3/4 cup (1 1/2 sticks) unsalted butter
5 teaspoons chopped fresh sage plus 32 whole fresh sage leaves
16 5 x 3 x 1/2-inch slices country-style bread, crust removed
1 cup (packed) coarsely grated Fontina cheese (about 4 ounces)
1/4 cup (packed) finely grated Parmesan cheese

Steps:

  • Melt butter in small saucepan over medium heat; sprinkle with salt. Pour half of butter into small bowl and reserve. Add chopped sage to remaining melted butter in saucepan; stir over medium heat 30 seconds.
  • Arrange 8 bread slices on work surface. Brush top side with all of melted sage butter. Divide Fontina cheese among bread slices; sprinkle Parmesan over each, dividing equally. Sprinkle with freshly ground black pepper. Top with remaining 8 bread slices, pressing to adhere. Brush top side of sandwiches with some of reserved plain melted butter. Press 4 whole sage leaves atop each sandwich to adhere.
  • Heat 2 heavy large skillets over medium heat. Place 4 sandwiches, sage-leaf side down, in each skillet and cook until golden brown on bottom, 4 to 5 minutes. Brush top of sandwiches with remaining plain melted butter; turn sandwiches over and cook until golden brown on bottom and cheese melts, about 4 minutes. Transfer sandwiches, sage-leaf side up, to cutting board. Cut each sandwich into 4 pieces (each mini sandwich should contain 1 whole sage leaf). Transfer to platter and serve.

Creamy Roasted Tomato Soup with Grilled Fontina-Mushroom Sandwiches image

10 plum tomatoes, halved lengthwise, seeds removed
1/4 cup olive oil, divided
6 cloves garlic, coarsely chopped
Salt and freshly ground pepper
1 Spanish onion, diced
1 carrot, diced
3 cups vegetable stock
1 tablespoon finely chopped fresh thyme
1 1/2 cups heavy cream
2 tablespoons olive oil
1/2 pound cremini mushrooms, thinly sliced
Salt and freshly ground pepper
1 tablespoon chopped fresh sage
8 slices country-style bread
8 tablespoons unsalted butter, softened
1/2 pound fontina, grated

Steps:

  • Preheat oven to 325 degrees F. Place tomatoes in a large baking dish and drizzle with 2 tablespoons of the olive oil and sprinkle with the garlic, season with salt and pepper. Roast for 25 to 30 minutes, or until the tomatoes are soft.
  • Heat the remaining olive oil in a medium stock pot over medium heat. Add the onions and carrots and cook until the onions are soft, about 5 minutes. Add the roasted tomatoes, garlic, and the juices that have accumulated. Add the stock and fresh thyme and cook for 20 minutes. Place the cream in a small saucepan over medium high heat and cook until reduced by half. Transfer the mixture to a blender and blend until smooth, strain into a clean saucepan over low heat, add the reduced cream, and cook for 5 minutes.
  • For the Grilled Fontina-Mushroom Sandwich: Heat olive oil in a large saute pan, add the mushrooms, and cook until golden brown. Season with salt and pepper, and stir in the sage. Brush the bread on 1 side with the butter. Turn 4 of the slices over on a work surface. Divide the cheese among the slices then divide the mushrooms on top of the cheese. Cover with the remaining 4 slices of bread, butter-side up.
  • Heat a frying pan over medium heat. Add the sandwiches and cook, turning once, until golden, about 2 minutes per side.

1/2 pound mushrooms, thinly sliced
1 (6-ounce) jar marinated artichoke hearts, drained and sliced
8 (5- to 6-inch) slices country-style bread
1/2 pound Fontina, thinly sliced

Steps:

  • Heat 1 tablespoon oil in a 10-inch heavy skillet over moderately high heat, then sauté mushrooms, stirring occasionally, until tender and starting to brown, about 4 minutes. Add artichoke hearts and cook, stirring occasionally, 2 minutes. Season with salt and pepper.
  • Brush 1 side of bread slices with remaining tablespoon olive oil. Turn over 4 slices, then divide mushroom mixture and cheese among them. Top with remaining slices, oiled sides up.
  • Heat a dry 12-inch heavy skillet over moderate heat until hot, then cook sandwiches, pressing occasionally and turning over once, until bread is golden brown and cheese is melted, about 5 minutes total.

