GRILLED GARLIC DIJON HERB SALMON
Salmon fillets seasoned with a garlic, Dijon herb sauce and served with a squeeze of fresh lemon... delicious!!

- In a mini food processor, or using a mortar and pestle mash garlic with the herbs, vinegar, oil, and Dijon mustard until it becomes a paste. Set aside.
- Season salmon with a pinch of salt and fresh pepper. Heat a grill or grill pan over high heat until hot. Spray the pan lightly with oil and reduce the heat to medium-low. Place the salmon on the hot grill pan and cook without moving for 5 minutes.
- Turn and cook the other side for an additional 3-4 minutes spooning on half of the garlic herb mustard sauce.
- Turn and cook 1 more minute spooning the other side of the fish with remaining sauce. Turn once again and let the fish finish cooking about one more minute.
- **Note: the fish should have a total cooking time of about 9-10 minutes per inch. If your fish is thinner, reduce the total cooking time.
- Transfer the fillets to plates and serve with fresh lemon wedges.

- Place the olive oil, brown sugar, soy sauce, lemon zest, Dijon mustard, parsley, thyme, salt and pepper in a bowl. Whisk to combine.
- Reserve 1 tablespoon of the marinade in the refrigerator for later use. Add the garlic to the bowl.
- Add the salmon to the bowl of marinade. Spoon the marinade over the salmon and cover the bowl.
- Marinate in the refrigerator for at least 1 hour, or up to 8 hours.
- Remove the salmon from the marinade and scrape off any excess bits of herbs or garlic (otherwise they could burn on the grill!).
- Preheat an outdoor grill or indoor grill pan over medium high heat. If you're using an outdoor grill, be sure to thoroughly coat your grill grates with vegetable oil.
- Add the salmon fillets and cook for 5-6 minutes on each side or until salmon is opaque throughout.
- Brush the reserved marinade over the salmon fillets, then serve.

- In a small saucepan, combine the first nine ingredients. Cook and stir over low heat until butter is melted; set aside. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. - Mix all the Marinade ingredients in a bowl, stir to mix well.
- Marinate the salmon with the Marinade for 20 minutes.
- Heat up a gas grill to medium heat, at 350°F (176°C). Remove the marinated salmon from the Marinade and place it on top of the gas grill. Place the salmon, skin side down at a 45 degree angle to form beautiful char marks. Grill the salmon for 4 minutes, uninterrupted. Turn the salmon over and grill for another 4 minutes, uninterrupted. Baste with the remaining Marinade mixture while grilling.
- Depending on the type of salmon cuts you use, you might need to grill it for longer (or shorter) time. The salmon is cooked when white stuff starts to seep out from the inside. If the salmon is not cooked yet but already charred, move the salmon to the indirect heat side of the gas grill. Cover the lid and cook for 1-2 minutes or until the inside is completely cooked through. Remove from the grill and serve immediately with lemon wedges, dill sauce, or sweet chili sauce.

- Rub the salmon fillets on both sides with the vegetable oil and sprinkle them generously with salt& pepper.
- Place them over the coals and grill until they are just opaque throughout, 6 to 8 minutes per side.
- To check for doneness, poke the fish with your finger to check its firmness level; if you're unsure, nick, peek, and cheat: Cut into one of the fillets at its thickest point and peek to be sure it is just opaque all the way through.

- Prepare a grill for medium heat. Whisk 1 Tbsp. honey, 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt, and 1 tsp. finely grated lemon zest in a small bowl to combine. Add 6 garlic cloves, finely chopped, 4 Tbsp. unsalted butter, room temperature, and 2 Tbsp. finely chopped dill and whisk again to combine (some lemon zest may remain separate and that's okay).
- Tear off a large piece of foil according to the length and thickness of salmon (15x15" or larger) and place on a rimmed baking sheet. Place one 1 lb. boneless salmon fillet, preferably skin-on, arranging skin side down if skin is on, in center of foil (the skin will stick slightly to foil and brown while the fish cooks; you want this as it will add to the sauce). Spread garlic butter over fish, then drizzle 3 Tbsp. fresh lemon juice on top. Carefully fold one side of foil up and over fish so lemon juice stays contained, then bring other sides up to meet it and fold together to seal, leaving about a 4" opening on top for steam to escape (this will help sauce reduce a bit).
- Place foil packet on grate and grill fish until opaque throughout and firm, 16-20 minutes. Transfer packet to a cutting board and let fish rest 5 minutes.
- Carefully open foil packet and cut fish in half. Transfer to plates; pour juices from packet over. Drizzle fish with remaining 1 Tbsp. fresh lemon juice, dividing evenly, and top with more finely chopped dill.
