GRILLED EGGPLANT PANINI
Grilling eggplant slices on a panini grill is worth the price of the grill. They're ready in 2 or 3 minutes, and if you don't use them for this sandwich you can top them with tomato sauce, chop them up and toss them with pasta or rice, or drizzle them with vinaigrette and sprinkle with feta and fresh herbs, such as mint, parsley, basil, or marjoram.

- Sprinkle the eggplant slices with salt and let sit for 15 minutes. Pat dry and brush lightly with olive oil.
- Preheat a panini grill and place the eggplant slices in it in an even layer. Grill 3 minutes, until cooked through and nicely marked by the grill. Remove from the heat.
- Spread a little pesto on the bottom slice of bread. Top with a layer of eggplant slices, then a layer of pepper or tomato slices. Sprinkle with freshly ground pepper. Top with the grated cheese and the other slice of bread. Brush the outside of both the bottom and the top pieces of bread with olive oil. Grill 5 minutes, or until nicely toasted and the cheese has melted. Remove from the panini grill and cut into halves or thirds, depending on the size of the bread. Serve hot.
GRILLED EGGPLANT AND FRESH MOZZARELLA SALAD

- Set up a grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- Peel the eggplants and slice into 1/2-inch-thick rings. Sprinkle with salt and pepper and drizzle with olive oil on both sides. Place on the direct-heat side of the grill and char, cooking until softened, about 2 minutes per side. Remove to a cutting board and cut each slice into quarters.
- In a small bowl, whisk together the red wine vinegar, Dijon and honey. Drizzle in 1/2 cup of olive oil and season with salt and pepper. In a large bowl, combine the arugula, mozzarella, onion and eggplant. Dress with the vinaigrette and serve!
GRILLED EGGPLANT AND FRESH MOZZARELLA ON CIABATTA WITH ROASTED PEPPER RELISH

- For the mayonnaise mixture: Combine the mayonnaise and garlic in a small bowl and season with salt and pepper. Refrigerate for at least 30 minutes before using.
- For the roasted pepper relish: Combine the basil, vinegar, oil and peppers in a small bowl and season with salt and pepper. Let sit at room temperature while you assemble the sandwiches.
- Preheat a grill on medium-high heat.
- For the grilled eggplant: Brush the eggplant slices with oil and sprinkle with salt and pepper. Cook until grill marks appear, 1 to 2 minutes per side.
- For the sandwiches: Brush the cut sides of the bread with oil and season with salt and pepper. Place on the grill cut-side down to warm through and crisp slightly, about 30 seconds.
- Spread the bread with the mayonnaise mixture and top the bottom halves with the grilled eggplant, roasted pepper relish, mozzarella slices, arugula and basil. Cover with the tops of the bread. Place the sandwiches on the grill, weigh them down with a brick wrapped in foil and cook until pressed and the cheese has melted, flipping once, about 6 minutes. (They can also be cooked on a panini press.)
- Slice in half crosswise and serve.
GRILLED VEGETABLE AND MOZZARELLA PANINI

- Brush the vegetables lightly with oil, season with salt and pepper and grill over medium high heat. Allow the vegetables to color well, remove from the grill and cool for several minutes. remove any blackened skin from the peppers.
- Meanwhile, slice the bread open lengthwise and brush the inside lightly with oil. Grill the inside of the bread quickly and remove.
- Assemble the still warm sandwich by alternating layers of vegetables, cheese, basil and then sprinkle on any remaining oil and a few drops of vinegar. Sprinkle on any herbs desired, tightly wrap with sandwich paper and slice into 4-inch lengths.
GRILLED EGGPLANT WITH MOZZARELLA, TOMATOES, AND BASIL

