This dish is the one that inspired me to devote a week of Recipes for Health to toaster-oven vegetable and grilled cheese sandwiches. I made it one night after a day preparing enough quiche to feed 80 for a book signing. When I got home I had still more quiches to make in my own kitchen, and the last thing I wanted to do was cook dinner for myself. But I was hungry. So I looked in the refrigerator and found a bowl of beet greens that I'd blanched a day or two earlier, and roasted beets that had once been attached to those greens. I pulled a couple of slices of bread from the freezer, looked in my cheese bin, and here is what I slapped together. I loved it so much that I made it again the next night. It's always a good idea to blanch greens as soon as you get them home from the market. You never know when you'll want to use them in a pinch.

2 large slices whole-wheat country bread (3 ounces total)
1/2 garlic clove (optional)
About 3/4 ounce (3 tablespoons crumbled) Gorgonzola or creamy blue cheese
1/3 cup chopped blanched beet greens
Chopped fresh herbs such as parsley, thyme, rosemary, marjoram (optional)
1/2 teaspoon extra-virgin olive oil
1 small or 1/2 medium beet, sliced thin

Steps:

  • Rub surface of one slice of bread with the cut clove of garlic if desired. Spread blue cheese over the bread. If you wish, save a little cheese for the top slice.
  • Toss greens with herbs if desired. Spoon over cheese and press down onto the bread. Drizzle on 1/4 teaspoon olive oil. Arrange beet slices over the greens. If desired, add a little more cheese: either spread on the top slice of bread or sprinkle it over the beets. If desired, rub second piece of bread with the cut garlic clove before spreading with cheese. Place over beets and press down firmly. Drizzle remaining olive oil over the top slice.
  • Toast in toaster oven for 3 to 4 minutes, until cheese has melted. Remove from toaster, press down firmly, cut in half and serve.

Mellow pears contrast the strong flavors of gorgonzola in this bright, lightly creamy salad. It's all finished with a sweet-tart dressing of onion, mustard and red wine vinegar. It makes a lovely first course, or simply treat it as two servings, rather than four, and serve it as a light lunch.

1/3 cup coarsely chopped cippolini or other sweet onion
1 teaspoon Dijon mustard
2 tablespoons red wine vinegar
1/2 teaspoon honey
Juice of 1/2 lemon
1/2 cup grapeseed oil
Sea salt
ground white pepper
2 tablespoons extra virgin olive oil
8 ounces watercress (about 1 bunch), thick stems removed
4 ounces Gorgonzola, sliced into 16 small slabs
2 ripe pears, cored, quartered and cut in wedges, or 4 fresh figs, quartered

Steps:

  • Combine the onion, mustard, vinegar, honey, lemon juice and grapeseed oil in a food processor or blender. Purée until onion is very fine. Season with salt and pepper. Whisk in olive oil.
  • Rinse and dry the watercress. In a large bowl, season watercress with salt and pepper and toss with the dressing. Arrange cheese and fruit on four salad plates and top with watercress.

Sweet Pear and Gorgonzola Salad with Rocket, Watercress, Walnuts, and Orange Flower Honey image

This salad first appeared in Robin Leach's Lifestyles of the Rich and Famous (1986) cookbook and became an instant hit in my restaurants because the intense flavor of pears is concentrated by long and slow heating. Whenever a recipe calls for fruit to accompany meat, game or poultry (as in duck with pears), this is the best way I know to bring out the flavors of the fruit, giving a commercial product a new lease on life, as if it were ripe fruit fresh from a farm in Oregon or Long Island. The process is oven drying, slowly evaporating all that Colorado River irrigation water from the fruit without cooking it. Do the same thing with halved apples, peeled slice pineapple, quinces, plums, apricots (especially since they tend to be the most ruined by growers), peaches and figs. If you can find Zante or Champagne grapes, they are the perfect garnish for this dish, but Concords would not be bad either. I also like to make this salad with ripe white peach and rose peppercorns sprinkled over the peaches and cheese.

