle with salt and pepper. Place the oiled side down on the heated grill/pan and grill for about 3-4 minutes until lightly browned. While the first side is face down on the grill. Brush the remaining olive oil and sprinkle with more salt and pepper on the other side. Turn the dough over and grill for an additional 3-4 minutes until browned.
  • Remove the dough off the grill/pan. Sprinkle the mozzarella cheese evenly over the top. It will melt as the dough is still warm.
  • Spread the arugula, tomatoes, red onion, olives, and feta evenly over the pizza. Drizzle as much of the vinaigrette as you desire over the pizza.
