Steps:

  • Heat your grill to 400°F.

  • Place the drumsticks on a 400°F grill and let cook over indirect heat for 18-20 minutes. Then, flip and let cook for an additional 18-20 minutes.
  • Once the internal temperature reaches 165°F (or the juices run clear) remove the drumsticks from the grill and let rest for 5-10 minutes before eating.

1 (1 ounce) package ranch dressing mix
1 pinch cayenne pepper, or to taste
salt and ground black pepper to taste

Steps:

  • Place chicken drumsticks into a resealable bag; add olive oil to coat. Add ranch dressing mix, cayenne pepper, salt, and black pepper. Close the bag and mix until drumsticks are covered. Let marinate in the refrigerator, 30 minutes to 1 hour.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken from the bag; discard marinade.
  • Cook on the preheated grill until an instant-read thermometer inserted into a drumstick reads at least 165 degrees F (74 degrees C), 20 to 25 minutes. Remove from the grill and let sit for 5 to 10 minutes before serving.

1 tablespoon chili powder
1 tablespoon paprika
2 teaspoons ground cumin
4 1/2 pounds small chicken drumsticks (about 18)
Kosher salt and freshly ground pepper
1 cup ketchup
1/3 cup apple cider vinegar
1/4 cup packed light brown sugar
1/4 cup fresh orange juice
2 cloves garlic, grated
2 tablespoons molasses
2 tablespoons hoisin sauce
2 tablespoons yellow mustard
Vegetable oil, for brushing

Steps:

  • Make the chicken: Combine the brown sugar, chili powder, paprika and cumin in a small bowl. Season the chicken all over with 1 tablespoon salt and 1 teaspoon pepper, then rub all over with the spice mixture. Cover and refrigerate 1 to 2 hours.
  • Meanwhile, make the barbecue sauce: Whisk the ketchup, vinegar, brown sugar, orange juice, garlic, molasses, hoisin sauce, mustard and chili powder in a small saucepan until smooth. Bring to a boil, then reduce the heat to a simmer and cook until slightly thickened, 10 to 15 minutes. (You should have 1 1/4 to 1 1/2 cups sauce.)
  • Remove the chicken from the refrigerator 30 minutes before grilling. Preheat a grill to medium and oil the grates. Grill the chicken, covered and turning occasionally, until lightly charred and a thermometer inserted into a drumstick (without touching the bone) registers 170 degrees F, 35 to 45 minutes, brushing with some of the barbecue sauce during the last 10 minutes of cooking. 10 fresh thyme sprigs
1/4 cup vegetable oil, plus more for the grill
2 tablespoons packed light brown sugar
2 tablespoons distilled white vinegar
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
Kosher salt and freshly ground pepper
8 skinless chicken drumsticks (about 2 pounds)

  • Combine the chile, scallions, thyme, vegetable oil, brown sugar, vinegar, allspice and cloves in a large bowl and mix until the sugar dissolves.   • Bring wine, sugar, soy sauce, ginger, and garlic to a boil in a saucepan.

  • Let cool.
  • Using a sharp knife, make three diagonal slashes through the skin and flesh on both sides of each drumstick (this will help the flavors permeate the meat).

½ white onion, chopped
5 cloves garlic, sliced
16 chicken drumsticks
3 tablespoons chopped fresh cilantro
2 teaspoons dried oregano

2 cups cider vinegar
2 cups ketchup
1 cup canola oil

1 teaspoon pepper
1 teaspoon Liquid Smoke, optional
10 pounds bone-in chicken thighs and chicken drumsticks

Steps:

  • In a large bowl, combine the first 11 ingredients. Pour into two large resealable plastic bags; add equal amounts of chicken to each bag. Seal bags and turn to coat; refrigerate overnight., Drain and discard marinade. Prepare grill for indirect heat. 1 onion, minced
1 cup ketchup
1/4 cup molasses
2 tablespoons brown sugar
1 1/2 tablespoons Worcestershire sauce
2 teaspoons mustard
3/4 teaspoon pepper, divided
1/4 teaspoon chili powder
1/4 cup Bourbon
1 1/2 teaspoons kosher salt (or other coarse salt)
12 chicken drumsticks

Steps:

  • In a saucepan over medium heat, melt butter and then add onion and sauté until soft (5 minutes). Add next 5 ingredients (ketchup - mustard)and 1/4 teaspoon pepper and chili powder. Reduce heat to medium low, and simmer for 15 minutes or until sauce thickens. Stir in bourbon and cook another 3-5 minutes. Remove from heat. Season with salt. (May be prepared up to one day ahead, covered and refrigerated).
  • In a large baggie or paper bag add 1 1/2 teaspoons salt and 1/2 teaspoon pepper and then add chicken and shake well to coat.
  • Let chicken stand at room temperature while preparing grill.
  • Grill drumsticks for 20-30 minutes or until skin is crisp and chicken is done, brushing with sauce occasionally. When chicken is done brush with sauce again and cook until glazed (3-5 minutes).
  • Serve with remaining sauce.