4 ripe Comice pears
1 tablespoon salt, plus pinch
1 cup sugar
1 tablespoon freshly squeezed lemon juice
Pinch freshly ground black pepper
1/4 cup walnut oil
1 bunch watercress, washed, spin dried, stemmed
1 bunch rocket, washed, spin dried, stemmed
1/4 cup fresh basil leaves
1/4 pound Gorgonzola, rind removed, crumbled
1/2 cup walnuts, toasted, coarsely chopped
2 tablespoons orange flower honey
1/2 cup edible flowers, such as sage, rocket blossoms, rose petals, or nasturtiums
Champagne grapes, as needed for garnish

Steps:

  • Preheat the oven to 300 degrees F.
  • Slice the pears in half lengthwise. Rub each half with a pinch of salt. Put parchment paper on a tray just large enough to hold the pears, and spread the sugar on the paper. There should be a 1/8-inch layer. Put the pear halves cut side down on the sugar and bake for 1 hour. When the pears are cool enough to handle, remove the cores and slice them crosswise into 1/8-inch sections.
  • Put the lemon juice in a salad bowl with salt and pepper and mix to dissolve the salt, then whisk in the oil. Arrange the slices of pear 1 pear per plate, in 1 layer in the center of the plate, leaving a 3-inch gap in the center for the watercress and the rocket. Scatter the cheese and then the walnuts over the pears, and then drizzle the honey on top of the walnuts and cheese.
  • Put the watercress, rocket, and basil in the salad bowl and toss together. Then place the salad in the center of the pears.
  • Garnish with the flowers.

1 cup watercress sprigs (about 1/2 bunch, coarse stems discarded)

Steps:

  • Preheat broiler.
  • Cut cheese into thin slices. Halve pear lengthwise and core with a lemon-ball cutter. Slice pear thin crosswise.
  • On a baking sheet toast both sides of bread about 3 inches from heat until golden. Divide watercress among toasts and cover with overlapping pear slices. Arrange cheese over pear slices and broil sandwiches until cheese is melted, about 1 minute.

1 cup spelt whole-wheat berries
1 lemon, juiced, about 1/4 cup
2 firm, but ripe eating pears such as Anjou, Bartlett or Comice, cored
1/4 bulb fennel
2 bunches watercress, stems trimmed, (about 6 cups)
3 tablespoons extra-olive oil
Freshly grated black pepper
2 to 3-ounce piece Gruyere or aged Gouda

Steps:

  • Bring a generously salted medium saucepan of water to a boil. Add the spelt and return to a boil, adjust the heat to maintain a simmer, cover, and cook until the berries are tender but not mushy 15 to 20 minutes. Drain and set aside.
  • Put the lemon juice in medium bowl. Thinly slice both the pears, and fennel lengthwise, with a mandoline into the bowl. Toss with the lemon juice. Add the spelt berries, watercress, and olive oil and toss to dress evenly. Season with salt and pepper.
  • Divide salad among 4 plates and, using a vegetable peeler, shave the Gruyere or Gouda cheese over each plate. Serve.

2 tablespoons extra virgin olive oil
1 tablespoon Dijon mustard
1 large garlic clove, minced
1/2 teaspoon crushed red pepper flakes
salt & freshly ground black pepper
1 1/4 lbs skirt steaks
1 large ripe tomatoes, thinly sliced
1 tablespoon balsamic vinegar
1/3 cup gorgonzola, crumbled (dolce cheese)
3 tablespoons mayonnaise (the real kind)
1 baguette, cut into four 6-inch lengths and split
1 bunch watercress, tough stems trimmed

Steps:

  • Light a grill or preheat a broiler.
  • In a small bowl, combine 1 tablespoon of the olive oil with the mustard, garlic and crushed red pepper.
  • Season with salt and black pepper.
  • Put the steak in a shallow baking dish and spread the mustard mixture all over it.
  • Grill the steak over high heat, turning once, until charred and medium rare, about 4 minutes per side.
  • Transfer the meat to a cutting board and let it rest.
  • Meanwhile, spread the tomato slices on a large platter, drizzle with the balsamic vinegar and the remaining 1 tablespoon of olive oil and season with salt and black pepper.
  • In a small bowl, mash the Gorgonzola with the mayonnaise.
  • Spread the Gorgonzola mixture on the cut sides of the baguette lengths and grill, cheese side up, until the baguette is toasted and the Gorgonzola is melted, about 1 minute, being careful not to burn the bread.
  • Cut the steak into 4-inch lengths, then thinly slice it across the grain.
  • Pile the meat on the baguettes and spoon the accumulated meat juices over the top.
  • Top with the tomato slices and watercress, close the sandwiches and serve.