Steps:

  • Preheat broiler. Arrange mushrooms in a single layer in a baking dish. Drizzle with oil, and sprinkle with 1/2 teaspoon salt and some pepper. Broil for 2 minutes. Remove dish from oven, and add thyme and cheese. Broil for 1 minute. Serve warm.

1 teaspoon minced fresh rosemary
4 very large portobello mushrooms, stemmed, dark gills removed, caps thinly sliced
8 1/2-inch-thick slices country white bread (each about 3x6 inches)
Dijon mustard (optional)
8 ounces Fontina cheese, thinly sliced
2 bunches arugula or 1 bunch trimmed watercress

Steps:

  • Heat 4 tablespoons oil in heavy large skillet over medium-high heat. Add rosemary and stir 30 seconds. Add mushrooms. Cover skillet and cook until mushrooms are tender, stirring often, about 8 minutes. Season mushrooms to taste with salt and pepper; transfer to plate. Wipe out skillet.
  • Arrange 4 bread slices on work surface; spread with mustard, if desired. Top bread slices with cheese, then mushrooms and arugula, dividing equally. Top each with bread slice; press to compact. Brush tops lightly with oil.
  • Heat reserved skillet over medium heat. Place sandwiches, oiled side down, in skillet. Brush tops lightly with oil. Cover and cook until golden on bottom, occasionally pressing with spatula, about 5 minutes. Turn sandwiches over. Cover and cook until golden on bottom and cheese is melted, about 5 minutes longer. The mushrooms and tangy Dijon mustard make this a top notch sandwich! Creamy Fontina cheese is just right, but you can use Gruyere or omit the cheese altogether! Sourdough or a nutty cracked wheat bread is a good choice for the bread. For a light supper, serve with a green salad, and add a cup of soup if you like. Adapted from Fields of Greens cookbook.

1 tablespoon extra virgin olive oil, divided
1/2 medium red onion, thinly sliced
salt
fresh ground black pepper
1/2 lb white mushroom, sliced (about 3 cups, may use baby bella mushrooms if you like)
2 teaspoons Italian parsley, chopped
4 slices sourdough bread (or a whole grain bread)
Dijon mustard
1 -2 ounce Fontina cheese, grated (1/2 to 1 cup)
unsalted butter, softened (or melted)

Steps:

  • Heat 1/2 tbls. of the olive oil in a medium saute pan, add the onion and a sprinkling of salt and pepper. Saute over medium heat for about 5 minutes, until soft. Move the onion to a bowl.
  • Heat the remaining oil in the pan; add the mushrooms, 1/4 teaspoons salt, and a few grinds of pepper.
  • Sear the mushrooms over high heat until golden and a little crisp around the edges, adding a little more water to the pan as they finish cooking, to loosen the yummy pan juices( adding a little sherry or wine instead would add to the flavor). Add the mushrooms to the onions and toss together with the parsley.
  • Put the sliced bread on a cutting board(or other work surface) and brush each slice lightly with the mustard. Pile the mushrooms and onions on two of the slices, using the palm of your hand to press them onto the bread, then sprinkle on the cheese. Press the other two slices on top, then brush or spread the top with butter.
  • Place the sandwiches buttered side down in a heated skillet or on a griddle, then brush or spread the top side with the butter.
  • Cover and cook over medium heat until golden, aobut 4-5 minutes, then turn over and cook the other side. Serve immediately. Enjoy!

4 teaspoons chopped fresh sage or 1 1/4 teaspoons dried sage
8 slices from a large round loaf country bread or 8 slices other crusty bread
1/2 lb fontina, grated (about 2 cups)

Steps:

  • In a large nonstick frying pan, heat 1 tablespoon of the butter over moderate heat.
  • Add the mushrooms, salt, pepper, red pepper flakes (if using) and dried sage, and cook, stirring frequently, until golden brown, about 5 minutes.
  • Stir in the fresh sage, if using.
  • Put the mushrooms in a bowl and wipe out the pan.
  • Using a pastry brush, coat one side of 4 slices of the bread with half of the melted butter.
  • Put them, buttered-side down, on a work surface.
  • Top the bread with the cheese and then the mushrooms.
  • Cover with the remaining 4 slices of bread; brush the tops with the remaining melted butter.
  • Heat the frying pan over moderately low heat.
  • Add the sandwiches and cook, turning once, until golden, about 2 minutes per side.