- Prepare a barbecue (or preheat a broiler). Cut the eggplants into slices about 1/2-inch thick. Spread on a baking sheet and brush with olive oil on both sides. Set aside.
- Cut mozzarella in half crosswise, then slice each half about 1/4-inch thick to create half-moon shaped pieces. Slice tomatoes in the same manner. Arrange tomatoes and mozzarella decoratively around the edge of a large serving platter.
- Place eggplant slices on barbecue (or place on baking sheet in broiler) and cook, turning once, until nicely charred on each side; the eggplant should almost caramelize. Arrange the cooked eggplant down the center of the serving platter, surrounded by the tomatoes and mozzarella. Pluck about 12 large leaves from the basil bunch, stack them, roll them up like a cigar, then slice crosswise into thin shreds (?chiffonade?). Scatter the basil shreds over the vegetables and cheese, then drizzle balsamic vinegar and more olive oil over all. Sprinkle with salt and pepper, to taste, and let stand until eggplant is at room temperature.
GRILLED EGGPLANT PANINI WITH CAMBOZOLA BLUE CHEESE, PROSCIUTTO AND ARUGULA

- Heat grill pan to medium-high.
- Heat the olive oil in small pot over medium heat with garlic and rosemary to infuse flavor, 3 to 4 minutes.
- Brush eggplant with olive oil and season with salt and pepper, grill 2 to 3 minutes on each side to tenderize. Remove from heat.
- Make sandwiches on split flat breads of 2 slices each eggplant, blue cheese, prosciutto and a handful of arugula.
- Heat a dry skillet over medium heat. Choose a second skillet that can fit down inside the first and get a few heavy cans ready to weight skillets. When pan is hot, add 1 flat bread, weight down with second skillet and cans and cook 1 minute, flip, cook a minute more. Repeat process with remaining ingredients and serve.
EGGPLANT AND MOZZARELLA PANINI
This is originally from Taste of Home and called for sun-dried tomato spread. I have made a few adjustments for those who can't find the spread at the local grocer. This makes a very filling and vegetarian version of a panini.

- Heat a grill pan or panini press.
- Brush eggpant slices with 1 t olive oil and season lightly with salt and pepper.
- Grill until marked and just soft, about 4-6 minutes. If using the grill pan, turn once.
- Cut bread into 4 pieces; slice pieces in half lengthwise.
- Drain and dice sun-dried tomatoes. In small bowl, mix mayonaise with tomatoes.
- Cover one side of ciabatta with mayo mixture.
- Divide grilled eggplant slices between the four sandwiches.
- Add cheese on tops and add other slice of bread on top.
- Brush sandwiches with olive oil and grill until cheese is melting and bread is crisp, about 5 minutes.
- Serve with marinara sauce or picante sauce.

- Heat a grill pan over high heat, or heat an electric panini grill on the highest setting according to the manufacturer's instructions.
- Brush both sides of the eggplant slices with olive oil and season with salt and pepper. Arrange the eggplant on the grill pan, set a small baking sheet on top and weight evenly with 2 bricks. (Or, arrange the eggplant on the panini grill and close the lid, making sure it makes even contact with the eggplant.) Cook until dark grill marks appear, 2 1/2 minutes, then turn and cook the second side 30 seconds. (On the panini maker, cook 3 to 4 minutes.) Transfer the eggplant to a warmed plate.
- Brush one side of each slice of bread with olive oil. With the oiled sides of the bread down, arrange the eggplant, arugula and mozzarella on 4 of the slices, seasoning each layer lightly with salt and pepper. Top each with one of the other slices of bread, oiled side up. Season the outside of the sandwiches with salt and pepper. Reduce the heat to medium-high and place 2 of the sandwiches on the grill pan, cover with the baking sheet and again weight with the bricks. Cook until dark grill marks appear, 2 1/2 minutes, then remove the bricks and baking sheet and turn the sandwiches carefully. Weight them down again and cook 30 seconds. (For the panini maker, reduce the heat to 400 degrees, close the lid and be sure it makes even contact with the sandwiches. Cook until dark grill marks appear, 3 to 4 minutes.)
- Transfer the sandwiches to a cutting board and cut in half. Serve immediately and repeat with the remaining 2 sandwiches.
